1 tablespoon apple cider vinegar
1/2 cup Dijon mustard
1/4 cup coarse-grained Dijon mustard
1 large spiral-cut smoked ham (about 8 pounds)

Steps:

  • Whisk sugar and vinegar in medium bowl until sugar dissolves. Whisk in mustards. Season sauce to taste with salt and pepper. Cover and refrigerate sauce 1 day. (Can be prepared 3 days ahead. Keep refrigerated.) Serve ham with sauce.

Honey & mustard ham hock pie with flaky cheese pastry image

Slow-cooked tender ham, potatoes and shallots are enclosed in cheesy cheddar pastry - invest in a pie plate or tin for a crisp base

2 ham hocks, about 3kg/6lb 8oz in total
4 bay leaves
1 tbsp whole peppercorns
400g potatoes , cut into bite-sized cubes
85g butter
350g shallots
75g plain flour
1 tbsp dried English mustard powder
400ml milk
2 tbsp wholegrain mustard
2 tbsp clear honey
small bunch parsley , chopped
1 egg
green vegetables , to serve (optional)
gravy , to serve (optional)
175g butter , frozen in foil overnight
350g plain flour , plus extra for dusting
1 ½ tbsp English mustard powder
100g mature cheddar

Steps:

  • For the pastry, wrap the butter in foil and place in the freezer the night before you need it. Put the ham hocks, bay leaves and peppercorns in a large pan. Cover with water and a lid, and simmer for 3 hrs or until really tender - you may need to top up the water level during cooking. (Alternatively, cook in a slow cooker for 6-8 hrs.) Leave to cool in the liquid, then chill overnight if you have time.
  • To make the pastry, tip the flour into a big bowl with 1/2 tsp salt and the mustard powder. Hold the butter block in the foil (peeling back a little at a time as you need to) and coarsely grate straight into the bowl of flour, dipping the end of the butter into the flour every so often - this helps to stop all the butter clumping together. Grate in the cheese too. Use a cutlery knife to lightly stir together, then stir in 175-200ml cold water to bring the dough together. Wrap in cling film and chill for 30 mins.
  • Meanwhile, cook the potatoes in a pan of boiling water for 8 mins or until just cooked, then drain. Melt the butter in another large pan and add the shallots. Cook gently for 10-15 mins until tender and golden, shaking the pan now and then to roll them around in the butter. While they cook, drain the ham hocks, reserving the cooking liquid - the meat should be nice and tender. Shred with two forks, discarding the fat and bones.
  • When the shallots are tender, scoop them out of the pan and add to the ham. Add the flour and mustard powder to the butter, stirring around the pan to make a paste. Cook for 1-2 mins, then splash in a little of the milk, stirring until smooth. Continue adding the milk, bit by bit, stirring well after each addition, until you have a very thick, smooth sauce. Add enough of the ham's cooking liquid to thin the sauce to a double cream consistency, about 300ml. Taste and season with pepper - it should be salty enough from the ham stock, but add a little extra if it needs it. Stir in the ham, potatoes, shallots, wholegrain mustard, honey and parsley, then leave to cool.
  • Heat oven to 200C/180C fan/gas 6 and place a baking sheet on the middle shelf to heat up. Remove the pastry from the fridge. Divide into 2 balls, one a little larger than the other - keep the smaller one wrapped until later. On a lightly floured surface, roll out the large ball of dough to the thickness of a £1 coin. Use this to line the base of a 23cm metal pie plate or shallow cake tin. Fill with the pie filling, then brush the edges with a little beaten egg. Roll out the remaining pastry, lay over the top, then trim the excess. Crimp the sides of the pie, if you like. Brush with more egg wash and poke 2 steam holes in the top with a sharp knife. Place the pie on the hot baking sheet and bake for 45-50 mins until crisp and golden. Serve piping hot with green veg and gravy, if you like.

1 whole leg of gammon, smoked or unsmoked, around 5kg weight bone-in
1 cinnamon stick
1 tsp peppercorns
1 tsp coriander seeds
2 bay leaves
about 25 whole cloves
200ml maple syrup
2 tbsp coarse-grain mustard
2 tbsp Worcestershire sauce
2 tbsp soy sauce

Steps:

  • Put the gammon in a very large pan and cover with cold water. Add the spices and bay. Bring to the boil, then turn down and simmer for around 1 hr 50 mins, topping up the water level with boiling water, if necessary. Scoop off any scum that rises to the top every now and then.
  • Carefully pour the liquid away (I like to keep it for making soup), then let the ham cool a little while you heat the oven to 190C/fan 170C/gas 5. Lift the ham into a large roasting tin, then cut away the skin leaving behind an even layer of fat. Score the fat all over in a criss-cross pattern, then stud cloves all over the ham. Can now be chilled for up to 2 days.
  • Mix the glaze ingredients in a jug. Pour half over the fat, roast for 15 mins, then pour over the rest and return to the oven for another 35 mins, basting with the pan juices 3-4 times as it bakes. Turn the pan around a few times during cooking so the fat colours evenly. Remove from the oven and allow to rest for 15 mins before carving. Can be roasted on the day or up to 2 days ahead and served cold.

4 tablespoons all-purpose flour
2 cups whole milk
1 pinch ground nutmeg
1 pinch Salt and pepper to taste
1 (17.5 ounce) package frozen puff pastry, thawed
1 egg, slightly beaten
2 cups grated white Cheddar cheese
12 slices thinly sliced country ham, halved
1 sheet Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat oven to 400 degrees F. In a small saucepan over medium-low heat, melt the butter. Once the butter has melted, whisk in the flour, creating a roux. Allow the roux to cook for 1-2 minutes. Whisk in the milk, nutmeg, salt and pepper. The roux will thicken as it cooks into a bechamel. Once it becomes thick enough to coat the back of a spoon, take off the heat. Set aside.
  • On a lightly floured surface, roll out the thawed puff pastry until 1/8 inch thick. Cut one sheet of puff pastry into 3 equal pieces longwise. Cut each piece in half crosswise, creating 6 equal pieces. Line a baking sheet with a piece of Reynolds Wrap® Aluminum Foil. Place the pastry on the lined baking sheet and brush the edges of the pastry with the egg wash.
  • On one half of the piece of puff pastry, sprinkle 1 tablespoon of cheese and top with a slice of country ham. Spread 1 tablespoon of the bechamel over the ham. Repeat with another layer of cheese and ham, and finish with one tablespoon of bechamel. Fold the remaining half of the pastry over the filling. Crimp with edges with the tines of a fork. Brush the tops with the egg wash. Cut slits on the top of the pastry to allow the steam to escape the hand pie as it bakes. Repeat with the rest of the pastry.
  • Bake the hand pies for 20-25 minutes, or until golden brown on top. Immediately place on a wire rack to cool.

I don't know where the original came from-somewhere down south but I have added more onion, pepper, nutmeg, cayenne and cheese. Also the original called for regular deli ham-holy salt-it just about killed us! So here you go and by the way I like it best cold.

1 large baking potato
1 large onion, chopped fine
3 -4 teaspoons butter
1/4 cup milk
1 egg
1 teaspoon dry mustard

4 cups ground low-salt ham (I buy a 1 1/2 inch slice from the deli-and then another 1/2 inch slice just in case)
1 cup shredded cheddar cheese (I like sharp)
1 pastry for double-crust pie (you want a sturdy crust)
2 teaspoons butter
2 teaspoons flour
1/2 teaspoon white pepper
1/4 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
1 1/4 cups milk
1 1/2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 450 degrees Boil potato-meanwhile cook onion in butter until soft and light brown.
  • In a large bowl beat potato.
  • Add to this the onion, beaten egg, mustard and cloves.
  • Mix well.
  • Fold in ham, 1/2 of the cheese and cheese sauce.
  • At this point taste to see if you need a bit of salt-most likely you won't.
  • Turn into deep pastry lined pie plate.
  • Top with remaining crust, crimp and seal.
  • Bake on the lowest rack at 450 for 10 minutes.
  • Reduce heat to 350 degrees and bake for 30 min.
  • Top crust with remaining cheese and cook for about 15 min more.
  • Remove and let stand for 20 minutes or chill and serve cold.
  • Cheese Sauce Directions Melt butter in a medium saucepan.
  • Stir in flour and spices and cook until bubbly.
  • Remove from heat and gradually stir in milk.
  • Return to heat and cook until thick and bubbly.
  • Stir in cheese and cook until melted.
