A delicious family recipe! This easy meatloaf has a flavorful stuffing filling and is topped with a mouthwatering tomato sauce and bacon.

2 eggs
2 lb ground beef
1 tsp salt
1/4 tsp pepper
1 cup evaporated milk
1 tsp Worchestershire sauce
2 cups Stovetop stuffing mix, uncooked
1/2 cup tomato soup
3 strips bacon, uncooked

Steps:

  • Preheat oven to 350F. Grease a loaf pan.
  • In a large bowl, mix together ground beef, salt, eggs, pepper, evaporated milk and Worcestershire sauce. Spread 1/2 mixture into loaf pan.
  • Spread stuffing mix on top of meat mixture in loaf pan. Top with remaining meat mixture.
  • Spread tomato soup on top. Place strips of bacon on top of tomato soup.
  • Bake for 1 hour.

The recipe comes from the Sunset Ground Beef Cookbook 1968 and has been one of our all-time favorite meatloaf recipes because of the taste as well as how quickly everything is put together and baked. To up the taste I have included 1 clove of garlic minced. It's a very light textured meatloaf in a shallow pan instead of the typical loaf pan style. I am mostly putting this recipe here for safekeeping since my book is getting more and more stained after 4 decades of use. I normally eat this meatloaf with a side of ketchup and I suppose I should come up with a topping that goes on before Parmesan cheese but haven't done that yet. There is already a very similar recipe posted on zaar that uses a microwave to cook the meat.

1 lb ground beef
1 cup cottage cheese
1 egg
1/2 cup quick-cooking rolled oats
1/4 cup ketchup
1 tablespoon prepared yellow mustard
2 tablespoons onions, minced
1 garlic clove, minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/8 teaspoon pepper
1/3 cup parmesan cheese

Steps:

  • Combine all ingredients except the Parmesan cheese until well blended.
  • Press the mixture into a shallow baking pan about 8 inch square.
  • Baked in a 350 degrees F oven for 20 minutes. Remove from oven and sprinkle the Parmesan cheese evenly over the top.
  • Return to the oven and continue to bake for 15-18 minutes longer. Let stand for about 5 minutes before cutting in squares to serve.

1 1/2 lbs ground beef
1/2 cup tomato ketchup
3/4 cup tomato juice
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon crushed red pepper flakes
2 eggs, beaten
1/4 cup onion, chopped
1 tablespoon italian seasoning
2 teaspoons prepared mustard
1 tablespoon liquid smoke
1 tablespoon Worcestershire sauce
3/4 cup fresh breadcrumb
1/4 cup long grain rice
1/4 cup tomato ketchup
1/2 teaspoon prepared mustard
3 teaspoons brown sugar

Steps:

  • In a large bowl, combine first 12 ingredients. Mix until thoroughly blended.
  • Add bread crumbs and rice. Mix again.
  • Line a 9 x 5 in loaf pan with foil. Press in beef mixture and shape.
  • In a seperate bowl mix topping ingredients, mixing well. Spread over top of meatloaf.
  • Bake 400 degrees for 45 minutes or until done.
  • Drain off fat. Let meatloaf rest for 5 minutes before serving.

1 ½ pounds lean ground beef
½ cup ketchup
⅓ cup tomato juice
½ teaspoon salt
½ teaspoon ground black pepper
⅛ teaspoon crushed red pepper

¾ cup fresh bread crumbs
¼ cup diced onion
2 teaspoons prepared mustard
½ cup ketchup
1 teaspoon prepared mustard
4 teaspoons brown sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a 9x5-inch loaf pan with aluminum foil.
  • In a large bowl, combine ground beef, ketchup, tomato juice, salt, pepper, red pepper, eggs, bread crumbs, onion, and mustard for meatloaf until well mixed. Press meat mixture into the prepared pan.
  • In a separate bowl, combine ketchup, mustard, and brown sugar for topping until smooth. Spread brown sugar mixture over meatloaf.

1 1/2 medium onions, finely chopped
1 bell pepper, finely chopped
1/2 c. ketchup
1/2 c. country Dijon
3/4 c. unseasoned dried breadcrumbs
3 large eggs
1 tbsp. Worcestershire sauce
1/2 tsp. dried oregano
1/2 tsp. dried thyme
Kosher salt and freshly ground black pepper
2 lb. 80% lean ground beef
For Topping
1/4 c. ketchup
1 tbsp. Worcestershire sauce
2 tbsp. brown sugar
4 to 5 slices bacon, halved crosswise

Steps:

  • Make meatloaf: Preheat oven to 400ºF. Line a large rimmed baking sheet with foil. Combine onions, pepper, ketchup, mustard, breadcrumbs, eggs, Worcestershire, oregano, and thyme in a bowl. Season with salt and pepper. Gently mix in beef with your hands, being careful not to overmix. (It should be soft but hold its shape.) Transfer meat to prepared baking sheet and shape into a 10-by-5-inch loaf.
  • Make topping: Combine ketchup, Worcestershire, and brown sugar in a bowl. Brush meatloaf with 3 tablespoons topping. Place bacon crosswise over top of meatloaf and cover with remaining glaze. Bake 15 minutes. Reduce oven temperature to 350°F and bake until an instant-read thermometer reaches 160°F, 35 to 40 minutes. Let rest 15 minutes before serving.

1/2 cup ketchup
1/3 cup tomato juice

2 teaspoons prepared mustard

Steps:

  • Set oven to 350 degrees.
  • In large bowl combine 1/2 cup ketchup, tomato juice, salt, black and red peppers, eggs, bread crumbs, onions and mustard. Mix until thoroughly blended.
  • Add ground beef. Mix gently but thoroughly.
  • Line a 9 x 5 inch loaf pan with foil. Press in the beef mixture.
  • In a separate bowl, mix brown sugar, 2/3 cup ketchup, ginger, soy sauce and mustard. Spread over top of loaf.
  • Bake for 45 minutes or until done.
  • Drain off fat. Rest meat loaf 5 minutes before serving.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a loaf pan.
  • In a large bowl, combine cottage cheese, eggs, vegetable oil, soup mix, walnuts, cereal and onion.
