Steps:
- To stiffly beaten egg whites, add sugar, baking powder, pinch salt, crackers (crumble by hand for larger crumbs), of pecans and vanilla.
- Pour into lightly greased 9" pie pan.
- Bake 30 minutes at 325 degrees.
- Chill and serve with whipped cream.

GRAHAM CRACKER PIE II
This is one of two Graham Cracker Pie recipes found in a 1967 edition of "Our Favorite Desserts" from the "Favorites From Home Economics Teacher" cookbook series. This recipe was submitted by Mrs. C. E. Duverney, Elk Rapids High School from Elk Rapids, Michigan. I have not made either of them.

Steps:
- 1. Finely crush the graham crackers. Add the melted butter; mix well. Reserve 4 tablespoons crumbs. Line an 8-inch pie pan with buttered crumbs, pressing into shape. Bake at 350° for 10 minutes. Set aside to cool.
- 2. Soften gelatin powder in 1/4 cup water. Make a cooked custard of milk, egg yolks, sugar and salt (cook milk, egg yolks, sugar and salt, stirring constantly, until custard will coat the spoon that you are using to stir); add vanilla and softened gelatin. Cool custard.
- 3. Beat egg whites until stiff. Fold beaten egg whites and whipped cream into cooled custard mixture. Pour into cooled pie crust. Sprinkle top of pie with reserved graham cracker crumbs. Cool several hours before serving.
- 4. One-fourth cup drained pineapple may be added to custard.
- 5. NOTE: This is an old recipe, from 1967, when people did not have the concerns about raw eggs that many people have today. You might want to look for a pasturized egg product instead.

- Mix graham cracker crumbs, sugar, melted butter or margarine, and cinnamon until well blended . Press mixture into an 8 or 9 inch pie plate.
- Bake at 375 degrees F (190 degrees C) for 7 minutes. Cool. If recipe calls for unbaked pie shell, just chill for about 1 hour.

Steps:
- 1. Mix the ingredients in step one. Now mix the ingredients in step two. At this point, combine the mixture from step one with the mixture from step two. Take a glass pie plate and grease it. Pour the final mixture into the pie plate packing down the mixture. Bake at 350* for 30 minutes.
- 2. ***Note*** top with whip cream or other whipped topping and some chocolate shavings.
GRAHAM CRACKER CRUST
This is a great graham cracker crust, not dry or crumbly. It is sweet, almost like caramel. I recommend filling it with Recipe #115634. This will make a 9 inch crust but you can easily adjust it to make a taller 10 inch cheesecake crust.

- Arrange half of strawberries in baked pastry shell. Mash remaining berries and combine with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
- In a small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, about 10 minutes, stirring constantly. Pour mixture over berries in pastry shell. Chill for several hours before serving. In a small bowl, whip cream until soft peaks form. Serve each slice of pie with a dollop of whipped cream.

- Mix sweetened condensed milk and lemon juice and beat on medium high speed until well blended.
- Fold in 1/3 of the whipped topping and 2 drops yellow food coloring.
- Pour filling into crust; carefully smooth remainder of whipped topping on top of lemon filling.
- Place vanilla wafer cookies around the edge of the pie (can do this right before serving if you prefer a crisper cookie).
- Cover pie and place in freezer.
- Pie may be kept in freezer for several days until ready to serve.
- Take from freezer 10- 15 minutes before serving.

- Preheat oven to 400° F. Mix the graham cracker crumbs, butter, and 1/2 cup of the sugar in a bowl. Set aside 1/2 cup of the graham cracker mixture. Add the remaining mixture to a deep pie plate or pan and press into place using the back of a large spoon. Bake the crust for 6 minutes. Remove from oven and set aside.
- Heat 1 3/4 cups of the milk in a medium saucepan until just boiling; lower heat to medium. In a small bowl, mix another 1/2 cup of the sugar with the cornstarch and the remaining milk. Gradually whisk the mixture into the hot milk and cook until creamy, about 2 minutes. Stir a small amount of the hot milk mixture into the egg yolks; add this back into the mixture. Stir constantly for 1 to 2 minutes or until the custard has thickened. Remove from heat and let cool.
- While the custard is cooling, beat the egg whites with 1 tablespoon sugar until stiff. Stir the vanilla into the cooled custard and pour into the graham cracker pie shell. Gently spread the egg-white mixture over the top of the custard. Sprinkle with the remaining graham cracker mixture and place in a 400° F oven for 2 minutes or until the meringue is slightly browned.
