I've guessed on cook time here. These are the crunchiest shrimp I've had outside of a restaurant! This makes alot, but if you are going to make these you may as well go all out!! Everyone loves them! These have received so many mixed reviews that I thought maybe I should mention that I deep fry them in a Presto Fry Daddy and not very many at a time. I never said they were easy...and I get better each time I do it. Thanks for giving them so much attention!

2 lbs peeled jumbo shrimp
Crisco shortening, melted in deep fryer (till full by manufacturer standards)
2/3 cup flour
1 1/3 cups cornstarch
1/2 teaspoon salt
1/2 teaspoon baking powder
6 egg whites
2/3 cup water
4 tablespoons vegetable oil
corn flake crumbs

Steps:

  • In a medium bowl, stir flour, cornstarch, salt, baking powder, egg whites, water and oil together with a whisk.
  • Pour out a liberal amount of cornflake crumbs on a dinner plate.
  • Roll each shrimp well into batter mixture and quickly roll in cornflake crumbs.
  • Deep fry shrimp about 7 at a time till golden brown.
  • Drain on paper towels.
  • Serve with cocktail and/or tartar sauce.

1/2 cup all-purpose flour
3 teaspoons sugar
10 pieces peeled raw shrimp
1/2 cup panko
2 cups soybean oil
Sweet and sour chili dipping sauce, such as Mae Ploy brand

Steps:

  • First, mix the flour and 1 cup water together. Then stir in the sugar. Put the shrimp into the batter and thoroughly cover.
  • Remove the shrimp and put into a mixing bowl that contains the panko and cover the shrimp with the panko.
  • Heat the soybean oil in a large, heavy pot to about 350 degrees F. Fry the shrimp until golden brown and crispy, about 4 minutes. Serve with the dipping sauce.

2 Tbsp chives, finely sliced
3 Tbsp red onions, finely diced
1/2 cup mayonnaise
zest from one lemon
1 Tbsp lemon juice
1 Tbsp prepared minced horseradish
2 Tbsp parsley, finely chopped
salt
black pepper

Steps:

  • Bring a large pot of water to a boil and add 1/2 tsp salt. Add shrimp and cook ~ 3-5 minutes or until done.
  • Blanch shrimp in ice cold water to stop the cooking process and make them cooler to handle.
  • Drain water and chop shrimp.
  • Mix all ingredients, except shrimp, in a large bowl. Add chopped shrimp and stir.
  • Add more mayonnaise, salt and pepper to taste. Toss in more horseradish if you like it spicier.
  • Serve cold shrimp salad over lettuce greens, or with crackers, toasted bread, or as a sandwich. Happy Eating! Beckie

⅓ cup flour
¾ teaspoon salt
½ teaspoon black pepper

1 cup Vegetable oil (for deep frying)

Steps:

  • Beat eggs in a medium bowl until frothy. Mix flour, salt and pepper in another medium bowl. Dredge shrimp in flour, shake off excess. Dip shrimp into eggs, then press shrimp into Panko; turn shrimp over and press into Panko again to coat both sides.
  • Pour enough oil into heavy large pot to reach depth of 2 inches; heat to 350 degrees F. Working in batches, add shrimp to hot oil; deep-fry until cooked through, about 1 minute. Using tongs transfer shrimp to paper towels to drain. Arrange shrimp on platter. If desired, serve with Kikkoman Tonkatsu Sauce for dipping.

Hope you all enjoy this cold, light, and refreshing shrimp salad as much as I do! Serve over a bed of butter lettuce or romaine lettuce.

⅓ (16 ounce) package seashell pasta
1 pound cooked shrimp, chilled
½ cup creamy salad dressing (such as Miracle Whip®)
4 stalks celery, diced, or more to taste
½ lemon, juiced
4 scallions, diced, or more to taste
2 tablespoons seafood seasoning (such as Old Bay®), or more to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in pasta and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 10 minutes. Drain and let cool to room temperature, at least 15 minutes.

I stop on the way home from work at the local Chinese restaurant to pick up the fried wonton strips. Don't let the number of ingredients scare you off as it assembles quickly and easily. You can make the dressing ahead of time and store in the refrigerator.

4 cups mixed baby lettuces and spring greens
2 cups Chinese cabbage, shredded
1/4 lb raw shrimp, peeled and deveined
1/4 lb bay scallop, drained
2 teaspoons soy sauce
1 teaspoon olive oil
2 cups wonton skins, strips that are fried
2 tablespoons green onions, minced
1 tablespoon rice wine vinegar
1 tablespoon lemon juice
2 teaspoons soy sauce
1/2 teaspoon ginger
1 teaspoon sugar
1/2 teaspoon white pepper
1/4 teaspoon salt
1/3 cup canola oil

Steps:

  • Combine shrimp and scallops with 2 teaspoons soy sauce and set aside.
  • Combine all dressing ingredients in jar and shake well.
  • Divide wonton strips into two portions and place in bottom of of two serving bowls.
  • Heat non stick skillet on medium high heat. Add 1 teaspoon olive oil or can omit and spray with Pam. Place marinated scallops and shrimp in hot pan and sear until done (this should only be a very short time until shrimp are pink-do NOT overcook). Turn off heat.
  • Toss spring mix and cabbage with dressing. Place on top of wonton strips.
  • Top salad mix with cooked shrimp and scallops.

2 pkg shrimp ramen noodles
12 oz broccoli slaw
1 large red apple, cored and sliced
1 c sunflower kenals
1 c dried cranberries or raisins
1 c almonds, slivered
1/2 to 1 large red bell pepper, chopped
1 bunch green onions, sliced
1 lb salad sized shrimp, shelled, cleaned and devained. (frozen or fresh.)
DRESSING
1/2 c canola or vegetable oil
1/4 c white vinegar
1/4 c sugar

Steps:

  • 1. Open ramen noodle packages. Set aside seasoning packets aside to be used in the dressing. Crumble noodles in a zip lock bag. Remove excess air from bag and set aside at room temperature.
  • 2. Dressing: Add seasoning packets from ramen noodles, oil, vinegar, and sugar to a jar or cruet. Cover and shake well. Set aside.
  • 3. Salad: Combine broccoli slaw, apple, sunflower kernels, cranberries or raisins, almonds, bell pepper and shrimp in a salad bowl. Add dressing. You can refrigerate this and hold for one day if making ahead. Refrigeration also allows flavors to marry.
  • 4. Sprinkle with crumbled noodles at the last moment just before serving. Toss well. Serve and enjoy!

  • To make the tortilla strips, heat the oil in a skillet over medium heat. To see if it's hot enough, put a few water droplets in the oil. If they sizzle, it's ready. Stack the tortillas on top of each other and cut into strips with scissors. Drop the strips in the hot oil and fry until golden on both sides, stirring often. Remove to a paper towel lined tray. Depending on the size of your skillet, you may need to do this in several batches.
  • In a small bowl, whisk together the chili powder, cumin, garlic powder, salt, and black pepper. Sprinkle the shrimp with all but 1 teaspoon of the spice mixture. Heat the oil in a large skillet over medium heat. Add the shrimp and cook for about 2 minutes or until pink. Flip and then cook an additional 1-2 minutes until both sides are pink and opaque. Remove the shrimp to a plate.
  • Toss the black beans with the remaining spice mix. Add it to the skillet and saute for a few minutes until heated through. Remove to the same plate.
  • To make the dressing, place the avocado, sour cream, mayo, jalapeno, and cilantro in a food processor and pulse until smooth. Add the lime juice and the water, a Tablespoon at a time, until desired consistency is reached. Season to taste with salt and pepper.
