VEGETARIAN COTTAGE CHEESE PATTIES
Delicious addition to any menu. Don't be scared of the name. I hate cottage cheese but love these.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Beat eggs into a large bowl. Stir in cottage cheese, rolled oats, wheat germ, dry onion soup mix, and dried thyme. Form into 8 patties.
- Heat oil in a skillet over medium heat. Place patties in oil, and brown on both sides. Remove patties to a 9x13-inch baking dish.
- Pour condensed soup into a small bowl. Stir in 1/2 can of water (or milk) to dilute, then pour over patties.
- Bake in a preheated oven until the soup is bubbly, about 20 minutes.

VEGETARIAN COTTAGE CHEESE PATTIES
I got this recipe from a church cookbook that was compiled by the ladies of the church using their favorite family recipes. I make it often and my family loves it. It is a break from the usual vegetarian loaf recipes and easier to take to potlucks etc. You can take the sauce with you in a tupperware container and add it just before you put it in the oven. I recently tried this a different way with the sauce and it was delicious. I sliced about 5 very large white button mushrooms, finely diced half a large onion and then sautéed them together until cooked down and soft. Then, I drained them on paper towels. After that, I folded them into the soup/sour cream/ milk mixture. Then, poured it all over the top of the fried patties. Baked for 30 minutes. So good. We liked them this way so much better than the regular way.

Steps:
- Preheat oven to 350.
- Dice onions finely and grind nuts in blender or food processor.
- Beat eggs into a large bowl.then stir in cottage cheese, oats, wheat germ, dry onion soup mix, italian seasoning, nuts and onions.
- Form into patties and fry in heated skillet in oil until brown on both sides.
- Place patties in 9x13 baking dish.
- Mix soup, sour cream and 1/2 soup can of water or milk then pour over patties.
- Bake until hot and bubbly about 30 minutes.
- Let stand 5 minutes before serving.
MAC ATTACK
Steps:
- Boil the pasta until cooked, 10 to 12 minutes. Drain out the water and place the pasta back into the pot. Take the sliced cheeses and cube them.
- In a separate saucepan, fry the onions in the butter until translucent and soft. Add the flour and whisk repeatedly, making a roux, until the mixture is golden brown. Add in the milk and let simmer, stirring occasionally so it does not burn or stick, until the sauce thickens. When the sauce starts to thicken, add in the American, Cheddar, Romano and 4 ounces of the Cheddar Jack. Stir until the cheeses melt and make a thick cheese sauce. Stir in the salt and black pepper, and pour the sauce over the pasta. Add the hot sauce, and mix thoroughly until the pasta is completely coated. Place in the refrigerator and let cool.
- Shape the beef into 4 patties. (Sprinkle with salt and pepper if you wish.) In a fry pan or skillet over medium-high heat, cook the burgers to your desired doneness.
- In a separate fry pan, make four 4-ounce portions of the mac and cheese, placing them flat in the pan, like little mac and cheese pancakes. Warm them up and cover them with the remaining Cheddar Jack. The cheese should melt and become crispy on the bottom. Using a spatula, place the mac and cheese discs on top of the burgers, and then top with 2 strips of bacon on each. Put the burgers on the buns and enjoy your very own Mac Attack!

- In small frying pan, heat 1 tablespoon of the oil.
- Add onion, cover, and cook over low heat for 4 minutes.
- Combine beef and egg, mixing well.
- To beef mixture, add cooked onion, parsley, Worcestershire and Tabasco sauces and mix well.
- Shape mixture into 4 large patties, scoring each with a knife.
- Heat remaining tablespoon of oil in large frying pan. When hot, add meat patties and cook 10 to 12 minutes over medium heat. Turn 4 times during cooking, and once seared, season well.

COTTAGE CHEESE BREAD
just a little something different. prep time doesn't include rising time. In the directions I didn't specify kneading. there are 2 schools of thought on this subject. I leave that up to your personal preference. I knead this type of bread but i've know people who don't. As long as the bread gets a good double in size rise you should have good results. You can either use dried herbs or fresh. I prefer fresh but have had good results with the dried. Just remember dried herbs tend to have a more concentrated flavor so you may what to cut back on the amount a bit if using dried herbs.

- soften yeast in warm water.
- bring butter, cheese and egg to room temperature mix all ingredients except flour. add yeast to this mixture and mix well.
- gradually add enough flour to make a firm dough.
- cover and let rise 1 hr or until doubled.
- punch down and put in a well buttered 1 1/2 qt casserole. cover and let rise 30 minutes.
- bake at 350 degrees F for about 40 minutes.
- turn out and brush with butter and sprinkle with coarse salt. serve warm or cold.
