SODA CRACKER PIE

Soda Cracker Pie image

This pie is delicious, with or without a filling. I make it with pecans and serve it with whipped topping and one shake of nutmeg on top. Or I make it without pecans and fill with fruit filling such as lemon filling. I use soda crackers, saltines, graham crackers or buttery round crackers, finely crushed

BAKERY GRAHAM CRACKER PIE

Bakery Graham Cracker Pie image

My grandmother would always make this for me for my birthday and if I was lucky on Easter. Once she finally gave me the recipe I could make it for myself anytime I wanted.

Provided by ChefJoe

Categories     Desserts     Pies     Custard and Cream Pie Recipes     Meringue Pie Recipes

Time 1h40m

Yield 8

Number Of Ingredients 13

1 ½ cups graham cracker crumbs
2 tablespoons white sugar
1 tablespoon butter, melted
½ cup white sugar
¼ cup cornstarch
⅓ teaspoon salt
2 ½ cups scalded milk
4 egg yolks, beaten
2 tablespoons butter
1 teaspoon vanilla extract
4 egg whites
¼ cup white sugar
½ teaspoon vanilla extract

Steps:

  • Preheat an oven to 300 degrees F (150 degrees C).
  • Mix graham cracker crumbs, 2 tablespoons of white sugar, and melted butter together in a bowl. Reserve a couple tablespoons of the cracker mixture to use as garnish. Press the remaining cracker mixture into a 9-inch pie plate to form a crust.
  • Place 1/2 cup of sugar, cornstarch, and salt in the top of a double boiler over just-barely simmering water. Slowly stir in the scalded milk, stirring until mixture thickens. Slowly whisk 1/3 of the milk mixture into the beaten egg yolks, then pour the egg mixture back into the double boiler. Cook for 2 minutes, stirring constantly so as not to scramble the eggs. Remove from heat, and cool slightly, then stir in the remaining 2 tablespoons of butter and 1 teaspoon of vanilla extract, until butter is melted. Pour the egg mixture into the prepared pie shell. Set aside.
  • Beat egg whites until foamy in a large glass or metal mixing bowl. Gradually add 1/4 cup of sugar and 1/2 teaspoon of vanilla extract, continuing to beat until stiff peaks form. Lift your beater or whisk straight up: the egg whites should form a sharp peak that holds its shape. Spread the meringue over the pie.
  • Bake in the preheated oven until the meringue is lightly browned, about 10 minutes. Cool, and sprinkle with the reserved graham cracker mixture before serving.

CRACKER PIE CRUST

Cracker Pie Crust image

I used RITZ® crackers to make this easy pie crust, but you could easily use a generic equivalent--any golden round crackers will do the trick! The slight saltiness from the crackers is a nice change from the norm. This pie crust is great for cheesecakes, no-bake pies, and more.

Provided by Diana Moutsopoulos

Time 15m

Yield 8

Number Of Ingredients 3

1 ½ cups buttery round crackers (such as Ritz®), crushed
6 tablespoons melted butter
2 tablespoons white sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine cracker crumbs, melted butter, and sugar in a mixing bowl. Stir together until evenly incorporated. Pour mixture into a 9-inch round pie dish. Press evenly over the bottom and up the sides of the dish using a glass.
  • Bake in the oven until golden brown, 7 to 10 minutes. Let cool before adding filling.

GRAHAM CRACKER CREAM PIE

SODA CRACKER PIE

Soda Cracker Pie image

My grandmother was a wonderful cook. Even in her "town" house (as opposed to her farm house) she had two kitchens. One on the main floor for day to day cooking, and another in the basement for canning and preserving. After her death, my mother and I were cleaning out the cupboards in the basement kitchen. We found recipe box after recipe box. When my mom found this recipe, she almost did a cartwheel! I looked at the recipe and thought, "ok, this doesn't really sound all that good...." Mom told me, "wait til you try it!!" It's now one of my favorite desserts. The crust is dense and somewhat salty, which perfectly balances the creamy sweetness of the topping.
