BAKED SWEET AND SOUR CHICKEN

Baked Sweet and Sour Chicken image

My oven baked version of Sweet & Sour chicken which is not like most recipes you will find on the internet. My sauce uses less sugar so it's not overly sweet, the sauce ingredients has a few extra things in it so it really does taste more like restaurant Sweet & Sour sauce, and the chicken is only baked for 20 minutes so it does not dry out (but still lovely and crispy!). The ingredients list for this recipe is longer than most on my site - but it is well worth it!

Categories     Chicken     Stir Fry

Time 40m

Number Of Ingredients 21

1 lb / 500 g chicken breast (, cut into bite size cubes)
1/2 tsp salt
1 large egg or 2 small eggs (, lightly beaten (enough to coat chicken))
1 cup cornstarch / cornflour (, placed in a large ziplock bag)
3 to 5 tbsp oil ((vegetable, canola))
Oil spray
1/2 tbsp oil
1 garlic clove
1 small onion (, cut into large dice)
1/2 red bell pepper (, cut into bite size pieces)
1/2 green bell pepper (, cut into bite size pieces)
1 can ((8oz/250g) canned pineapple pieces in natural juice. Separate pineapple from juice.)
1/2 cup sugar ((white or brown - I use either))
1/3 cup apple cider vinegar
2 - 3 tbsp pineapple juice ((from the canned pineapple pieces))
3 tbsp ketchup ((Australia: tomato sauce))
1 tsp Worcestershire sauce ((Note 1))
1 tsp soy sauce ((Note 1))
1 tsp Oyster Sauce ((Note 1))
1/4 tsp salt
1 tbsp cornflour / corn starch + 4 tbsp water (, mixed together)

Steps:

  • Preheat oven to 200C/390F.
  • Place chicken in a bowl, sprinkle with salt then add the egg. Mix to coat all chicken with egg, then drain out excess egg. (Note 2)
  • Working a handful at a time, shake excess egg mixture off chicken then place chicken in ziplock bag. When all the chicken is in the bag, seal (trap as much air in it as you can to make a "balloon") and shake well to coat chicken in cornflour. Discard excess cornflour.
  • Heat oil in a large skillet on high. Add chicken (in 2 batches if your skillet is not big enough) and cook briefly for 2 minutes, turning, just to make the outside light golden and a bit crispy. The chicken should be raw inside.
  • Transfer to baking tray, spray with oil and bake for 15 to 20 minutes until it becomes a little more golden brown and is crispy.

SWEET AND SOUR CHICKEN

Sweet and Sour Chicken image

Instead of deep-frying chunks of chicken, this streamlined take on an American Chinese restaurant favorite opts for stir-frying it. Sweetness comes from pineapple chunks and juice, plus a touch of brown sugar, while rice wine vinegar delivers that pleasing sour punch.

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 2 to 4 servings

Number Of Ingredients 11

2 tablespoons vegetable oil
2 boneless chicken breasts, sliced into strips
Salt and pepper
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1 cup canned pineapple chunks, drained with 1/2 cup reserved juice
3 tablespoons light brown sugar
3 tablespoons rice wine vinegar
1/4 cup chicken broth
4 teaspoons cornstarch, mixed with 4 teaspoons water
Cooked rice, for serving

Steps:

  • In a large non-stick skillet, heat oil over medium-high heat. Season chicken strips with salt and pepper and add to pan. Brown chicken and remove to plate. Add red and green peppers and cook for 1 minute.
  • Stir in pineapple chunks, juice, sugar, vinegar and broth and bring to a simmer. Simmer until sauce begins to reduce. Stir in cornstarch mixture and bring liquid to a simmer. Stir in chicken strips and cook for 5 minutes. Serve over rice.

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

3 tablespoons ketchup
2 tablespoons orange marmalade or apricot preserves
2 teaspoons low-sodium soy sauce
2 teaspoons balsamic vinegar
One 1-inch piece ginger, peeled and finely grated
Large pinch of cayenne pepper (optional)
2 bell peppers (1 red, 1 yellow), quartered lengthwise and seeded
1 bunch scallions, cut into 3-inch pieces
3 teaspoons extra-virgin olive oil
Kosher salt
8 skin-on, bone-in chicken thighs (3 to 3 3/4 pounds)
Cooked white rice, for serving (optional)

Steps:

  • Preheat the oven to 450 degrees F. Make the sweet-and-sour sauce: Whisk the ketchup, marmalade, soy sauce, vinegar, ginger and cayenne in a small bowl. SWEET AND SOUR BAKED CHICKEN

Sweet and Sour Baked Chicken image

This is one of our favorite sweet and sour chicken dishes at our house, if you have any on hand add in about 1 cup of apricot preserves to this it seems to kick up the flavor! --- all the ingredients may be adjusted to suit taste, and the sauce may be easily doubled if using more chicken.

Categories     Poultry

Time 1h5m

Yield 5-6 serving(s)

Number Of Ingredients 14

1/4 cup butter
1 medium chopped onion
1 medium green bell pepper, coarsley chopped
1 tablespoon minced fresh garlic (optional)
1 cup carrot, coarsley chopped
3/4-1 cup ketchup
1 cup pineapple juice (reserve this juice from the tidbits)
2 -3 tablespoons white vinegar (or to taste)
1/4-1/3 cup light brown sugar (or to taste)
2 tablespoons soy sauce (or to taste)
salt and pepper
1/4-1/2 teaspoon ground ginger powder (or to tase)
1 (16 ounce) can pineapple tidbits (reserving the juice)
3 -4 lbs chicken pieces

  • Grease a 13 x 9-inch baking dish (or a larger baking dish or roaster if using more chicken and doubling sauce).

  • Stir in the ketchup, pineapple juice, vinegar, brown sugar, soy sauce, salt, pepper and the ginger powder; stir with a spoon until all the ingredients are well mixed; bring to a light to a boil (at this point adjust all of the ingredients, adding in more to suit taste, and bring to a boil again for a couple of minutes).
  • If you prefer a thicker sauce, mix cornstarch with cold water to make a thin paste, add to sauce and boil another minute.
  • Add in the pineapple chunks/tidbits: set the sauce aside.

Sweet and sour chicken image

Provided by Barney Desmazery

Categories     Dinner, Main course, Supper

Time 1h

Number Of Ingredients 24

8 skinless, boneless chicken thighs , fat trimmed, sliced
2 tbsp soy sauce
2 tbsp Shaohsing rice wine or dry sherry
thumb-sized piece ginger , peeled and finely grated
3 garlic cloves , finely grated
1 egg , beaten
100g cornflour
½ tsp Chinese five-spice powder
sunflower oil , for deep-frying
boiled rice , to serve
5 tbsp Shaohsing rice wine or dry sherry
150ml malt vinegar
60g caster sugar
2 garlic cloves , crushed
2 tbsp tomato ketchup
2 tbsp soy sauce
½ chicken stock pot or stock cube
1 red pepper , deseeded and roughly chopped
1 red onion , roughly chopped
½ small pineapple , chopped into chunks
large piece ginger , peeled and very thinly sliced
small handful of coriander sprigs
4 spring onions , shredded
1 tsp Sichuan peppercorns (optional)

Steps:

  • Mix the chicken with the soy sauce, rice wine, ginger, garlic and a pinch of salt in a large bowl. Put in the fridge and leave to marinate for at least 1 hr or ideally overnight. Meanwhile, make the sauce. Tip the rice wine, vinegar and sugar into a saucepan with a pinch of salt and bring to the boil. Stir until the sugar has dissolved, then add the garlic and ketchup. Continue to cook for 10 mins until syrupy, then remove from the heat and set aside. To prepare the toppings, put the coriander and spring onion in a bowl of iced water to perk them up. Toast the peppercorns in a dry frying pan, if using, then crush using a pestle and mortar. Mix with 1 tbsp sea salt and set aside.
  • Mix the beaten egg into the chicken mix, then stir in the cornflour and five-spice powder until the chicken is coated. Set aside. Pour the oil into a wok until it's no more than a third full and heat to 170C, or heat a deep-fat fryer to the same temperature. If you don't have a thermometer, drop a bit of the batter into the oil; when the batter sizzles and turns golden within 1 min, it's ready. Fry the chicken in batches for 4-5 mins until golden and crisp, then drain on kitchen paper and keep warm in a low oven.
  • Meanwhile, gently reheat the sauce and add the soy sauce, stock pot or cube, vegetables, pineapple and ginger. Simmer for 3 mins until the veg is slightly softened. Mix the chicken with the sauce and serve with the coriander and spring onions, salt and pepper mix and some rice on the side.
