CRABMEAT AND SHRIMP FRITTERS WITH CREOLE TOMATO DRESSING
This easy-to-make appetizer will have you cooking like a gourmet chef.

Steps:
- For the Dressing, place all ingredients in food processor; cover. Process until smooth. Spoon into small bowl. Cover. Refrigerate at least 1 hour to blend flavors.
- For the Fritters, mix Hush Puppy Mix, onion, garlic, chives and Creole Seasoning in large bowl. Add water; mix just until moistened. Gently stir in corn, crabmeat and shrimp.
- Pour oil into heavy skillet, filling no more than 1/3 full. Heat to 375°F on medium heat. Drop batter by heaping tablespoonfuls, a few at a time, into hot oil. Fry 3 to 4 minutes or until golden brown. Drain on paper towels. Serve fritters with Creole Tomato Dressing.

QUICK AND EASY CRABMEAT DRESSING
This is great for a dressing, stuffing, as a bed for Shrimp Scampi, or by itself. You can buy those little crab shells to stuff and broil, mold it into a loaf pan and bake, or use it to dress any main meat entree. This is a recipe from my wife's mother's collection.

Steps:
- Sauté garlic, onions, celery, and parsley. Set aside.
- Shred the crab meat.
- Prepare the stuffing mix as per instructions on the box but DO NOT COOK. In other words, just mix the water, butter, and stuffing mix together, without cooking it.
- Stir into the crab meat, add garlic powder, and mix until blended.
- Spoon into loaf pan treated with no-stick cooking spray (DO NOT PRESS).
- Brush lightly with butter, sprinkle with paprika, and bake covered in a 375°F oven for 45 minutes.
- Remove covering, add parmesan cheese, and continue to bake at 400°F for 10-15 minutes to allow the top to brown.
- Serve as a side dish, the main dish, or a bed for Shrimp Scampi.
CRAB MEAT OR SHRIMP OMELETTE
I bought a package of frozen crabmeat and was looking for ways to use it up, since I was too lazy to make crabcakes. This is a very simple dish - I served it as a side for dinner, but I imagine it would be wonderful for breakfast/brunch too!

Steps:
- Lightly beat eggs with salt and pepper, set aside.
- Heat wok with 2 tsp oil and sesame oil.
- Add onion and fry until soft.
- Push to one side of the wok, add crabmeat or shrimps and stir-fry well.
- Stir in soy sauce, more salt and pepper if desired, then remove crabmeat mixture and set aside.
- Heat the remaining 2 tsp oil in the wok; add beaten eggs.
- Swirl pan around to spread the omelette evenly.
- When eggs have set, add the cooked crabmeat/shrimp mixture and sprinkle with spring onion and red chillies.
- 'Fold'in the four corners of the omelette to cover the filling.
- Cover pan with a lid for 1 minute, then turn out omelette onto a plate and serve immediately.
