These special open-faced sandwiches from Donna Bennett of Washougal, Washington have wonderful crab and cheese flavor. "This recipe closely resembles a dish my husband and I enjoyed at a favorite restaurant several years ago," Donna writes.

1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
3 tablespoons mayonnaise
5 teaspoons minced celery
1 tablespoon minced green onion
2 English muffins, split
4 slices tomato
4 slices cheddar cheese (1/2 ounce each)
4 slices Monterey Jack cheese (1/2 ounce each)
Paprika

Steps:

  • In a small bowl, combine the crab, mayonnaise, celery and onion. Place muffins on an ungreased baking sheet. , Broil 4-6 in. from the heat until toasted. Spread each muffin half with crab mixture. Top with tomato and cheeses; sprinkle with paprika. Broil until bubbly.

1 pound fresh lump crabmeat
3 tablespoons butter, melted and cooled
2 tablespoons olive oil
2 (8 ounce) filet mignon steaks
coarse sea salt and coarsely ground black pepper to taste

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Toss the crabmeat in the melted and cooled butter. Set aside until ready to serve.
  • Pat filets mignons dry and season with salt and pepper. Heat olive oil in large heavy skillet over medium-high heat until hot, but not smoking. Brown filets on both sides, about 3 minutes per side. Transfer filets to an oiled baking pan and roast in the middle of the preheated oven until they start to firm, and are reddish-pink and juicy in the center, about 10 minutes. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Top each filet with the crabmeat and butter mixture.

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium-size mixing bowl, combine crabmeat, cheese spread, butter or margarine, mayonnaise, garlic salt, and parsley. Mix well, and spread on English muffins. Cut the muffins into quarters and arrange them on a cookie sheet.

Number Of Ingredients 12

1/2 cup water
1/4 cup (1/2 stick) butter or margarine
1/2 cup flour
2 eggs
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 Tbsp. milk
1/2 tsp. KRAFT Prepared Horseradish
1/4 tsp. salt
1/8 tsp. pepper
1 pkg. (8 oz.) imitation crabmeat, drained, flaked
1/3 cup slivered almonds, toasted
2 Tbsp. finely chopped onion

Steps:

  • Preheat oven to 400°F. Place water and butter in medium saucepan. Bring to boil. Add flour; mix well. Reduce heat to low. Cook until mixture forms a ball, stirring constantly. Remove from heat. Add eggs, 1 at a time, beating with wooden spoon after each addition until well blended. Drop rounded teaspoonfuls of dough onto lightly greased baking sheets.
  • Bake 30 to 35 minutes or until golden brown. Immediately remove from baking sheets to wire racks. Reduce oven temperature to 375°F.
  • Mix cream cheese, milk, horseradish, salt and pepper in medium bowl until well blended. Add imitation crabmeat, almonds and onion; mix lightly. Cut tops from cream puffs; fill with the crabmeat mixture. Replace tops. Return to baking sheets. Bake an additional 10 minutes or until heated through.

6 English muffins
1 lb crabmeat
1/3 cup butter
1 (5 ounce) jar old English cheese (by Kraft)
2 tablespoons mayonnaise
parsley (optional)
1 teaspoon Old Bay Seasoning (or crab seasoning of choice)

Steps:

  • Melt butter in skillet.
  • Add Old English cheese until all is melted.
  • Remove from heat, add mayonnaise, parsley and Old Bay.
  • Gently fold in crab meat.
  • Cut muffins in half.
  • LIGHTLY toast muffins (just until they start to toast).
  • Cut the muffins into 1/4ths, for appetizers.
  • Spread the crab/cheese mixture onto each 1/4th.
  • You may freeze at this point.
  • To cook, bake at 350°, for 20 minutes, till bubbly.
  • For luncheon, spread the mixture on the muffin half and cook as directed.

This is an old family recipe. It is a great finger food/ appetizer for a holiday party. These can be prepared ahead of time and frozen until you are ready to serve.

8 ounces Kraft Old English cheese spread
6 ounces canned crabmeat
1/2 teaspoon garlic powder
1/2 cup butter
salt
3 English muffins (6 halves)

Steps:

  • Mix the Old English Cheddar Cheese, crabmeat, garlic powder and butter together in a mixing bowl. Salt to taste.
  • Spread the mixture over 6 english muffin halves.
  • Place coated English muffins in the freezer until firm.
  • Cut each english muffin half into 12 approximately equal pieces.
  • Place in a ziplock bag and freeze until cooked or cook immediately.
  • To cook: Cover a cookie sheet with aluminum foil. Place the pieces on the cookie sheet cheese side up.
  • Broil for 10-15 minutes or until the top is brown/ bubbly.
