- Put onion, zucchini, celery, olives and garlic into a food processor to chop up vegetables to desired size.
- In a large frying pan or pot, warm up the olive oil. Add processed vegetables stirring for 5 minutes.
- Stir in the tomatoes, beans, salt, couscous and Parmesan.
- Spray a 10x10 casserole dish and heat oven to 350 degrees. Spoon mixture into casserole dish and cover with cheddar and bread crumbs. Cover dish with aluminum foil. Bake for 15 minutes. Remove aluminum and continue baking for and additional 15 minutes.

- Combine water and garlic salt in a large saucepan; bring to a boil.
- Remove from heat, and stir in couscous.
- Cover and let stand 5 minutes or until liquid is absorbed.
- Stir in black beans and next 7 ingredients.
- Spoon into a lightly greased 11 x 7 inch baking dish.
- Bake at 350ºF for 25 minutes, or until heated through.
- Sprinkle with sliced green onions.
- Cut spinach into thin strips and serve couscous misture over spinach.

BAKED COUSCOUS WITH SPINACH AND PINE NUTS
Steps:
- Combine the couscous, boiling stock or water, and salt in a large bowl; cover with a plate. Let sit 5 minutes, then fluff with a fork.
- Preheat the oven to 375 degrees. Heat the olive oil in a large skillet over medium heat. Saute the garlic and onion 10 minutes, or until tender. Add the drained tomatoes and cook 10 minutes more, stirring frequently. Stir the tomato mixture into the couscous and mix in the reserved tomato juice, basil, pine nuts, raw spinach, and pepper.
- Spread half the couscous mixture into a 12 by 7 by 2-inch baking dish or other shallow (2 1/2 quart) baking dish. Sprinkle on the cheese, then top with the remaining couscous. Cover the dish with foil and bake 25 minutes, or until hot and bubbly.

- In a medium bowl, mix together the couscous, cilantro, egg, egg yolk, coriander, lemon zest, salt and pepper. Sprinkle the flour over the mixture. Mix until combined.
- In a large nonstick skillet, heat the oil over medium heat. Form 1/4 cupfuls of the mixture into 8 patties. Add 4 of the patties to the pan and cook for 3 to 4 minutes each side until golden. Drain on paper towels. Repeat with the remaining couscous mixture.
- Serve the couscous cakes with mango chutney.
PERFECT COUSCOUS
Couscous isn't a grain, as some people may think - it's actually a type of pasta made from durum wheat and shaped like a grain. The couscous you have in your pantry is most likely instant couscous that's been steamed and dried so it cooks very quickly, for a fast and easy side dish or base for a salad or bowl. Look for whole wheat couscous in your supermarket; it cooks in the same time as the regular variety and has all the virtues of whole wheat pasta. This recipe makes a big batch for make-ahead meal prep but is easily halved.

- Combine the water or broth, olive oil and 1 teaspoon salt in a medium saucepan. Bring to a boil. Stir in the couscous and immediately remove from the heat. Cover and let sit 5 minutes.
- Fluff the couscous thoroughly with a fork (the more you fluff, the more separate and light the grains will be). Season with salt and pepper. - Preheat oven to 400°F.
- Bring 1 cup of broth to a boil in a medium saucepan; gradually stir in uncooked couscous. Remove from heat; cover and let stand 5 minutes. Fluff couscous with fork.
- Heat a large nonstick skillet over medium high heat. Coat pan with cooking spray. Add squash, onions, basil, oregano, and garlic; sauté 3 minutes or until squash is tender. Set aside.
- Combine cheeses; set aside.
- Combine couscous, squash mixture, and half of cheese mixture in a large bowl; stir in remaining broth, egg substitute, salt, and pepper.
- Spoon mixture into an 8x8-inch baking dish that is lightly coated with cooking spray.
- Top with remaining cheese mixture.
- Bake at 400°F for 25 to 35 minutes or until golden. Mine takes 35. Serve warm.

- Pour the boiling water over the couscous.
- Cover, and let it stand.
- Heat the olive oil in a skillet.
- Saute the chopped onion till golden brown.
- Add the green chillies and bell pepper and saute till tender.
- Add the tomatoes and cook till the juices dry.
- Add mustard powder, cumin powder and salt and stir for a minute.
- Remove from the heat and wait for the mixture to cool down.
- Fluff up the couscous with a fork and add the cooked mixture to it, stirring well.
- Add the yoghurt and season with oregano.
- Preheat the oven to 175°F.
- Take handfuls of the couscous mixture and shape into patties.
- Place the patties in a lightly greased baking tray.
- Bake until patties are golden brown and crisp--it took me 12 minutes.

- Place couscous in a heat-proof mixing bowl. Add salt, pepper, cayenne, and olive oil; stir with a spoon until all couscous is coated with oil. Level off to smooth the top and set aside.
- Season chicken on both sides with salt.
- Heat olive oil in a saucepan over high heat. Add chicken and sear for 2 to 3 minutes on one side. Flip and add onions. Sear chicken on second side, while sauteing onions at the same time, for 2 to 3 minutes.
- Remove chicken to a plate and let cool for a few minutes. Cut chicken into 1/2-inch cubes and return to the saucepan.
- Add chicken broth, zucchini, green beans, bell pepper, green onions, paprika, and turmeric to the saucepan. Place over high heat. As soon as it boils, remove from the heat and carefully dump it on top of the couscous; do not stir. Immediately wrap bowl tightly with foil and set a timer for 5 minutes.
- When timer goes off, unwrap foil and toss in parsley. Stir to combine ingredients. Taste and adjust for salt.
- Spoon couscous onto serving plate and garnish with feta cheese, chili flakes, and parsley and a drizzle of olive oil.

- Preheat your grill to a high heat, outdoor or indoor.
- Brush vegetables lightly with olive oil, and place them on the grill. Cook, flipping over occasionally, until just tender.
- While the vegetables are grilling, bring water, salt, 1 tablespoon olive oil, and couscous to boil in a large pot. Once the water has come to a boil, remove the pot from the heat and let it stand 5 minutes. Fluff with a fork when done. Let couscous cool to room temperature.

MOZZARELLA COUSCOUS BAKE
A great couscous bake that uses up ingredients that are past their best, but is just as tasty with fresh ingredients! Great for a quick tea-time or to showcase at a meal with friends.

- Preheat the oven to the highest temperature.
- Gather your ingredients and finely chop the onion, chilli and mushroom. It may help here to have the onion and chilli on a separate chopping board than the mushroom. Peel and chop, or better yet, use a garlic mincer to mince the garlic finely.
- Heat up a frying pan with butter or olive oil and add the onion and chilli. (If it's all on one chpping board you can just throw it in.) Then prepare your couscous and keep it warm whilst continually moving the onion and chilli, you don't want it too dark coloured.
- When the onion is nearly done, add the mushrooms and any spices you may be adding. Then add the garlic and saute until the mushrooms are nearly done.
- Take the pan of the heat and get a small Pyrex bowl. Layer up the couscous, mushroom mix and mozzerella until the top of the bowl. Then add the remaining mozzarella on the top.
- Put the bowl into the oven for around 10 minutes until the top is crispy. Serve with butter, salt or any seasoning's.
