These are great for dunking and are also large and satisfying enough for a man's appetite. Cowboy cookies should be about 2-1/2 inches in diameter. My Grandma makes these cookies and I have enjoyed them since I was a kid.

2 cups butter, melted
2 cups packed brown sugar
2 cups white sugar
4 eggs
2 teaspoons vanilla extract
2 cups quick cooking oats
2 cups cornflakes cereal
4 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the melted and cooled butter or margarine with the brown and white sugars. Beat in the eggs at medium speed of an electric mixer. Add the vanilla, oats, corn flakes, flour, baking soda and baking powder; beating well.
  • Drop tablespoon sized spoonfuls of the dough on to an ungreased cookie sheet. Bake at 350 degrees F (175 degrees C) for 15 minutes for a soft and chewy cookie.

1 cup sweetened shredded coconut
3/4 cup chopped pecans
1 cup butter, softened
1-1/2 cups packed brown sugar
1/2 cup sugar
2 large eggs, room temperature
1-1/2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups old-fashioned oats
2 cups (12 ounces) chocolate chips

Steps:

  • Place coconut and pecans on a 15x10x1-in. baking pan. Bake at 350° for 6 to 8 minutes or until toasted, stirring every 2 minutes. Set aside to cool. , In a large bowl, cream butter and sugars until light and fluffy. Add eggs and vanilla; beat well. Combine the flour, baking soda and salt Add to creamed mixture; beat well. Stir in the oats, chocolate chips and toasted coconut and pecans. , Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350° about 12 minutes or until browned. Remove to wire racks to cool.

Laura Bush's cowboy cookies, a classic chocolate chip cookie that's been beefed up with oats, pecans, coconut and cinnamon, beat Tipper Gore's ginger snaps by a mile. Here is an adaptation of that winning recipe.

3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon ground cinnamon
1 teaspoon salt
1 1/2 cups (3 sticks) butter, at room temperature
1 1/2 cups granulated sugar
1 1/2 cups packed light-brown sugar
3 eggs
1 tablespoon vanilla
3 cups semisweet chocolate chips
3 cups old-fashioned rolled oats
2 cups unsweetened flake coconut
2 cups chopped pecans (8 ounces)

Steps:

  • Heat oven to 350 degrees.
  • Mix flour, baking powder, baking soda, cinnamon and salt in bowl.
  • In a very large bowl, beat butter with an electric mixer at medium speed until smooth and creamy. Gradually beat in sugars, and combine thoroughly.
  • Add eggs one at a time, beating after each. Beat in vanilla.
  • Stir in flour mixture until just combined. Stir in chocolate chips, oats, coconut and pecans.
  • For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
  • Bake for 15 to 17 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies from rack to cool.

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, with an electric mixer, cream the shortening, granulated sugar, and brown sugar. Add eggs and the vanilla and beat until well blended. Stir in the flour, baking soda, salt, and baking powder. Add oats, nuts, chocolate chips and coconut, mix until combined. Spoon cookie mixture onto greased foil lined cookie sheet. Bake for 8 to 10 minutes. Transfer the cookies to a wire rack to cool.

Steps:

  • Heat oven to 350°F.
  • Mix flour, baking powder, baking soda, cinnamon and salt in bowl.
  • In 8-quart bowl, beat butter on medium speed until smooth and creamy, 1 minute. Gradually beat in sugars to combine, 2 minutes. Add eggs, one at a time, beating after each. Beat in vanilla.
  • Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans.
  • For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
  • Bake in 350°F oven 17 to 20 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies to rack to cool.

1 1/2 cups corn flakes, crushed
3/4 cup raisins or 3/4 cup dried cranberries

Steps:

  • Preaheat oven to 350, and line cookie sheets with parchment paper.
  • In a bowl, whisk together flour, baking soda, and salt. Set aside.
  • In a separate bowl, beat together butter and sugar (both kinds), until fluffy. Beat in egg & vanilla.
  • Using a wooden spoon, stir in oatmeal, cornflakes, rasins, and chocolate chips, until combined.
  • Drop by generous tablespoons, 2" apart, onto parchment paper lined sheets. Bake in 350 oven until edges and tops begin to brown, about 12-14 minutes. Let cool on racks.

1 cup salted butter (softened)
3/4 cup brown sugar
1/2 cup granulated sugar
3 large eggs
2 teaspoons vanilla extract
2 3/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semi sweet chocolate chips
1 cup quick oats
3/4 cup chopped pecans
3/4 cup unsweetened coconut flakes

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Line two baking sheets with parchment paper or a silicone baking mat.
  • In the bowl of a stand mixer, add butter, brown sugar, and sugar and mix on low using the paddle attachment. Increase to medium and mix until smooth, about 1 minute.
  • Add in the eggs and vanilla extract and beat until just combined, about 30 seconds.
  • Add in all purpose flour, baking powder, baking soda, and salt. Mix until just combined. Add in the quick oats and mix until just combined.
  • Pour in the chocolate chips, pecans, and coconut flakes and mix in using the paddle attachment or use a large spoon or rubber spatula to fold in.
  • Divide the dough into about 12 equal pieces. Use hands to roll into large balls. Place onto prepared baking sheets, 6 per pan.
  • Bake in the 400 degree oven for 10-12 minutes, until tops are golden brown.
  • Let cool on pan 15 minutes before serving warm, or transfer to a wire rack to cool completely.
