This delicious frittata with green peppers, green onions, and smoked ham is drizzled with creamy Philadelphia Cooking Creme, and it's ready to serve in 30 minutes.

1 (270 g) tub PHILADELPHIA Original Cooking Creme Cream Cheese Product, divided
6 large eggs eggs
¼ teaspoon black pepper
2 tablespoons non-hydrogenated margarine
1 green pepper, chopped
4 medium (4-1/8" long)s green onions, sliced
¼ cup chopped smoked ham
½ cup KRAFT Double Cheddar Shredded Cheese

Steps:

  • Heat broiler.
  • Spoon 2 Tbsp. Cooking Creme into small microwaveable bowl; set aside. Whisk remaining Cooking Creme, eggs and black pepper in separate bowl until well blended.
  • Melt margarine in 10-inch ovenproof skillet on medium heat. Add green peppers; cook and stir 5 min. Stir in onions, ham and egg mixture; cover. Cook on medium-low heat 9 to 10 min. or until centre is almost set.
  • Top frittata with cheese. Broil, 6 inches from heat, 2 min. or until centre is set and cheese is melted.
  • Microwave reserved Cooking Creme on HIGH 10 to 12 sec. or until warmed. Drizzle over frittata.

oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
eggs
slices OSCAR MAYER Bacon, cooked, crumbled
cup KRAFT Shredded Mozzarella Cheese, divided
green onions, sliced
lb. portobello mushrooms, coarsely chopped
cloves garlic, minced

Steps:

  • Beat Neufchatel in large bowl with mixer until creamy. Add eggs, 1 at a time, mixing on low speed after each until blended. Stir in bacon, 3/4 cup mozzarella and onions.
  • Spray 10-inch ovenproof nonstick skillet with cooking spray. Add mushrooms and garlic; cook and stir on medium heat 5 min. or until tender. Stir in Neufchatel cheese mixture until blended. Cover with lid. Reduce heat to low; cook 8 to 10 min. or until egg mixture is almost set in center. Uncover; place skillet in oven.
  • Bake 5 min. or until center is set. Remove from oven. Top with remaining mozzarella; cover with lid. Let stand 2 min. Loosen frittata from side of skillet with spatula; slide frittata onto serving plate. Cut into wedges to serve.

2 teaspoons olive oil
1 lb cooked potato, diced small
1/4 cup diced ham
1/4 teaspoon minced garlic
8 eggs
salt and pepper
1/4 cup grated parmesan cheese

Steps:

  • Preheat oven to 350°.
  • In a 12" non stick skillet with oven proof handle, heat olive oil until hot and add the potatoes, ham and garlic.
  • Saute just until browned.
  • In a bowl, whisk eggs and pour over the potato mixture.
  • Season with salt and pepper and cook over medium low heat, occasionally sliding a spatula around the edge of the pan to loosen the frittata as it cooks.
  • When nearly set, sprinkle with cheese and place in oven for 2 to 4 minutes or until evenly set and slightly golden.
  • Note: If you do not have a skillet with an oven proof handle, wrap two layers of aluminum foil over your handle before baking.

1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
1/4 cup milk, divided
6 eggs
1/4 tsp. black pepper
2 Tbsp. butter
1 cup chopped green peppers
4 green onions, sliced
1/4 cup chopped OSCAR MAYER Smoked Ham
1/2 cup KRAFT Shredded Sharp Cheddar Cheese

Steps:

  • Heat oven to 350°F.
  • Mix cream cheese spread and 2 Tbsp. milk until blended. Spoon 1/4 cup cream cheese mixture into small bowl; stir in remaining milk. Reserve for later use.
  • Add eggs and black pepper to remaining cream cheese mixture; whisk until blended. Melt butter in 10-inch ovenproof skillet on medium heat. Add green peppers; cook and stir 5 min. or until crisp-tender. Stir in egg mixture, onions and ham; cover.
  • Bake 20 to 25 min. or until knife inserted in center comes out clean. Sprinkle with cheddar; bake 2 to 3 min. or until melted. Drizzle with reserved cream cheese mixture.

Number Of Ingredients 13

4 eggs
2 tablespoons butter
2 tablespoons cream
2 tablespoons chopped onions
1/4 cup thinly sliced carrot
1 cup beef broth
1/2 tablespoon chopped basil
4 cherry tomatoes, cut in half
4 tablespoons deli ham
1/4 cup mozzarella cheese, cubed
1/4 cup parmesan cheese
salt
pepper

Steps:

  • Preheat oven to broil.
  • Add butter and olive oil to skillet and melt butter over medium low heat.
  • Add onion and carrots and saute adding beef broth to maintain a small amount of liquid in the pan.
  • In separate bowl mix eggs, cream, basil and a small amount of salt and whisk until well combined. Set aside.
  • When onions have become transparent add tomatoes and ham and stir cooking until tomatoes are well done and almost falling apart. Again add beef broth as needed to maintain a small (1/8 inch) amount of liquid in the pan.
  • Turn off heat.
  • In a separate skillet (preferably non stick) add the mozzarella. Whisk the eggs again and add to the mozzarella. Stir keeping the mozzarella evenly distributed around the pan.
  • Add onion mixture from other pan and stir well again remembering to keep the mozzarella evenly distributed.
  • Top with Parmesan and place under broiler for 2-4 minutes watching carefully to make sure it does not burn.
  • Remove from oven. Let rest five minutes and serve.
