A Southwest flavor sensation. Smoked Sausage with bell peppers, onions and garlic topped with cornbread is a crowd pleaser.

Steps:
- Preheat oven to 400 degrees F.
- Heat a 10-inch oven-safe skillet over medium-high heat and add smoked sausage, cook until browned. Add garlic, onion and bell pepper and cook until vegetables are soft, about 6 minutes.
- Stir in chili powder, cumin, salt, tomatoes with their juice and beans. Cook for 3 - 5 minutes, until mixture starts to bubble. Turn off heat and stir in cheese.
- Mix jalapeno into the prepared corn muffin mix. Spread corn muffin batter over the mixture and bake until golden brown and cooked through, 20 - 25 minutes.

SAUSAGE & BEAN CASSEROLE
A comforting and hearty one-pot sausage stew with chorizo, smoked paprika and plenty of vegetables

Steps:
- Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
- Add 1 finely chopped onion and cook gently for 5 minutes.
- Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
- Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
- Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
- Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
- Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
- Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
- Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

COWBOY BEANS AND SAUSAGE SKILLET
I was wanting my baked bean recipe which is posted here and I didn't have any bacon, but I did have some leftover sausage. This is the result. If you like, you can finish this on the stovetop, just cover and turn heat to medium low and simmer for the same length of time as baking. Submitted to "Zaar" on August 1st, 2006.

- In a 10 inch oven proof skillet, over medium heat, cook sausage and onion until both are lightly browned.
- Drain and return to skillet.
- Add rest of ingredients, stirring well.
- Place into a preheated 350ºF oven, for 20 minutes, or until bubbly.

SAUSAGE AND BEAN PIE
Sort of like quiche, but without as many eggs. Good comfort food. I use skim milk and low fat cheese with good results.

Steps:
- Preheat oven to 160 degrees celcius.
- Brown onions in a fry pan, then add sausages.
- Cook sausages for about 6 minutes, remove from pan and allow to cool slightly.
- Lightly grease a rectangular baking dish (as for lasagna).
- Slice cooled sausages to desired thickness.
- Place sausage, onion, zucchini, beans and cheese in baking dish.
- Mix in to get even layers.
- Whisk flour and milk until smooth.
- Add eggs and whisk for a minute.
- Pour egg mixture over sausage mixture.
- Place in oven and bake for 50-60 minutes or until set.

CHEESY SAUSAGE & BEAN PIES
Bake these pies for an after-school dinner the whole family will love. Shop-bought pastry makes them quick and easy to prepare, and you can use canned beans from the back of the storecupboard

Steps:
- Heat the oven to 200C/180C fan/ gas 6. Combine the beans, sausages, passata, oregano and spring onions with some seasoning and the sugar.
- Unroll the pastry and cut into four rectangles. Spoon the bean and sausage mixture onto one side of each rectangle, leaving a 1cm border - so you can fold the pastry like a book. Sprinkle the cheddar over the bean and sausage mixture.
- Brush some egg around the edges, then fold the pastry over to enclose the filling. Seal the edges by pressing with a fork, then put on a baking sheet lined with baking parchment. Brush with more egg, and cut a small hole in the top of each pie for steam to escape. Will keep chilled for up to 24 hrs. Heat the oven to 180C/160C fan/gas 4.
- Bake on the middle shelf for 40 mins until golden. Leave to cool for 5 mins, then serve with salad.

COWBOY PIE
I found a recipe for "Cowboy Pie" in a recipe book ages ago, it was a really simple dish of baked beans, sausages and mash. My version has been a real work in progress and is a very satisfying comforting meal. Children always love it, and its a great way to get them eating a few veggies! PLease dont take the measurements as absolute, especially the bbq sauce, as there are so many different kinds, enough should be added to give it a zing! If you dont have mini/cocktail sausages, you can just use regular ones, I find it best to cook them whole first and then chop them up, as if you try to chop them and then cook them you end up with a gooey mess! You can really add whatever you like to this, although I do recommend the shredded cabbage as it gives it a nice crunch.

Steps:
- Preheat oven to 180C/350°F.
- Put potato, sweet potato, and swede in saucepan of cold water, bring to boil and simmer till cooked. Once cooked drain and mash with the grated cheese, butter, milk, salt and pepper.
- Meanwhile, heat oil in pan (I find a wok works best), and brown sausages.
- Add onions, pepper, garlic and cook till onions and peppers are going soft, dont let them burn as this will affect the taste.
- Add cabbage and give good stir and cook till cabbage just beginning to go slightly soft.
- Add all the remaining ingredients and give good stir.
- Heat till bubbling and then reduce heat and allow to simmer for 5/10 mins, or till the cabbage is just beginning to wilt.
- Spoon the bean mixture into an ovenproof dish and top with the potatoes mixture.
- Put in oven for around 15 to 20 minutes.
- Serve and enjoy!
