COWBOY STEW

Cowboy Stew image

I made up this dish back in the early 1970s when I was down to very little food in the house. Since it's combination of barbecue sauce, hamburger, hot dogs and beans, this one-skillet meal makes both children and adults happy.

Provided by Taste of Home

Categories     Dinner

Time 30m

Yield 11 servings.

Number Of Ingredients 5

2 pounds ground beef
4 cans (16 ounces each) baked beans
8 hot dogs, sliced
1/2 cup barbecue sauce
1/2 cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 4-6 minutes or until flavors are blended.

BLACK COFFEE BARBECUE SAUCE

Black Coffee Barbecue Sauce image

It's great to know folks like this sauce so much! I wish I could take credit for it but it was adopted after the original member left. Thank you, all, just the same. I have made the recipe with regular brewed coffee but highly recommend the espresso. In a pinch use strong instant if you have nothing else. The acid of the coffee balances the sweetness of the other ingredients.

Provided by Queen Dragon Mom

Categories     Lactose Free

Time 30m

Yield 1 1/2 cups

Number Of Ingredients 11

1/2 cup brewed coffee, espresso preferred
1 cup ketchup
1/4 cup red wine vinegar
3/4 cup dark brown sugar, firmly packed
1 onion, peeled and chopped, about 1 cup
2 garlic cloves, peeled and crushed
2 tablespoons dark molasses
2 tablespoons hot dry mustard, mixed with 1 tablespoon water
2 tablespoons Worcestershire sauce
2 tablespoons cumin, ground
2 tablespoons chili powder

Steps:

  • Combine all ingredients in a saucepan and simmer over low heat for 20 minutes.
  • Cool, then puree in a blender or food processor until smooth.
  • This can be stored in the refrigerator for up to 2 weeks in a covered container.

  • In a large saucepan over medium–high heat on the stove, warm the oil. Add the onion and cook until tender but not browned, 5 to 7 minutes, stirring occasionally. Add the garlic and cook until fragrant, about 1 minute, stirring constantly to prevent browning. Remove the pan from the heat and slowly pour in the whiskey (beware of any flames!). Return the pan to the heat and cook until the whiskey is almost completely evaporated, about 2 minutes. Stir in the tomato paste until well incorporated. Add the syrup, vinegar, mustard, paprika, hot sauce and pepper. Simmer for 2 to 3 minutes to meld the flavours and thicken the sauce slightly. Remove from the heat and set aside.
  • Lightly brush the steaks on both sides with oil and season evenly with salt and pepper. Allow the steaks to stand at room temperature for 15 to 30 minutes before grilling.
  • Prepare the grill for direct cooking over high heat (230°C to 290°C). If you’re using a charcoal grill, keep a small part of the charcoal grate clear of briquettes as a safety zone of indirect heat.
  • Grill the steaks over direct high heat, with the lid closed, until cooked to your desired doneness, 8 to 10 minutes for medium rare, turning once or twice (if flare-ups occur, move the steaks temporarily over indirect heat). Remove from the grill and let rest for 3 to 5 minutes. Serve warm with the sauce.

  • Bring a large pot of water to a boil; cook pasta until al dente according to package directions. Drain and rinse under cold water. Drizzle with a little olive oil to prevent sticking.
  • In the meantime, saute bacon in a large nonstick skillet over medium heat until crispy, about 10 minutes. With a slotted spoon, transfer to a paper towel lined plate to drain off grease. Wipe out skillet, leaving a little of the bacon grease. Add the ground beef; cook, breaking it up with a wooden spoon, until cooked through and no longer pink, about 3 minutes. Season with the cumin, red pepper flakes, and with a pinch of salt and pepper. Drain off fat. Set aside to cool completely.
  • In an extra large bowl, whisk together the mayonnaise, barbecue sauce, mustard, Worcestershire sauce, and hot chili sauce until combined and smooth. Add in the cooked pasta, bacon, beef, corn, tomatoes, cheese, and scallions; toss to combine and coat.
