Beef, potatoes, onions, kidney beans and CHEESE feature in this slow cooked Cowboy Casserole! Quick to prep, this is a real family pleaser!

Ingredients

1 large onion (sliced)
1 lb ground beef (browned and drained)
3 large potatoes (sliced)
1 clove garlic (minced)
2 cans kidney beans (do not drain)
15oz can diced tomatoes (do not drain)
10.5oz can cream of chicken soup
1/2 tsp dried oregano
1 tsp italian seasoning
1 tsp salt
1/4 tsp cracked pepper
1.5 cups cheddar cheese (grated)

Steps:

Brown the ground beef, and drain well.
Place the browned beef, and the remaining ingredients except the cheese in a crock pot (slow cooker) and combine well.
Cover and cook on high for 4 hours or on low for 8 hours.
Sprinkle cheese on top, cover.
Serve when cheese is melted (about 10 minutes).

Ingredients

1 medium onion, chopped
1 lb ground beef, brown, drain, &, rinse
6 medium russet potatoes, washed &, sliced, do not peel
1 garlic clove, minced fine
1 (16 ounce) can kidney beans
1 (15 ounce) can diced tomatoes
2 tablespoons flour
1/2 teaspoon pepper
1/4 teaspoon chili powder (I like Ancho)

Steps:

Layer onions, ground beef, potatoes, garlic and beans in slow cooker in that order.
Mix your diced tomatoes& flour in a separate bowl.
I like to take my immersion blender to it, kids don't like tomato chunks.
Pour tomato mixture over top of things in pot and sprinkle with salt& pepper.
Cover& cook on low for 5-6 hours, or until potatoes are done (the thinner the faster).
