1 can (16 ounce size) tomatoes with juice, cut up
1 tablespoon butter or margarine
1 1/2 teaspoon sugar
1/8 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons flour
3/4 cup milk
1 slice bread, toasted

Steps:

  • Combine tomatoes with juice, butter, sugar and salt in a medium saucepan; heat over medium heat. Stir in baking soda. Combine flour and milk; blend well and stir into hot tomato mixture. Cook, stirring constantly until mixture is thick and bubbly. Break toasted bread into small pieces and add to hot tomato mixture. Serve in sauce dish as a vegetable or over biscuits or toast.

1/2 teaspoon kosher salt
1/8- 1/4 teaspoon coarse black pepper
1 Tablespoon butter, melted
1 Tablespoon flour
1/2 teaspoon sugar (optional)
3 Tablespoons milk
1-2 slices bread, cut into 1/2 inch cubes

Steps:

  • Place tomatoes in a small saucepan. Season with salt and pepper. Bring to a boil over medium heat, then reduce to a simmer.
  • In a small bowl, whisk together the butter and flour until smooth. Add milk and whisk until combined. Stir into the tomatoes.
  • Cook for 1 minute, or until starts to thicken, stirring constantly. Remove from the heat. Fold in the bread cubes. Serve warm.

4 large tomatoes
1 package (8 ounces) cream cheese, softened
1/4 cup minced fresh parsley
1-1/2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
1 garlic clove, minced
1/4 teaspoon salt
1/4 cup all-purpose flour
1 cup panko bread crumbs
1 large egg
1 tablespoon 2% milk
3 tablespoons butter
3 tablespoons olive oil

Steps:

  • Cut each tomato into four thick slices; place on paper towels to drain. Meanwhile, in a small bowl, beat the cream cheese, parsley, basil, garlic and salt until blended. Spread cream cheese mixture over eight tomato slices; top with remaining tomato slices., Place flour and bread crumbs in separate shallow bowls. In another bowl, whisk egg and milk. Coat the top and bottom of each sandwich with flour, dip into egg mixture, then coat with crumbs., In a large skillet, heat butter and oil over medium heat. Fry tomato sandwiches in batches for 3-4 minutes on each side or until golden brown. Drain on paper towels.

This dish is inspired by a recipe in "Roast Chicken and Other Stories." In the book, Simon Hopkinson writes that his version was inspired by Edouard de Pomiane's "Cooking in 10 Minutes." Hopkinson bakes fresh tomatoes in garlicky, minty cream for half an hour. The version below, with canned tomatoes, woody herbs and a hint of cinnamon, is there for you when fresh tomatoes aren't - and, like de Pomiane's approach, takes closer to 10 minutes.

2 fresh thyme or oregano sprigs, or 1 fresh or dried bay leaf
1 cinnamon stick
1 (28-ounce) can whole peeled tomatoes

Steps:

  • In a small saucepan, bring the cream, thyme and cinnamon stick to a simmer over medium-low heat.
  • As cream comes to a simmer, drain the tomatoes (no need to rinse), discarding the juices. Add the whole tomatoes to the saucepan and bring to a simmer, breaking up the tomatoes with a wooden spoon. Cook until the tomatoes are soft and the cream is slightly thickened, about 5 minutes. Season with salt and pepper.
  • To eat, place a slice of toast in a shallow bowl or rimmed plate, and spoon the tomatoes and plenty of cream over the toast. Season with more black pepper, if you like.

I've been eating creamed tomatoes over biscuits or cornbread my entire life. It's so yummy! For those who've never had it, it tastes similar to creamy tomato soup, but it's thicker. I grew up in rural West Virginia, and everyone always called it creamed tomatoes, but a few years ago, I found out that some people call it tomato gravy. Either way, it's the same thing. My hubby also likes to pour it over his fried or mashed potatoes! I hope you enjoy it. It's always been one of those down home comfort foods for me! Serve with homemade biscuits. 1 quart canned tomato (or juice if you don't like chunks)
2 tablespoons butter or 2 tablespoons margarine
1 cup milk
2 tablespoons all-purpose flour
salt
pepper
sugar

Steps:

  • Pour tomatoes in a saucepan or skillet.
  • Add butter.
  • Simmer over medium heat about 15 minutes, or until tomatoes are tender. (If using juice, then just bring it up to a simmer, and continue.).
  • After tomatoes are tender, mix your flour and milk in a bowl until smooth, and add to tomatoes, stirring well.
  • Add salt, pepper, and sugar to taste.
  • If it's too thick, add a little more milk. If it's too thin, either simmer on low until it's the desired thickness, or mix up a bit more flour and milk and add to your tomatoes.
  • That's it! Serve over homemade biscuits, cornbread, potatoes, or whatever you like!

The offered this today and I was interested as this is a dish I grew up with (see Recipe #451594). This is different from my family's recipe. This one appears creamier as it uses half and half to make a sauce.

1 lb elbow macaroni (see note)
28 ounces diced tomatoes
6 tablespoons butter
1/2 cup all-purpose flour
1/4 teaspoon cayenne pepper
4 cups half-and-half
1 cup low sodium chicken broth
4 cups shredded mild cheddar cheese
2 cups shredded sharp cheddar cheese

Steps:

  • COOK MACARONI Adjust oven to middle position and heat oven to 400 degrees. Bring 4 quarts water to boil in large Dutch oven over high heat. Stir in 1 tablespoon salt and macaroni and cook until just al dente, about 6 minutes. Drain pasta and return to pot. Pour diced tomatoes with their juices over pasta and stir to coat. Cook over medium-high heat, stirring occasionally, until most of liquid is absorbed, about 5 minutes. Set aside.
  • MAKE SAUCE Meanwhile, melt butter in medium saucepan over medium heat until foaming. Stir in flour and cayenne and cook until golden, about 1 minute. Slowly whisk in half-and-half and broth until smooth. Bring to boil, reduce heat to medium, and simmer, stirring occasionally, until mixture is slightly thickened, about 15 minutes. Off heat, whisk in cheeses, 1 teaspoon salt, and 1 teaspoon pepper until cheeses melt. Pour sauce over macaroni and stir to combine.
  • BAKE MACARONI AND CHEESE Scrape mixture into 13 by 9-inch baking dish set in rimmed baking sheet and bake until top begins to brown, 15 to 20 minutes. Let sit for 10 to 15 minutes before serving.
  • MAKE AHEAD: Macaroni and cheese can be made in advance through step 2. Scrape mixture into 13 by 9-inch baking dish, cool, lay plastic wrap directly on surface of pasta, and refrigerate for up to 2 days. When ready to bake, remove plastic wrap, cover with foil, and bake for 30 minutes. Uncover and bake until top is golden brown, about 15 minutes. Let sit for 10 to 15 minutes before serving.

Steps:

  • In a large skillet, saute onions in butter for 2-3 minutes or until tender. Stir in the corn; cover and cook for 4-5 minutes or until heated through., Meanwhile, in a small bowl, combine the cornstarch, cream, water, salt and pepper until smooth. Gradually stir into corn mixture. Bring to a boil. Cook, uncovered, for 2 minutes or until thickened. Stir in tomatoes.

6 tomatoes
lump of butter
salt
3 oz (80 grams) cream

Steps:

  • Cut the tomatoes in halves.
  • In a frying pan melt a lump of butter. Put in the tomatoes, cut side downward. With a sharply pointed knife, puncture the rounded sides of the tomatoes here and there. Let them heat for five minutes, then turn them over. Sprinkle with salt.
  • Cook them for another 10 minutes. Turn them again. The juices run out and spread into the pan. Once more, turn the tomatoes cut side upward. Put about 3 ounces of thick cream around them in the pan, mixing it with the juices. As soon as it bubbles, slip the tomatoes and all their sauces onto a hot dish.
  • Serve instantly.

3 tablespoons butter
2 tablespoons finely chopped shallots
2 tablespoons white-wine vinegar
2 tablespoons dry white wine
1 cup drained canned tomatoes, chopped
1 cup heavy cream
Salt to taste, if desired
Freshly ground pepper to taste

Steps:

  • Heat one tablespoon of the butter in a saucepan and add the shallots. Cook briefly, stirring, and add the vinegar and wine and cook until the liquid is almost reduced.
  • Add the tomatoes and cook over relatively high heat, stirring, about three minutes.
  • Add the cream and bring to the boil. Pour the mixture into the container of a food processor or electric blender and blend thoroughly.
  • Line a saucepan with a sieve and pour the sauce into it. Strain the sauce, pressing with the back of a wooden spoon to push most of the solids through. Add salt and pepper.
  • Bring the sauce to the boil and swirl in the remaining two tablespoons of butter.
