3 ounces cream cheese, softened
2 tablespoons minced onion
2 tablespoons chopped fresh parsley
1 teaspoon chopped fresh dill
1 teaspoon minced garlic
⅛ teaspoon lemon pepper
4 ounces fresh Dungeness crabmeat
4 skinless, boneless chicken breasts
1 cup all-purpose flour
2 eggs, beaten
3 cups fresh bread crumbs
2 tablespoons butter
2 tablespoons vegetable oil

Steps:

  • In a medium bowl combine the cream cheese, onion, parsley, dill, garlic and lemon pepper. Add crabmeat and mix thoroughly. Season with salt and pepper to taste. Cover and chill in refrigerator (can be prepared 2 hours ahead).
  • Using a small sharp knife, cut in half horizontally through the center of each chicken breast half, creating a pocket. Fill each pocket with 1/4 of the crab stuffing. Then dip each chicken piece into flour, eggs and finally bread crumbs to coat. Cover completely.
  • In a large skillet melt butter or margarine with oil over medium heat. Add filled, breaded chicken breast halves to skillet and saute until golden brown and cooked through (juices run clear), about 10 minutes each side. Remove from skillet, drain on paper towels and serve.

2 ounces cream cheese (1/4th of an 8-ounce block, softened)
1 tablespoon mayonnaise
1 tablespoon minced onion (or scallion)
2 teaspoons chopped fresh parsley
1 teaspoon chopped fresh dill (or 1/2 teaspoon dried)
2 cloves garlic (minced)
1 teaspoon lemon zest
4 ounces lump crabmeat
Salt and freshly ground black pepper (to taste)
2 boneless skinless chicken breast halves
1/4 cup seasoned dry breadcrumbs
Cooking spray

Steps:

  • Preheat oven to 375 degrees.
  • Combine first 7 ingredients in a small bowl. Gently fold in crab. Season to taste with salt and black pepper.
  • Cut horizontally through the center of each chicken breast, creating a pocket, being careful not to cut all the way through at any point.
  • Fill each pocket with equal amounts of the stuffing. Secure with toothpicks.
  • Dredge each piece of chicken in the breadcrumbs and place on a baking sheet. (Can be prepared to this point up to 4 hours ahead. Cover and chill.)
  • Spray the breadcrumbs with cooking spray to moisten.
  • Bake for 22 to 25 minutes or until cooked through to 165 degrees in the center of the filling.
  • Remove toothpicks and serve.

6 skinless, boneless chicken breast halves
12 small red potatoes
2 tablespoons olive oil, divided
2 teaspoons sea salt
2 teaspoons garlic powder
2 teaspoons lemon and herb seasoning

½ teaspoon ground black pepper
6 slices Havarti cheese, folded in half
3 (.9 ounce) packages hollandaise sauce mix (such as Knorr®)
3 cups milk
¾ cup butter
1 teaspoon ground white pepper

1 pound fresh asparagus, trimmed
1 (8 ounce) package imitation crabmeat, chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place chicken breasts into a 9x13-inch baking dish.
  • Place red potatoes into a separate 8x8-inch baking dish.
  • Drizzle 1 tablespoon olive oil over chicken breasts and 1 tablespoon oil over potatoes.
  • Combine sea salt, 2 teaspoons garlic powder, lemon and herb seasoning, onion powder, 1 teaspoon dried basil, and black pepper in a small bowl. Sprinkle chicken and potatoes each with half the seasoning mix.
  • Cover both baking dishes with aluminum foil.
  • Bake chicken and potatoes in the preheated oven for 40 to 45 minutes; remove chicken and top each breast with a folded slice of Havarti cheese. Return chicken to oven and bake until Havarti cheese is melted, chicken is no longer pink inside and juices juices run clear, about 5 more minutes.
  • Remove chicken and potatoes from oven and allow to rest covered for 5 minutes.
  • Whisk hollandaise sauce mix with milk in a saucepan over medium heat; bring to a boil and stir in butter until melted. Reduce heat to low and simmer sauce until thickened, about 1 minute. Remove from heat and stir in white pepper, 1 teaspoon dried basil, and 1 pinch garlic powder.
  • Place asparagus into a skillet over medium heat. Pour water into skillet about 1-inch deep and bring to a boil. Cover skillet and steam asparagus just until tender but still bright green, 2 to 4 minutes.
  • To serve, place each chicken breast onto a serving plate and top breasts with imitation crab meat.
  • Pour about 2 tablespoons of hollandaise sauce over each serving and place several spears of asparagus on top; drizzle 2 more tablespoons of sauce over each portion. Serve remaining hollandaise sauce on the side. Garnish with a pinch of paprika and serve with 2 red potatoes on each serving plate.

4 tablespoons butter, divided
¼ cup all-purpose flour
1 cup chicken broth
½ cup milk
¼ cup chopped onion
1 (6 ounce) can crabmeat - drained, flaked and cartilage removed
1 (4.5 ounce) can sliced mushrooms, drained
⅓ cup crushed saltine crackers
2 tablespoons minced fresh parsley
½ teaspoon salt
1 pinch ground black pepper
4 skinless, boneless chicken breast halves
1 cup shredded Swiss cheese

Steps:

  • To Make White Sauce: Melt 3 tablespoons of the butter in a medium saucepan. Stir in flour until smooth, then gradually stir in broth and milk. Bring all to a boil; boil, stirring, for about 2 minutes. Remove from heat and set aside.
  • In a large skillet melt remaining 1 tablespoon butter and saute onion over medium heat until tender. Add crab, mushrooms, cracker crumbs, parsley, salt, pepper and 2 tablespoons of the prepared white sauce. Heat through.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pound chicken breasts to 1/4 inch thickness. Spoon about 1/4 of the crab mixture onto the edge of each chicken breast; roll up and secure with toothpicks. Place chicken rolls in a lightly greased 9x13 inch baking dish, then top with remaining white sauce.

2 boneless skinless chicken breast halves
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup olive oil (~ 4 tablespoons)
6 spears asparagus
8 ounces lump crab meat
1/4 teaspoon old bay seasoning
4 egg yolks
1 cup butter melted
2 tablespoons fresh lemon juice
salt and pepper
1 tablespoon fresh lemon juice

Steps:

  • Clean asparagus spears.
  • Steam asparagus in a saucepan or microwave for 3 minutes on high. Or, blanch in boiling water for about 1.5-2 minutes. Set aside.
  • Pound chicken breasts covered with a sheet of plastic wrap to about 1/8 inch thin.
  • Then cut the chicken pieces in half so you have four pieces total.
  • Drain crab and mix with Old Bay and lemon juice.
  • In a large shallow dish, stir together the flour salt, and pepper.
  • Dredge chicken in seasoned flour.
  • Heat 1/4 cup olive oil in a heavy skillet on medium heat.
  • Cook the floured chicken breast in the oil for 2-3 minutes on each side until golden brown.
  • Remove to baking dish.
  • Make the Hollandaise by whisking 4 egg yolks with 2 tablespoons of lemon juice and a pinch of salt and pepper into a food processor.
  • While the processor is running slowly drizzle 1 cup of melted butter into the egg mixture.
  • Finish the dish by topping each chicken breast with 2 asparagus spears, equal portions of crabmeat, and a healthy drizzle of Hollandaise sauce.
  • Bake in a 350-degree oven for about 5 minutes to warm.
  • Serve immediately.

1/2 cup chopped celery
3 tablespoons butter

2 tablespoons butter, melted
1/2 lb mushroom, chopped

  • Cook onion and celery in 3 Tbsp butter until tender.

  • Top each breast with equal amounts of stuffing mixture.
  • Roll and secure each breast with toothpick.
  • Mix flour and paprika together in shallow dish.
  • Coat each rolled chicken breast with flour mixture.
  • Place in baking dish and drizzle with 2 Tbsp butter, melted.
  • Bake loosely covered at 375 degrees for 1 hour.
  • Sauce: Saute mushrooms in 4 Tbsp butter until"squeaky".
  • Melt 5 Tbsp butter, add flour and mix into paste.
  • Slowly whisk in chicken broth, 1/2 cup white wine and whipping cream.
  • To serve: Transfer chicken breasts to platter and top with Wine Mushroom Sauce.

Here is my version of Chicken Oscar, I know there are many different recipes that usually only slightly vary in ingredients, whether it be what seafood is used, to the sauce it is served with. There is a restaurant in Australia that serves Mortan Bay Bugs (they come from the crayfish family.) with theirs with a mushroom sauce. I have also been to restaurants in London, where the meat is veal. Which ever way you choose to make it and no matter what your choice of ingredients are, it is still a very yummy dish that always goes down well with guests. I made this the other night when my sister came over with her daughter, there were 5 of us, but I have adjusted the ingredients below with what I believe will work for 4 people.

4 chicken breasts
250 g lump crabmeat
8 medium prawns
8 asparagus spears
1/4 cup dry white wine
1/4 cup water
1/2 teaspoon chicken stock
225 g butter
3 large egg yolks
2 tablespoons hot water
1 tablespoon lemon juice
1 tablespoon white wine
1/4 teaspoon cayenne pepper

Steps:

  • Heat some olive oil in a pan, add chicken breasts and brown both sides to give a good colour.
  • Add wine, water and stock, cover and simmer until chicken is cooked through.
  • While the chicken is simmering, heat some more oil in another pan and cook prawns until pink and cooked through.
  • Boil, steam or microwave asparagus until tender.
  • Just berfore serving heat crab meat in microwave (I always use fresh crab meat so I am not sure how this will taste with canned.).
  • To serve: Place breast on plate top with crab meat, arrange 2 prawns on top and finally top with asparagus, drizzle hollandaise over.
  • For The Hollandaise.
  • Melt the butter slowly in a medium-sized saucepan. Once the butter has melted, remove the pan from the heat and leave to one side.
  • In a small mixing bowl, whisk together the egg yolks.
  • Whilst continuing to whisk, add the lemon juice, wine and cayenne pepper to the beaten egg yolks.
  • Next, very slowly to begin with, whisk in the melted butter and the 2 tbsp of water. Continue to whisk constantly.
  • Return the mixture to the saucepan, heat over a very low heat, still whisking all the time until the sauce thickens.
  • Serve immediately or keep warm for up to 30 minutes before serving.

oil or cooking spray
4 skinless chicken breasts, split
1/2 cup crabmeat
1/2 cup grated swiss cheese
2 green onions, finely sliced
1/2 teaspoon dried dill weed
2 teaspoons lemon juice
salt
freshy ground black pepper
8 slices prosciutto (thin slices)

Steps:

  • Mix crab, cheese, onions, dill, lemon juice and salt and pepper together in a bowl.
  • Heat oven to moderated.
  • Spray a baking tray with oil.
  • Open out the chicken fillet, spread one half with a quarter of the crab mix.
  • Enclose with other half.
  • Wrap each fillet with 2 thin slices of prosciutto, maing sure ends are on the underside.
  • Place on the baking tray in the moderate oven and bake for about 25 minutes.
  • We ate ours with hollondaise sauce.

4 chicken breasts
2 stalks celery, diced
2 garlic cloves, crushed
190 g canned crab or 120 g fresh crabmeat, flaked
4 tablespoons white wine
2 tablespoons Worcestershire sauce
1 1/2 tablespoons butter
2 tablespoons water
1/3 cup sage and onion herb seasoned stuffing mix (paxo brand, or herb stuffing mix)
1/4 teaspoon chicken stock powder
1 teaspoon paprika
1 (26 g) packet hollandaise sauce mix
1/4 cup white wine
2 tablespoons lemon juice
3/4 cup gruyere cheese
milk (make up the rest of the liquid needed with milk)

Steps:

  • Pour about 2 tablespoons of olive oil in a pan, add onion, celery and garlic, cook until onion is soft. Add crab, wine, Worcestershire sauce, water, stuffing mix, chicken stock and paprika. Stir to combine, stuffing mix should have fluffed up a bit. Don't worry if some of the breadcrumbs still feel hard, as it finishes softening during cooking time in the oven.

Oven Baked Crabmeat Stuffed Sole with Meuniere Sauce image

v1 teaspoon minced garlic
1 cup lump crabmeat, picked through for shells and cartilage
2 teaspoons fresh lemon juice, plus 2 tablespoons
Salt and white pepper
4 (5 to 6 ounce) sole fillets
2 tablespoons plus 6 tablespoons unsalted butter, divided
4 tablespoons chopped parsley leaves
2 tablespoons minced garlic
1/4 cup Worcestershire sauce
1/4 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 teaspoon olive oil
2 tablespoons minced red bell pepper
2 tablespoons minced green onion
1 tablespoon minced celery

Steps:

  • Preheat oven to 400 degrees F.
  • Heat olive oil in a small skillet over medium heat. Add bell pepper, green onion, celery, and 1 teaspoon of minced garlic. Saute until softened, about 2 minutes. Remove from heat and cool slightly. In a medium bowl, combine cooled vegetables, crabmeat, and 2 teaspoons of lemon juice. Season crab mixture with salt and white pepper, to taste.
  • Season sole fillets with salt and pepper on both sides. Spoon crabmeat mixture down the center of the fillets and roll lengthwise into bundles. Using toothpicks, secure the ends so that the fillets won't unwrap during baking. Place sole fillet bundles, seam-side down, in a lightly greased 9-inch square baking dish. Bake for 25 to 30 minutes, or until the fish is cooked through.
  • Melt 2 tablespoons of the butter in a medium skillet over medium-high heat. When the butter begins to foam, add the parsley, garlic, lemon juice, and Worcestershire. Cook for 2 minutes until slightly reduced. Add the cream and cook, whisking, for 15 seconds. Season with salt and cayenne. Turn heat down to low and whisk in the remaining butter, 1 tablespoon at a time, adding each piece before the previous one has been completely incorporated. Continue until all the butter is incorporated and the sauce coats the back of a spoon. Immediately remove the pan from the heat to prevent the sauce from getting too hot and breaking.
  • Pour warm meuniere sauce over crabmeat stuffed sole and serve immediately.

For the Hollandaise Sauce:
4 large egg yolks
2 tablespoons lemon juice
1 tablespoon water
1 cup butter (melted)
Pinch of salt, to taste ( kosher )
For the Chicken:
6 chicken breast halves (boneless, without skin)
1 small onion (quartered, for poached method)
1 teaspoon salt (kosher)
Optional: 1/4 teaspoon dried leaf thyme
1/4 teaspoon black pepper
Dash of paprika , optional

Steps:

  • Gather the ingredients.
  • In a small saucepan or the bottom of a double boiler, bring about 1 inch of water to a simmer (do not boil).
  • In the top of a double boiler or a stainless steel bowl which will fit on a small saucepan, whisk the egg yolks with the lemon juice and water.
  • Place the bowl or pan over the simmering water, making sure the bottom does not come in contact with the water. Whisk constantly for a minute or two, or until the egg mixture is warm and begins to thicken.
  • Slowly whisk the melted butter into the egg yolk mixture. Cook over the simmering-not boiling-water, whisking constantly, until the sauce mixture has thickened. Remove from heat and stir in salt to taste and cayenne pepper. Cover and move to the preheated oven or a very low burner to keep warm.
  • In a large skillet over high heat, combine chicken, onion, salt, thyme, pepper, and water to cover. Bring to a boil then reduce heat to low; cover and simmer for 20 to 30 minutes, or until chicken is cooked through and tender. The minimum safe temperature for chicken is 160 F.
  • Alternatively, season the chicken breasts with kosher salt and freshly ground black pepper and saute in a large skillet in 2 tablespoons of butter. Cook until browned and thoroughly cooked, about 15 to 20 minutes, depending on thickness.
  • Meanwhile, prepare rice following the package directions, along with a steamed vegetable side dish or tossed salad .
  • Divide the rice among six plates.
  • Top each mound of rice with a chicken breast.
  • Spoon 2 to 3 tablespoons of the warm Hollandaise sauce over each chicken breast and add a steamed vegetable or salad, as desired.
  • If desired, sprinkle paprika over the sauce.
