CRAB BAKE
A quick crab dish from the Caribbean. The other option is to put grated cheese on top instead of or in addition to the breadcrumbs. You can add more spices if you like it spicier ie. cayenne

Steps:
- Saute onion and garlic in margarine for a few minutes until soft.
- Add crab meat, salt, pepper and parsley and cook for a few min more.
- Add breadcrumbs and Worcestershire sauce; combine well.
- Pack mixture into cleaned crab backs or shells, sprinkle with breadcrumbs and dot with margarine.
- Heat in oven till piping hot.

BAKED STUFFED SHRIMP WITH CRABMEAT STUFFING
This dish is part of our family Christmas Eve celebration every year. I love baked stuffed shrimp, but so many restaurants here prepare their shrimp piled high with Ritz crackers drenched in butter. I think the crabmeat stuffing adds somethng a bit more special. Prep time includes the stuffing's cooling time.

Steps:
- Preheat the oven to 375 degrees.
- Line your baking dish with foil, and butter or spray with non stick cooking spray.
- Place the crabmeat in a large bowl and season with the Cajun Seasoning, Old Bay or salt and pepper, (your choice).
- Cover and refrigerate until ready to use.
- In your fry pan, melt 4 tablespoons butter over medium-high heat.
- Add the onions, celery, and bell peppers and cook, stirring, until softened, about 4 minutes.
- Add the parsley and the garlic, and cook, stirring, for 1 minute.
- Remove from heat and let cool.
- Add the cooled vegetables to the crabmeat and toss to combine.
- Add the mayonnaise, egg, lemon juice, Worcestershire and hot sauce and stir gently.
- Add 1 cup of cracker crumbs, salt and pepper to taste, and stir gently, being careful not to break up the crabmeat.
- Spoon the crabmeat stuffing evenly into each shrimp (about 2 Tbsp), and place, stuffed sides up, in your baking dish.
- Drizzle with the remaining melted butter.
- Bake until golden, about 20 minutes.
BAKED CRAB

- Gently fry the shallot and garlic in butter until softened. Pour in the sherry and bring to a simmer.
- Add the crab meat, reserving the shell. Warm through for 4-5 minutes then stir in the parsley.
- Spoon the mixture back into the crab shell. Sprinkle the top with breadcrumbs and grate over a little parmesan and add a grind of black pepper. Place a few dots of butter on top.
- Put under a hot grill for 1-2 minutes to crisp the bread and melt the cheese.
- Serve with toast.

- Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
- In a mixing bowl, combine the crab, bread crumbs, mayonnaise, milk, chopped eggs, onion, and salt. Mix thoroughly. Pour into a 1 quart casserole dish.
- Bake in a preheated oven for 25 minutes or until the top is lightly brown and bubbly.

- Preheat oven to 350°. In a Dutch oven, saute scallops, onion and celery in butter until scallops are firm and opaque. Stir in flour until blended. Add cream. Bring to a boil; cook and stir 2 minutes or until thickened. Reduce heat; add cheddar cheese, sherry, salt and cayenne, stirring until cheese is melted. Remove from heat; set aside., In a greased 11x7-in. baking dish, layer the shrimp, crab, artichokes and water chestnuts. Top with sauce. Sprinkle with almonds and Parmesan cheese. , Bake, uncovered, 25-30 minutes or until heated through. Let stand 10 minutes before serving.
