BAKED SEAFOOD BURRITOS



Baked Seafood Burritos image

Seafood burritos with imitation crab, shrimp and loaded with toppings.

1.5 lbs Imitation Crab or real crab
1/2 lb fresh small shrimp (cooked, diced)
2 cups Four Cheese Mexican Blend -Tillamook
1 large can or 2 small cans of Enchilada Sauce
Large burrito wraps
1 cup sour cream
2 tsp butter
1 small onion diced small
1/2 tsp cilantro
1/2 head of lettuce (chopped)
1 to mato (diced)
3-4 green onions (chopped)
Sour cream
Hot sauce to taste
Salt & Pepper to taste

Steps:

  • Preheat oven to 350 degrees. Melt butter in deep skillet on medium heat.
  • Add onion, crab meat, shrimp, salt, pepper and saute until onions are clear.
  • Add cilantro, sour cream and 1 cup cheese.
  • Blend and reduce heat to low.
  • Add few shakes of hot sauce and blend.
  • Separate crab mix evenly into 4-6 servings in pan.
  • Place one section of filling down middle of burrito, then wrap and fold.
  • Add to the dish fold side down and repeat.
  • Pour enchilada sauce over center of wraps and top with cheese.
  • Bake 25-30 min.
  • Serve with sour cream & green onions for garnish

1 package (8 ounces) cream cheese, softened
2 cups shredded cheddar cheese
1 package (8 ounces) imitation crabmeat, flaked
8 flour tortillas (10 inches)
Salsa

Steps:

  • In a bowl, combine the cream cheese and cheddar cheese. Stir in the crab. Spoon down the center of each tortilla; roll up tightly and place on an ungreased baking sheet. Bake at 350° for 20 minutes or until heated through. Serve with salsa.

8 ounces cream cheese, at room temperature
3/4 cup finely chopped red pepper
2 green onions, finely chopped
3 tablespoons fresh parsley, finely chopped
1/2 cup sharp cheddar cheese, shredded
1/2 teaspoon cayenne pepper
1 (4 1/4 ounce) can crabmeat, drained
5 (10 inch) flour tortillas
salsa

Steps:

  • Beat cream cheese until smooth.
  • Add red pepper, green onions, parsley, cheddar cheese, cayenne and crab meat. Mix well.
  • Divide mixture equally between the tortillas; spread evenly then roll each tortilla up tightly. Wrap each roll in plastic wrap and refrigerate for at least 1 hour or overnight.
  • Preheat oven to 350°. Cut rolls into 3/4-inch slices and place slices cut-side down on greased baking sheets.
  • Bake for about 10 minutes or until heated through.
  • Serve hot with salsa for dipping.

2 (1/4 ounce) packets yeast
1 teaspoon granulated sugar
1/4 cup warm water
1 egg
1 cup milk, warm
1 teaspoon salt
3 1/2 cups all-purpose flour, divided
1/2 cup unsalted butter, melted, divided

Steps:

  • Mix yeast, sugar & water together, then beat the egg & stir it into the yeast mixture.
  • Stir in the milk & salt, & then add 2 cups of the flour. Slowly add more flour, but stopping when the mixture becomes stiff.
  • Knead the dough until it is smooth, about 10 minutes.
  • Transfer dough to a clean bowl containing 1/4 cup of the melted butter. Roll dough around in the bowl until it is entirely coated in butter.
  • Cver with a damp towel & let rise for 1 hour.
  • When dough has risen, preheat oven to 425 degrees F & grease a large baking sheet.
  • Divide dough into 10 pieces & roll each piece into a circle, about 1/4" thick.
  • Brush each circle of dough with melted butter & then fold each one in half.
  • Place folded pieces of dough on prepared baking sheet & place on the bottom rack of the oven.
  • Bake about 15 minutes or until golden brown.

4 bananas
1 liter milk
6 eggs
100 g caster sugar
2 -3 drops vanilla essence
3 tablespoons arrowroot (you could use cornflour or cornstarch)
2 sheets puff pastry (ours measure 23cm square)
icing sugar (to decorate)

Steps:

  • Into a large saucepan put milk, sugar, eggs and bananas and then blend with a stick blender (if you don't have a stick blender then use a blender or food processor and then transfer to saucepan) heat over a very gentle heat stirring frequently until the custard thickens (should coat back of wooden spoon with a thick mix and when stirring leave a trail), add arrowroot to help thicken even more.
  • Spread the custard out on a tray (with sides) to let cool completely.
  • Preheat oven to 180°C.
  • Cut pastry sheets in half and place pastry sheets on baking paper lined trays.
  • Prick pastry sheets all over with a fork.
  • Place in oven and bake for 10 minutes.
  • Give cooled custard a stir to (don't worry about it having formed a skin), put down a layer of pastry and top with 1/3 of the custard but don't take it right to the edge, put on another 1/3 layer of custard and then another pastry sheet and then the final layer of custard and the final 4th sheet of pastry.
  • Sprinkle with icing sugar and then refrigerate for 1 hour.
  • Remove and slice into desired portions (3 to 4).
