Some of our favorite chicken salad recipes are made with tarragon and the juice and zest of a lemon-like this one, served on warm crostini.

Steps:
- Heat oven to 350ºF.
- Brush bread slices with dressing; place in single layer on baking sheet.
- Bake 10 to 13 min. or until golden brown. Cool 5 min. Meanwhile, combine all remaining ingredients except arugula.
- Top toast slices with chicken mixture and arugula.

CHICKEN SALAD CROSTINI RECIPE

- For the Crostini: Turn your oven on to broil and grab two baking sheets. Pour olive oil into a bowl and brush onto both sides of the sliced bread rounds using a pastry brush. Lay them in a single layer on the baking sheets. Place one pan on the center rack of your oven and broil until the edges of the bread is a beautiful light brown. This only takes 30 seconds in my oven but yours will be different. Stand by and watch for your ideal time. It may be more or less time for you. Turn the bread over and repeat with the other side. Continue until all the slices of bread are broiled. For the Chicken Salad: Chop cooked chicken into small pieces and stir together with 3/4 cup of Greek yogurt, onion powder and chopped rosemary, if you're using it in this recipe. Continue to stir until thoroughly mixed. Add cheese and stir in along with an additional 1/4 cup of plain Greek yogurt. If you're adding chopped apples, mix them in and also add another 1/2 cup of Greek yogurt. After the ingredients are completely mixed together, taste your chicken salad and add seasoning to fit your preference. Add more yogurt by the spoonful until the chicken salad fits your preference. Spoon the mixture onto the toasted slices of bread and top with dried parsley or chopped fresh parsley. Enjoy!

CURRIED CHICKEN SALAD
Steps:
- Preheat the oven to 350 degrees F.
- Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and dice the chicken into large bite-size pieces.
- For the dressing, combine the mayonnaise, wine, chutney, curry powder, and 1 1/2 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth.
- Combine the chicken with enough dressing to moisten well. Add the celery, scallions, and raisins, and mix well. Refrigerate for a few hours to allow the flavors to blend. Add the cashews and serve at room temperature.
CURRIED CHICKEN SALAD
Steps:
- Bring 4 cups water to a simmer with chicken broth in a 2- to 3-quart saucepan. Add chicken and simmer, uncovered, 6 minutes. Remove pan from heat and cover, then let stand until chicken is cooked through, about 15 minutes. Transfer chicken to a plate and cool 10 minutes. Chop into 1/2-inch pieces.
- While chicken is cooling, whisk together mayonnaise, yogurt, curry, lime juice, honey, ginger, salt, and pepper in a large bowl. Add chicken, onion, mango, grapes, and cashews and stir gently to combine.
CURRIED CHICKEN SALAD

- Bring the broth and water to a boil in a medium saucepan. Add chicken to broth and simmer, covered, for 8 minutes. Turn the heat off and let chicken stand in the cooking liquid, covered, until cooked through, about 20 minutes. Remove the chicken from the broth and cool completely in the refrigerator. Cut into 1/4-inch dice. Toast the almonds in a small dry skillet over medium-high heat until fragrant and beginning to turn golden, 2 to 3 minutes.
- In a large bowl, stir together the yogurt, mayonnaise, and curry powder. Fold in the chicken, grapes and cilantro and season, to taste, with salt and pepper.
- In a large bowl, toss the greens with the oil, lemon juice and salt and pepper, to taste. Arrange the greens on 4 individual plates, top with a scoop of the chicken salad and sprinkle with the almonds.

CURRIED CHICKEN SALAD
Delicious main dish salad, perfect for a summer lunch or light supper. I typically use Madras (hot) curry powder, but used a mild blend in this dish as I felt it would benefit from a lighter flavor. Use your own preference and adjust the amount to suit your taste. I garnished with fresh cilantro to add some color, but also ended up really enjoying the flavor it added. The original recipe does not give any chill time, but I think it tastes more balanced after some time in the fridge. -Adapted from Gourmet

CURRIED CHICKEN SALAD CROSTINI

- 1. In a medium bowl, combine the mayonnaise and curried relish; mix well, adjusting with more relish as needed. In a large bowl, combine the chicken and celery, add enough dressing to make moist but NOT runny.
- 2. Cut the lettuce leaves to fit the baguette slices.
- 3. TO ASSEMBLE: Lightly spread butter on the baguette slices. Top with a piece of lettuce and 2 T. chicken salad. Garnish with a few almond slivers. Serve immediately.
- 4. * It's best not to assemble until ready to serve. You may also toast the baguette slices if you want that extra crunch factor.
