Quick, very easy dip. Great for parties. Also good as a sandwich spread. For healtier version use low-fat cheese.

1 (24 ounce) carton large curd cottage cheese
1/2 cup cream cheese, at room temperature
1 teaspoon prepared horseradish
1/2 garlic clove, sauteed
1 (4 g) envelope beef bouillon
1 pinch pepper
1/3 cup milk
crackers or assorted fresh vegetable

Steps:

  • Blend all ingredients until smooth (add a little more milk if a thinner consistency is desired) and chill (about 2 hours).

This spread is great in pita pockets and is also yummy in a good whole grain bread. I got this from Vegetarian Times Cookbook. A little Spanish influence, a little Indian and some Southwest!

2 cups low fat cottage cheese
2 scallions, green and white parts, sliced thinly
2/3 cup finely chopped green bell pepper
2/3 cup finely chopped red bell pepper (I added a little yellow pepper too)
1 tablespoon minced fresh basil leaf
1 tablespoon minced jalapeno pepper
1 teaspoon dried dill
1 teaspoon curry powder
1 teaspoon salt (to taste)
fresh ground black pepper
2 teaspoons rice vinegar
1 teaspoon minced garlic

Steps:

  • Combine all the ingredients in a bowl and mix well.
  • Enjoy!
  • I grated a little carrot into the mix and made it even healthier!

Cheese spread that is great for parties as a cracker spread or as a veggie dip! Cook time is actually time to refrigerate!!!

Number Of Ingredients 7

1 cup large-curd cottage cheese or 1 cup Liptauer cheese
1 cup butter or 1 cup cream cheese, at room temperature
2 tablespoons anchovy paste
2 tablespoons prepared mustard
4 tablespoons grated onions
1 tablespoon Hungarian paprika
2 teaspoons caraway seeds

Steps:

  • Combine large-curd cottage cheese OR lipto cheese and butter OR cream cheese in food processor.
  • Add anchovy paste, mustard, onion, caraway seeds and paprika.
  • Process, turning machine off twice during processing to scrape down sides, for 1 minute until smooth.
  • Transfer sread to a small bowl, cover, and refrigerate for at least 24 hours to allow flavor to develop.
  • Serve as a spread for crackers or as a dip for raw veggies such as carrots, celery and zucchini sticks!
  • ENJOY!

This recipe came from a family cookbook of a close friend from Manitoba. The recipe is obviously intended for large quantities so it will need to be halved (or more) for individual use. Excellent spread on Easter Bread.

3 1/2 lbs cottage cheese
1 1/2 lbs butter or 1 1/2 lbs margarine
1 1/2 lbs white sugar (approx. 3 1/2 cups)
10 grated hard boiled egg yolks
1 1/2 cups cereal cream or 1 1/2 cups half-and-half cream
1 teaspoon vanilla

Steps:

  • Cream cottage cheese, butter and sugar together.
  • Beat until fluffy and add the grated egg yolks.
  • Heat cream with vanilla in a small pot over medium heat just until bubbles appear. Don't boil.
  • Add all at once to cottage cheese mixture; mix well.
  • For a smoother spread, process small portions at a time in blender.
  • Turn into freezer container.
  • To use within a week or two, refrigerate.

This is a recipe I developed to copy a tasty dip that came from our favorite local mexican restaurant when my husband and I were in college at Michigan State University. It's pretty close to the real thing! A very simple and easy dip to serve with tortilla chips and salsa.

1/2 cup sour cream
1/2 cup monterey jack cheese, grated
2 green onions, sliced thinly
2 -3 cloves fresh garlic, minced
1/4 teaspoon cumin (optional)
black pepper

Steps:

  • Mix all above ingredients together in a medium sized bowl.
  • For best results, use regular cottage cheese and sour cream, rather than reduced fat.
  • This will help form a thicker dip.
  • Enjoy!
