TEXAS COWBOY STEW
Hearty, filling and man-pleasing describes this stew. Link sausage, cumin, chilies, and chili powder is what gives this soup its Southwest flavor. This dish is quick, easy, and tastes best when it simmers in a slow cooker or even on the stove all day. Bake some Mexican cornbread, toss a simple green salad, and you have a great meal.

Steps:
- Crumble the ground beef into a large skillet over medium-high heat. Add the sausage, garlic and onion; cook and stir until the meat is no longer pink. Drain off grease, and transfer the contents of the skillet to a large pot.
- Pour the tomatoes into the pot with the meat, and stir in the potatoes, pinto beans, corn, diced tomatoes with chilies, mixed vegetables and water. Season with cumin, chili powder, salt and pepper. Cover, and simmer over medium-low heat for at least 1 hour. Stir occasionally. The longer this stew cooks, the better it gets.

- Combine ground beef, onion, and green pepper in large saucepan.
- Cook till onion and pepper are tender.
- Drain off fat.
- Add enchilada sauce, soup, beans, and corn to ground beef and onion mixture.
- Stir to combine.
- Simmer for 15 minutes.

- 1. Cut beef into 1/4 inch thick strips;cut each strip into 1 inch pieces. In medium bowl,combine beef,basil,salt,pepper,garlic and oil; toss to coat.
- 2. Heat Dutch oven or large saucepan over medium-high heat until hot. Add beef mixture;cook and stir 4 to 5 minutes or until browned.
- 3. Stir in broth,salsa and vegetables. Bring to a boil over medium-high heat. Reduce heat to low;simmer 10 minutes.
- 4. Stir in beans. Cook 4 to 5 minutes or until thoroughly heated. Stir in spinach. Garnish each serving of soup with fresh basil.

- Dump everything but the optional ingredients into a large stockpot or crockpot.
- Cook over medium heat, stirring occasionally, for about 30 minutes. If cooking in crockpot, cook on high four hours or low for eight hours.
- Once bubbly hot, serve. Garnish with dollops of sour cream and shredded cheese, if you prefer.
- FOR FREEZING OR oamc: Pour soup into large gallon size freezer bag(s)or other freezer containers. Remove as much air as possible, seal and freeze flat. Reheat slowly in crockpot or stovetop, adding 1/4 water at the beginning.

- Put the beans into a large pot and add enough water to cover by an inch. Bring to a boil. Simmer for 15 minutes, then drain.
- Heat the vegetable oil in a Dutch oven or other heavy-bottomed lidded pot over medium-high heat. Add the onion and sauté for 3 minutes, stirring often, until translucent and just beginning to brown. Add the garlic and sauté another 1-2 minutes. Add carrots and potatoes. Stir another minute.
- Add the marrow bones and meat and brown for 2-3 minutes. Add the drained beans and barley into the pot. Cover with the water, a little salt, and the coffee. Stir and bring to a simmer. Cook this way for 40-50 minutes or longer. (Some beans may take longer to cook, especially if they are older.) The beans should be edible, but still just a little firm (not mushy soft).
- Add the barbecue sauce and stir to combine. Cover and simmer on low heat for another 1-2 hours. Check on everything from time to time. This recipe can be made in a pressure cooker and be ready in 30 minutes. Serve with a little non dairy sour cream if desired.

- Place blackeyes in a colander or sieve and rinse thoroughly. Sort through the beans, check for any debris or dirt and discard.
