LEMON-ROSEMARY TEA
Haven't made this yet, but my rosemary plant has gone berzerk since we redid the herb garden, so I'm saving recipes which will come in handy soon. I'm not big on nor familiar with iced tea and maybe the following is a common practice, but the idea of adding the carbonated drink just before serving sounds WAY refreshing! Chill time (3 hours) is included in time estimate. Recipe courtesy BH&G.

Steps:
- In a 3-quart saucepan, bring the water to boiling.
- Remove from heat. Add tea bags and rosemary. Cover and steep for 15 minutes.
- Remove and discard tea bags. Add sugar and lemon juice, stirring to dissolve sugar.
- Strain tea mixture into a large pitcher. Discard rosemary.
- Cover and chill in the refrigerator for at least 3 hours or until ready to serve. Just before serving, stir in carbonated beverage.
- For a more intense rosemary flavor, don't strain the mixture until after chilling.

ROSEMARY LAVENDER TEA
This is one of the many recipes I came up with on my own while experimenting with my various tea herbs. Now I know what you're thinking: "That much rosemary? This'll taste gross!". Trust me, though, it's actually quite delicious. The lavender seems to cover up the bitterness of the rosemary somehow. Anyway, this one is definitely best chilled. Note: I've listed things in teaspoons because this website won't let me list it in parts, but it's technically in a ratio, so you can make whatever quantity you want.

- Combine the rosemary and water in a saucepot, and bring it to a boil. Lower the heat and let it gently simmer for 1 to 5 minutes. The longer to simmer it, the more potent the rosemary flavor will be.
- When it's done simmering, use a slotted spoon to remove the rosemary and any leaves that may have fallen off.
- Pour the strained tea into 2 mugs and serve. If you're only cooking for 1, I like to store the other half of the tea in an airtight container in the fridge and serve it as iced tea later! Or you can reheat for a warm beverage.
