2 large eggs, room temperature
1/2 cup sugar
1/2 cup packed brown sugar
1/3 cup butter, melted
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1-1/3 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup chopped almonds

Steps:

  • Preheat oven to 350°. In a large bowl, beat the eggs, sugar and brown sugar for 3 minutes. Add butter and extracts; mix well. Combine the flour, baking powder and salt. Gradually add to the creamed mixture, beating just until blended. Fold in almonds., Pour into an 8-in. square baking pan coated with cooking spray. Bake until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool on a wire rack. Cut into squares.

2 tablespoons ground flaxseed
6 tablespoons water
½ cup coconut oil, melted
½ cup sugar
¼ cup brown sugar
1 teaspoon almond extract
1 ½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ cup rolled oats
¾ cup dried cranberries, or use fresh cranberries for more tartness
½ cup sliced almonds

Steps:

  • Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • To make the flax eggs, mix together the flax meal and water in a small bowl. Let sit for at least 10 minutes to set.
  • In a large bowl, whisk together the coconut oil, granulated sugar, brown sugar, flax eggs, and almond extract until well-combined.
  • Sift in the flour, baking powder, and baking soda, and stir with a spatula until combined.
  • Fold in the oats, cranberries, and sliced almonds until incorporated.
  • Use an ice cream scoop to scoop the cookies onto the prepared baking sheet, spacing about 2 inches (5 cm) apart.
  • Bake for 20-22 minutes, until lightly golden around the edges.

2 cups all-purpose flour
1 cup white sugar
2 teaspoons baking powder
½ teaspoon salt
1 cup unsalted butter, melted

2 tablespoons freshly squeezed lemon juice
1 tablespoon lemon, zested
½ teaspoon almond extract
½ teaspoon vanilla extract
¾ cup sweetened dried cranberries, divided
½ cup white chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with parchment paper and spray with nonstick cooking spray.
  • Combine flour, sugar, baking powder, and salt together in a large bowl. Mix together butter, eggs, lemon juice, lemon zest, almond extract, and vanilla extract in another bowl until well combined. Add wet ingredients to the bowl with the dry ingredients and stir until well mixed. Mix in 1/2 cup of the cranberries and white chocolate chips.

1 2/3 cups all-purpose flour

1 2/3 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt

1 pint raspberries
confectioners' sugar, for dusting

Steps:

Blondies were my favorite cookie bar as a child. My grandmother made them the best! Here is a modified version of her recipe, which I adapted to use up some of the mega-bag of fresh cranberries that I bought at Costco. I think she would have liked these.

2/3 cup butter
2 cups brown sugar, packed
3 eggs
2 teaspoons vanilla
1 cup flour
1 cup rolled oats
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups chocolate chips
1 cup coconut
1 1/2 cups chopped pecans
2 cups fresh cranberries, chopped

Steps:

  • Spray 9 x 13 pan with nonstick spray, and preheat oven to 375°F.
  • Cream butter and add brown sugar gradually.
  • Add eggs one at a time, beating constantly.
  • Add vanilla, mix well.
  • Sift together flour, oats, baking powder and salt.
  • Add a little at a time to the wet mixture.
  • Mix in chips, coconut, nuts and cranberries.
  • Press into prepared pan and bake for 40-45 minutes.
  • Cool before cutting.
