COUNTRY-STYLE MEAT LOAF

Steps:
- Lightly steam onions, celery, and bell peppers and let cool. Place the cooled vegetables into a mixing bowl and add the pork, sirloin, ketchup, eggs, half and half and mix well. Mix in the oatmeal and spice mix. Place the meat into a loaf pan lined with bacon strips. Place in refrigerator overnight so that the meat loaf firms up. When ready for use, remove from the refrigerator; cover the top of the loaf pan with aluminum foil; place in a pre-heated 350 degree oven on top of a roasting pan. Do this to prevent the overspill from making a mess out of your oven and cook until the inside temperature (with a thermometer) reaches 165 degrees (about 1 1/2 hours). 15 minutes before it is done, remove the foil - this will allow the top to brown. Remove from the oven and pour out excess oil and let it sit for 20 minutes. Turn the loaf pan upside down to remove the meatloaf. Slice with a sharp knife.

Like with the "Cranberry Toast" (find recipe in this web site), I found this in the pages of a Better Homes & Gardens magazine. It is delicious and I like to serve with Christmas dinner.

- Combine 11 first ingredients. Add to ground meats, mixing very well. Press mixture into 9" x 5" x 3" pan that has been lightly sprayed with non-stick spray. Cover tightly with foil. Bake at 350 F for 1 1/2 hours.
- Let cool slightly and uncover, pouring off drippings. Cover with foil. Put heavy food cans inside another 9x5x3 pan. Place this pan on top of pate and chill overnight.
- Remove weights and foil Loosen sides if necessary and invert onto serving platter. (Can also be wrapped in plastic wrap and chilled 2 days.) Cut pate into thin slices and serve with "Cranberry Toast.".

- In a dry skillet over medium-low heat, toast the peppercorns for a minute or so, shaking the skillet occasionally. Transfer to a spice or coffee grinder.
- Preheat the oven to 300°F (150°C). Add enough water to a large roasting pan to measure a couple inches deep and slide it in the oven.
- In a small bowl, combine the flour, eggs, cream, and brandy and stir to blend. Stir this into the seasoned ground pork. Stir in any optional ingredients, if desired.
- Line a 1 1/2-quart (1.5-liter) terrine mold or a loaf pan with plastic wrap. If using the bacon to impart a slight smokiness to the pâté, place the slices side by side on the plastic with the ends of the bacon strips hanging over the edges of the mold or pan. Fill the mold or pan with the pâté. If using bacon, fold the ends of the bacon slices over the pâté so they meet on top. Fold the plastic wrap over the pâté.
