CRAB STUFFED MUSHROOMS
I have always loved the stuffed mushrooms from Red Lobster so I created my own version which I have enjoyed even more!

Steps:
- Spray a 9x12-inch glass baking dish with cooking spray.
- Use an additional baking dish if needed.
- Drizzle olive oil or butter in the bottom of the baking dish.
- Wipe mushrooms with a damp paper towel to clean.
- Remove stems, set aside caps and chop stems to add to filling.
- In a medium bowl, mix crabmeat, chopped mushroom stems, onion, dry mustard, 1 cup parmesan cheese, SOFT bread crumbs (fresh bread frozen and then shredded), parsley, red and black pepper, and garlic salt.
- Mix well and then stir in egg and mayonnaise.
- Use a small cookie scoop to mound filling onto each mushroom cap.
- Melt butter and mix in garlic salt and drizzle over the filled mushrooms.
- Mound a generous portion of the shredded parmesan cheese on top of each filled mushroom. Note: For softer, melted cheese, you may want to use mozzarella cheese or brick cheese for the topping.
- Bake for 20 to 25 minutes at 425°F.
- Best served hot.
- Can be prepared ahead, refrigerated and then baked just before serving (add 7-10 minutes additional baking time).

- Preheat oven to 350 degrees F (175 degrees C).
- Rinse the mushrooms. Remove and discard stems. Place mushroom caps in a large bowl. Cover with lemon juice.
- In a medium saucepan, boil the water. Pour the water over the mushroom caps. Drain after 1 minute and pat dry.
- Using a blender or food processor, thoroughly blend the onions, celery, sour cream, cream cheese, bread crumbs, lemon juice, garlic powder and salt. Transfer the mixture to a medium bowl and gently mix in the crabmeat by hand.
- Fill the mushroom caps with the blended mixture. Top each cap with a dash of paprika.
- Bake in the preheated oven 7 to 10 minutes, until lightly brown.

- Preheat oven to 400deg F.
- Wash mushrooms and remove stems.
- Set caps aside, and chop half of the stems.
- Saute chopped mushroom stems,celery, onion and pepper in butter for 2 minutes.
- Transfer to a plate and cool in refrigerator.
- Combine sauteed vegetables and all other ingredients (except cheese slices) and mix well.
- Place mushroom caps in a sprayed or buttered baking pan stem side up.
- Spoon 1 tsp stuffing into each mushroom cap.

- Preheat oven to 400 degrees F (200 degrees C). Prepare a 9x13 inch baking dish with 3 tablespoons butter.
- Remove stems from mushrooms. Set aside caps. Finely chop stems.

- Preheat the oven to 425 degrees F. Remove the stems from 24 large cremini mushrooms.
- Wipe the caps clean with a damp paper towel, then toss with 2 tablespoons olive oil and season with salt. Arrange on a baking sheet.
- Finely crush 20 butter crackers (such as Ritz); mix with 2 tablespoons melted butter. Melt 2 more tablespoons butter in a skillet over medium heat. Add 1/2 cup each finely chopped celery and red bell pepper; cook until softened, 5 minutes. Add 1 chopped garlic clove; cook 1 minute. - Butter a large baking dish, add cleaned mushroom caps, and set aside.
- In a medium skillet heat olive until hot over medium-high heat. Add shallot, and cook until caramelized. Add mushroom stems, and cook until softened. Allow to cool until warm.
- Cream together sautéed shallot mixture, cream cheese, mayonnaise, sour cream, 1/3 cup parmesan cheese, lemon juice, chives, dill, hot sauce, and salt until well combined. Fold in crab meat.

- When Making this dish I always use imitation crab meat, it is cheaper and in this dish not noticeable. (Update: I have since found out that not all imitation crab is equal. The imitation crab I get comes from the seafood counter and looks like shelled crab legs.).
- Wash and remove stems of mushrooms, leaving a little dish in the mushroom where the stem used to be.
- In a bowl mix equal parts crab to cream cheese. Season with Old Bay Seasoning.
- Stop eating the filling!
- Spoon generous amounts of filling into the mushroom caps.
- Stop eating the mushrooms!
- In a muffin tin, spoon a generous amount of butter into each cup.
- Heat tin in oven until butter is melted.
- Place stuffed mushroom caps into each muffing tin stuffing side up.
- Bake approx 15 - 20 minutes until mushroom caps appear cooked.
- Set oven to broil and just brown the tops a bit, careful not to melt the cream cheese into molten lava.
- Remove stuffed mushrooms and place on plates, careful not to bring to much butter with them.
- Be careful they are hot. Serve after a few minutes cooling time.
- What to do with the excess stuffing? Well it is excellent in an omelet! Also makes nice tea sandwiches.

CRAB STUFFED PORTOBELLOS
Steps:
- Preheat the oven to 350 degrees F.
- Put a large skillet over medium-high heat and add 2 tablespoons of the coconut oil. Once heated, add the portobello stems and sliced scallions and saute until tender, about 2 minutes. Fold in the crabmeat, Creole seasoning, and salt and pepper to taste. Brush the mushroom caps with the last tablespoon of coconut oil. Stuff the caps with the crab filling and put into the oven to roast for 15 minutes.
- Remove the mushrooms from the oven and top with the Parmesan. Put back into the oven and continue cooking until the cheese has melted, another 3 to 5 minutes. Remove from the oven and cut as desired for serving.
CRAB-SALSA STUFFED MUSHROOMS
Steps:
- Clean mushrooms and let dry. Remove stems from mushrooms and place in resealable bag set in a bowl. In another bowl, mix oil, vinegar, pepper and the garlic and pour over the mushrooms. Place the mushrooms in the refrigerator for at least 6-24 hours (the longer the better).
- Stir cream cheese and salsa together and fold in the crabmeat. Drain the marinade from the mushroom caps. Pat the caps dry. Place the mushroom caps on a baking sheet and fill with crabmeat mixture. Broil (4 inches from heat) for about 5-7 mins until hot and starts to bubble. Serve warm with extra salsa on the side and sprinkle with chopped green onions. If you want, add hot sauce to crabmeat mixture before broiling.
BAKED CRAB-STUFFED MUSHROOMS
I created this recipe when I was 20, I was always invited to the family get togethers, but never asked to bring something- I was still considered one of the "kids." I tried to copy an appetizer I had at a Jersey Shore restaurant- not sure which one. It became a family classic and I am always asked to bring it now. They reheat very easy in the oven. How many you get depends on the size of the mushrooms, you can also substitute Parmesan for the breadcrumbs.

- Preheat oven to 350.
- Remove stems from mushrooms, place caps open end up in a 9 x 13 baking dish.
- Very finely chop mushroom stems.
