HEALTHY SEED AND OAT CRACKERS



Healthy Seed and Oat Crackers image

These crackers are super crispy, loaded with nutrients and they couldn't be easier. Just give them a quick soak in hot water - this helps them create a gel, for binding - and pop them in the oven. They're a great gluten-free and vegan alternative to traditional crackers as the perfect accompaniment to cheese, dips or hummus and, when broken into small pieces, for lending salads added crunch. They're so good you may never buy crackers again!

Number Of Ingredients 10

2/3 cup old-fashioned rolled oats
1/2 cup raw sunflower seeds
3/4 cup raw pumpkin seeds
1/2 cup chia seeds
1/3 cup whole golden flax seeds
2 tablespoons poppy seeds
Kosher salt
2 tablespoons extra-virgin olive oil
2 tablespoons maple syrup
1 1/2 cups hot water (about 100 degrees F)

Steps:

  • Preheat the oven to 350 degrees F and line an 18-by-13-inch rimmed baking sheet with parchment.
  • Combine the oats, sunflower seeds, pumpkin seeds, chia seeds, flax seeds, poppy seeds and 2 teaspoons salt in a large bowl and stir to combine with a rubber spatula. Add the olive oil, maple syrup and hot water and stir to incorporate. Allow the mixture to rest for 15 minutes.
  • Stir the mixture to ensure any residual liquid on the bottom is evenly dispersed and then pour the mixture onto the prepared baking sheet. Place a second piece of parchment on top and then use the palms of your hands to press and spread the mixture into an even layer (1/8 to 1/4 inch thick), making sure to spread all the way to edges of the pan (gently running a small offset spatula over the parchment also helps to spread the mixture evenly). Remove the top piece of parchment and sprinkle with 1/2 teaspoon salt.
  • Bake until the edges are slightly golden brown and beginning to pull away from the sides of the baking sheet, about 25 minutes. Remove from the oven and cut into 24 pieces (each 2 1/2 by 2 1/2 inches) using a pizza cutter or sharp knife (see Cook's Note). Return the crackers to the oven and continue to bake until light golden brown and crisp, about 45 minutes. Allow the crackers to cool completely before serving. Store the crackers for up to 1 week in an airtight container.

1 package (6 ounces) Goldfish Parmesan crackers
1 cup mixed nuts or peanuts
1 bottle (10 or 12 ounces) butter-flavored popcorn oil
2 envelopes ranch salad dressing mix

Steps:

  • In a very large bowl, combine the first eight ingredients. In a small bowl, combine oil and salad dressing mix. Pour over cracker mixture; toss to coat evenly. , Transfer to four ungreased 15x10x1-in. baking pans. Bake at 250° for 45 minutes, stirring every 15 minutes. Cool completely, stirring several times.

2 (1/2 ounce) packages ranch dressing mix
2/3 cup vegetable oil
1 tablespoon dried dill
1/2-1 teaspoon garlic powder
1 (10 ounce) package oyster crackers
1 (10 ounce) package baked cheese crackers
3 cups pretzels

Steps:

  • In a small bowl, combine ranch dressing mix, oil, dill and garlic powder. Mix well.
  • In large bowl, combine oyster crackers, cheese crackers and pretzels. Pour oil mixture over crackers and toss well until coated. Cover.
  • Toss mixture every 30 minutes for 2 hours. Store in air-tight container.

HOMEMADE CHEDDAR CRACKERS



Homemade Cheddar Crackers image

8 ounces sharp Cheddar, finely grated
1 cup all-purpose flour
4 tablespoons (1/2 stick) butter, cut into pieces
1/2 teaspoon kosher salt
1/2 teaspoon seasoned salt
Pinch of cayenne
3 tablespoons ice water

Steps:

  • Put the Cheddar, flour, butter, salt, seasoned salt and cayenne in a food processor and pulse until the mixture resembles sand. Add the ice water and pulse until the dough comes together. Form the dough into a ball, wrap in plastic and refrigerate for 1 hour.
  • Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat.
  • Roll out the dough to 1/4-inch thickness and cut into squares with a pizza cutter. Use a wooden skewer to poke a small hole in the center of each square. Transfer to the prepared baking sheet and bake until golden brown, 15 to 17 minutes. Allow to cool before packing up.

1/2 teaspoon sea salt
1 teaspoon granulated sugar
1/8 teaspoon fresh ground pepper
2 tablespoons flour
1/2 teaspoon baking powder
1 cup boiling water
1 egg, beaten
2 tablespoons butter
2 tablespoons grated parmesan cheese

Steps:

  • In a large bowl, mix first 6 ingredients.
  • Pour boiling water over this and mix well.
  • Then incorporate egg, butter, and cheese.
  • Drop by tablespoon onto a parchment lined baking pan, spread thin w/ a flat knife and bake 325 for 20-25 minutes.
  • Allow to cool 30 minutes.

1 cup bite-size pretzels (fish-shaped) or 1 cup cheese crackers
1 cup oyster crackers
1 cup bite-size shredded wheat biscuit
1 cup miniature Ritz cracker, rich round cracker
2 tablespoons cooking oil
1/2 teaspoon Worcestershire sauce
1/8 teaspoon garlic powder
1 dash bottled hot pepper sauce
parmesan cheese, to taste

Steps:

  • In a large bowl combine 1 cup bite-size fish-shape pretzel or cheese-flavored crackers, 1 cup oyster crackers, 1 cup bite-size shredded wheat biscuits, and 1 cup miniature rich round crackers.
  • In a small bowl combine 2 tablespoons cooking oil, 1/2 teaspoon Worcestershire sauce, 1/8 teaspoon garlic powder, and dash bottled hot pepper sauce.
  • Pour over cracker mixture, tossing to coat. Sprinkle cracker mixture with Parmesan cheese; toss to coat.
  • Spread mixture on a shallow baking sheet. Bake in a 300 degree F. oven for 10 to 15 minutes or until golden, stirring once.
  • Cool completely. Store in an airtight container up to 1 week.

150g plain flour
1 tsp flaky sea salt
1 tsp golden caster sugar
1 tbsp finely chopped rosemary , plus 1 tsp for sprinkling on top
80ml water mixed with 2 tbsp olive oil

Steps:

  • Set your oven to 220C/200C fan/gas 7. Put all the ingredients in a bowl and mix with your hands to combine to a rough dough. If it's sticky, add a little more flour so it's nice and smooth.
  • On a sheet of baking parchment sprinkled with flour, roll the dough out to the thickness of a £1 coin, then use a pizza cutter or knife and cut it into squares.
  • Brush the squares with a little water and sprinkle with some salt and the 1 tsp chopped rosemary. Prick each square once in the middle with a fork.
  • Transfer the baking parchment straight onto a baking sheet, separate each square of dough a little, and bake in the hot oven for 12-15 mins or until the crackers are slightly golden. Cool, then store in a tin for up to two weeks.
