This country fried steak recipe was originally my grandmother's, but I thought it was really bland so I added seasoning to it. Serve it with country gravy and mashed potatoes.

1 egg
¼ cup milk
1 cup all-purpose flour
1 (4 ounce) packet saltine crackers, crushed
1 ½ teaspoons seasoned salt
1 ½ teaspoons onion powder
1 ½ teaspoons garlic powder
1 ½ teaspoons Montreal steak seasoning
4 (4 ounce) cube steaks
2 tablespoons vegetable oil

Steps:

  • Whisk together the egg and milk in a shallow bowl; set aside.
  • Whisk together the flour, crushed saltines, seasoned salt, onion powder, garlic powder, and steak seasoning. Dip the steaks in the egg mixture, then press each steak in the flour mixture. Pat the flour mixture into the steaks to coat them completely.
  • Heat oil in a large skillet over medium-high heat, and fry the steaks until they are golden brown, firm, hot in the center, and just turning from pink to grey, about 4 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

2 pounds boneless round steak
Salt
Pepper
Spices (what ever you have available)
Beef tallow or grease
1 quart buttermilk
1 cup flour

Steps:

  • Cut steaks 3/4-inch thick. Pound the steaks with meat tenderizing hammer until about 1/4-inch thick. Season with salt and pepper, to taste, and rub on other spices if you have them.
  • Start heating beef tallow or grease in Dutch oven. Be sure you have enough grease in the pan to cover the steaks (at least 1-inch.) Put the buttermilk in bowl and put the flour on a plate. Wet the steaks in buttermilk and then drag through flour making sure both sides have flour on them. If a thicker crust is wanted, then repeat this procedure again. When grease just begins to smoke, then you are ready to drop in a steak and cook. Cook steak until golden brown on both sides turning steak in grease, if needed. Repeat until all steaks are cooked.

2 cups whole milk, at room temperature
2 large eggs
3 cups all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon hot paprika
Coarse salt and freshly ground black pepper
2 cups canola oil, for frying
2 pounds round steak, tenderized and roughly cut into 5-inch squares (about 8 pieces)
Mashed potatoes, for serving

Steps:

  • Whisk 1/2 cup of the milk and the eggs together in a bowl and set aside. Combine the flour, garlic powder, paprika and some salt and pepper in another bowl and set aside.
  • Heat the oil in a cast-iron skillet over medium-high heat until it reaches 350 degrees F on a deep-fry thermometer. Dip a cutlet into the egg wash, then in the seasoned flour. Return to the egg wash for a quick dip, then immediately add to the heated oil in the skillet. (Be careful, the oil will pop and sizzle.) Repeat without crowding the skillet. Cook until brown, 3 to 5 minutes. Turn and cook an additional 3 minutes. Remove to a plate lined with paper towels and keep warm. Repeat with the remaining ingredients, moderating the heat to maintain medium-high heat.
  • Pour off all but 2 to 3 tablespoons of the cooking oil with the "drippings," the browned bits in the bottom of the skillet. On low heat, add 3 tablespoons of the leftover seasoned flour mixture to the oil and whisk to make a roux. Cook until golden, about 1 minute. Gradually add the remaining 1 1/2 cups milk to the flour mixture while whisking together. Let cook until thickened, about 10 minutes. Taste and adjust for seasoning with salt and pepper.
  • Serve the cutlets with mashed potatoes and the gravy.

8 oz cube steak, 4 steaks, 8 oz (225 g) each
1 ½ teaspoons kosher salt, plus more to taste
1 teaspoon black pepper, plus more to taste
2 large eggs
2 ¾ cups whole milk, divided
1 ½ cups all-purpose flour, divided, plus 3 tablespoons
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 cup vegetable oil
3 tablespoons unsalted butter
½ cup heavy cream

Steps:

  • Preheat the oven to 225˚F (110˚C).
  • Set a steak in the center of a cutting board and cover with a piece of plastic wrap. Using a meat mallet, pound the steak evenly to ¼-inch (½ cm) thick. Season with salt and pepper on both sides. Repeat with the remaining meat.
  • In a wide, shallow dish, whisk together the eggs and 1 cup (240 ml) of milk. In a separate shallow dish, mix together the 1 ½ cups (190 g) of flour, pepper, salt, garlic powder, onion powder, and paprika.
  • Dredge the steaks in the flour mixture, then dip in the egg mixture, letting any excess egg drip off. Coat again in the flour mixture. Set aside for 10-15 minutes, until the coating has dried out a bit.
  • Meanwhile, heat the oil in a 10-inch (25.5 cm) pan over medium-high heat until it reaches 375˚F (190˚C).
  • Fry the steaks, 2 at a time, for 3 minutes, until golden brown and crispy. Flip and cook on the other side for 3 minutes more, until golden brown and cooked through when the internal temperature reaches 155˚-165˚F (170˚-175˚C). Transfer the steaks to a paper towel-lined plate or baking sheet and immediately season with salt. Once all of the steaks are done frying, transfer to the oven while you prepare the gravy.
  • Pour the hot oil into a heatproof bowl and let cool before discarding. 9. Leave any browned bits in the pan.
  • In the same pan, without wiping it out, melt the butter over medium heat. Add the remaining 3 tablespoons of flour, whisking to incorporate. Cook for 2-3 minutes, until the roux is a light brown color. Add the heavy cream and remaining milk. Bring to a simmer and cook, whisking constantly, until thickened, 5-7 minutes. Season with salt and pepper.
  • Ladle the gravy over the steaks and serve with your favorite side dishes.

1 1/2 lbs sirloin steaks ((pinned)( if not pinned use a mallet to tenderize))
1/2 cup flour
salt
fresh pepper, ground
2 tablespoons bacon grease or 2 tablespoons lard (you can use a oil like canola)
2 tablespoons Wondra Flour (or another gravy flour)
2 cups half-and-half
4 tablespoons sweet creamy butter

Steps:

  • Trim visible fat from meat and cut into 4 equal serving pieces.
  • Mix flour, salt, and pepper in a shallow, wide bowl and dredge each piece of meat in it, coating well on both sides.
  • Heat grease or oil until hot but not smoking in a heavy, wide skillet with a lid.
  • Brown the meat pieces on both sides, turn heat down a bit, cover and let steak fry like chicken for 15 to 20 minutes, until done. Remove cover and let steak crisp for about 5 minutes.
  • Take steak from the pan and drain.
  • Leave about 2 Tbsp of drippings and all the browned flecks of crust in the pan.
  • Turn the heat a bit lower, sprinkle Wondra flour int o the drippings and stir to keep from lumping while it browns.
  • Slowly add half and half, stirring.
  • Let it cook until thick, about 3 to 5 minutes.
  • Taste and add seasoning, if needed.
  • Return the steaks to the gravy and cook an additional 5 mins or so.
  • Serve on plate, Mashed potatoes, maybe some green beans with country ham.

This is real Southern comfort food. The buttermilk is an unsual ingredient in gravy but it tenderizes the steak and tastes wonderful. It took me a while before I would first try this recipe because of the buttermilk, but once I did, I was hooked. The gravy doesn't "look" good until the cheese is added but don't let this fool you. This is really a delicious dish and is one that after you have it started, can be left to cook on low with minimal attention.

2 lbs round steaks, cut into serving-size pieces (pound it to get it as thin as possible)
salt and pepper
flour, to dredge steak pieces
1 tablespoon oil
1 large onion, chopped
1 cup water
1 cup buttermilk

  • After pounding steak, season with salt and pepper then dredge in flour.
  • Place oil in a large skillet and heat on medium-high.
  • Brown steak in oil.
  • Add onion and cook until tender.
  • Add water and buttermilk and stir.
  • Lower heat to medium-low and cook steak, covered, until tender, about 1 hour.
  • Stir occasionally.
  • The"gravy" will look as if the buttermilk and water are separating at this point.
  • Do not be concerned.
  • When the cheese is added, everything blends together to make a delicious gravy.
  • Just before serving, add cheese and stir to melt.

1/4 cup cornmeal
1/2 teaspoon salt
1/4 teaspoon pepper

1 large egg white

GRAVY:
1 tablespoon butter
2 tablespoons all-purpose flour
1-1/2 cups 2% milk
1 teaspoon beef bouillon granules
1/2 teaspoon dried marjoram
1/4 teaspoon dried thyme
1/8 teaspoon pepper

Steps:

  • Combine 3 tablespoons flour, cornmeal, salt and pepper; set aside. Coat steaks with remaining flour. Beat egg white and water; dip steaks, then dredge in cornmeal mixture. , In a large skillet, cook two steaks in 1 tablespoon oil over medium-high heat for 5-7 minutes on each side or until crisp, lightly browned and cooked to desired doneness. Remove steaks and keep warm. Repeat with the remaining oil and steaks. , Meanwhile, for gravy, melt butter in a small saucepan; stir in flour until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Reduce heat to medium-low. 1 1/2 lbs cube steaks
1 cup all-purpose flour, plus
3 tablespoons all-purpose flour, divided
1 1/2 teaspoons salt, divided
1 1/4 teaspoons pepper, divided
1 teaspoon paprika
2 1/2 cups milk, divided
3 eggs, beaten
4 tablespoons oil
butter

Steps:

  • Place 1 cup flour, 1/2 cup milk, and eggs in 3 separate shallow bowls in the working area.
  • Mix 1 tsp salt, 1 tsp pepper, and the paprika into the flour and mix well.
  • Season both sides of cube steaks with additional salt and pepper, if desired.
  • Dip cube steaks in milk, then dredge in seasoned flour.
  • Dip floured steaks in egg wash, then again in the seasoned flour.
  • Heat 2 tbsp oil in a large skillet on medium heat and do half the cube steaks at a time, or work with two skillets, if you desire.
  • Brown the cube steaks on each side, about 8-10 minutes total cooking time; remove from heat and set the steaks aside.
  • Drain all but 1 tbsp oil (if any- I don't usually have any, but the steaks are less greasy with less oil) from the pans.
  • Add enough butter to the pan to equal 3 tbsp along with the oil.
  • Melt the butter and add 3 tbsp flour and stir with a whisk to make a roux, deglazing the bottom of the pan, and cook for a few minutes on LOW heat; do not burn.
  • Slowly add the remaining 2 cups milk, and stir or whisk constantly until mixture comes to a boil and thickens; cook for another minute or so and remove from heat.
  • Serve Country Fried Steaks (Chicken Fried Steak, as we call it) with plenty of gravy on top, and mashed potatoes on the side (double gravy recipe if you use a LOT of gravy on your potatoes, etc).

Pound it tender, add a dollop of richly seasoned sauce bright with artichokes and sundried tomatoes, and melt flavorful cheeses on top of it. Don't be afraid of the long instructions - its not difficult. The sauce can be made ahead if you reserve the artichokes until just before serving.

2 lbs round steaks (thin-cut)
1 lb spaghetti
8 ounces shredded mozzarella cheese
1/4 cup grated asiago cheese
olive oil
1 medium onion, chopped
2 tablespoons extra virgin olive oil
2 teaspoons minced garlic
1 (28 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
1 teaspoon basil
1 teaspoon oregano
1 tablespoon italian seasoning
1 teaspoon anchovy paste
2 teaspoons beef base, and
1/2 cup water (or 1/2 cup beef drippings)
2 tablespoons vermouth
8 sun-dried tomatoes, chopped fine
1 dash cayenne chili pepper flakes (optional)

4 -6 fresh mushrooms, sliced and browned in olive oil (optional)
1 1/2 cups flour, divided
1/2 cup milk
1 egg
1 teaspoon italian seasoning

Steps:

  • To prepare sauce: Heat olive oil in a medium saucepan. Saute onions until they start to pick up a bit of color.
  • Reduce heat and add garlic, sautéing just a moment -- until the aroma begins to release.
  • Add remaining sauce ingredients except artichokes and optional mushrooms. Bring to a boil.
  • Simmer gently for 60-90 minutes, stirring occasionally or until flavors are well blended.
  • Add artichokes (and optional mushrooms if desired), and simmer 5 minutes until well heated.
  • Prepare spaghetti according to package directions.
  • To prepare steaks: Cut into about 8 pieces. Pound pieces thin with the toothy side of the meat hammer. Heat oven to 400°F.
  • Put 1/4 cup flour into a wide, shallow dish.
  • Beat egg into milk in another shallow dish.
  • Mix remaining flour with seasonings in another wide, shallow dish.
  • Dip steak pieces into the plain flour, patting it into the dents. Dust off excess.
  • Dip floured steak pieces into the egg-milk mixture.
  • Bread the steaks with the seasoned flour.
  • Heat olive oil in a large skillet. Fry steaks in batches until breading is golden.
  • Arrange steaks in a large baking pan or two smaller ones. Top each steak with a dollop of sauce.
  • Mix asiago and mozzarella cheese together. Spread cheese mixture over the steaks.
  • Put in the oven for 7-12 minutes or until cheese is lightly browned.
  • Serve on a bed of spaghetti with extra sauce available at the table. (If you like your pasta with a lot of sauce on it you might want to make an extra half a batch).
  • I suggest that you complete the meal with a salad of mixed greens with a simple, vinaigrette dressing and a loaf of crusty bread.
