COWBOY STEW
I made up this dish back in the early 1970s when I was down to very little food in the house. Since it's combination of barbecue sauce, hamburger, hot dogs and beans, this one-skillet meal makes both children and adults happy.

- In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 4-6 minutes or until flavors are blended.

BLACK COFFEE BARBECUE SAUCE
It's great to know folks like this sauce so much! I wish I could take credit for it but it was adopted after the original member left. Thank you, all, just the same. I have made the recipe with regular brewed coffee but highly recommend the espresso. In a pinch use strong instant if you have nothing else. The acid of the coffee balances the sweetness of the other ingredients.

COWBOY MEATLOAF
Meal prep for the week with a pantry staple-Cowboy Meatloaf. This easy Cowboy Meatloaf is also the simplest. Complete it with an egg, some onions and peppers and a tangy BBQ sauce glaze. Serve it up alongside mashed potatoes and seasonal veggies!

- Heat oven to 375ºF.
- Reserve 1/4 cup barbecue sauce for later use. Mix remaining barbecue sauce with remaining ingredients just until blended.
- Shape into loaf in shallow pan sprayed with cooking spray.
- Bake 20 min. Spread with reserved barbecue sauce; bake 20 min. or until meatloaf is done (160ºF). Let stand 5 min. before slicing to serve.

- Remove from heat and cool.

- In a large saucepan over medium–high heat on the stove, warm the oil. Add the onion and cook until tender but not browned, 5 to 7 minutes, stirring occasionally. - Grill the steaks over direct high heat, with the lid closed, until cooked to your desired doneness, 8 to 10 minutes for medium rare, turning once or twice (if flare-ups occur, move the steaks temporarily over indirect heat). Remove from the grill and let rest for 3 to 5 minutes. Serve warm with the sauce.
