COUNTRY PRIDE ENCHILADAS

Steps:
- Combine soup, water, and spices in a pot, bring to a boil, reduce heat and simmer for 30-45 minutes. Sauce should be like a gravy consistency, but not runny (add up to 1/2 cup more water as needed).
- Brown meat in a skillet. Season to taste with additional chili powder, onion powder, black pepper, and garlic powder. Once the meat is brown drain off fat.
- Heat Oven to 400 degrees.
- Fill tortillas with about 2 heaping tablespoons of seasoned beef and roll, with edges facing down on the bottom baking dish leave a small space between them for sauce.
- Top enchiladas with shredded cheddar cheese.
- Bake 5-10 mins until cheese is melted.
- *** Enchiladas can be topped with shredded lettuce and diced tomatoes. Also, lettuce and tomatoes can be served on the side with thousand island dressing.
