QUICK COTTAGE CHEESE BUNS



Quick Cottage Cheese Buns image

Quick Cottage Cheese Buns are light in texture, quick to prepare (only 30 minutes of prep!) and so delicious. You will be in love with these buns at first bite.

1 1/2 cup cottage cheese ((small curd, full fat))
4 eggs
1/2 tbsp vanilla extract
1/2 cup sugar
1/2 tbsp baking powder
1 tsp baking soda
1/2 tbsp white vinegar
4 cup flour
1 egg ((to brush the tops))
1/4 cup sugar ((to sprinkle to tops))

Steps:

  • Combine together cottage cheese, sugar, eggs and vanilla extract. Blend using a blender, mixer or a food processor.
  • In a small bowl, combine baking soda with vinegar and add to the mixture. Continue by adding baking powder and flour.
  • Flour the work area well, as the dough will turn out sticky. Divide the dough into 24 equal pieces.
  • Form round shapes out of each piece, placing them apart on a baking sheet. Brush the tops with egg and sprinkle some sugar.
  • Bake buns at 350 °F for 20 minutes until they become golden brown. Let them cool to room temperature before serving. Keep the remaining portion fresh, by sealing them in an airtight container.

I saw a recipe calling for these three foods stacked together for breakfast.I decided this would be the perfect ingredients for a quick breakfast bread since my family would not find cottage cheese appealing for breakfast.There is plenty of energy producing nutrients in this bread or muffins. I blend the cottage cheese first so it is not lumpy.

2 cups cottage cheese, blended
2 eggs
1/3 cup vegetable oil
1 cup dried apricot, diced
2 cups all-bran cereal or 2 cups Special K cereal
2 cups flour
3/4 cup brown sugar
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon vanilla
Pam cooking spray

Steps:

  • In medium bowl mix the wet ingredients together. Set aside.
  • In large mixing bowl mix the dry ingredients together.
  • Add the wet ingredients into the dry. Fold in gently.
  • Add the vanilla and fold in gently.
  • Preheat oven 375°F.
  • Spray Pam in glass baking pan or bread pan.
  • Gently pour and spread into pan.
  • You can spray Pam in muffin pans and fill 1/2 to 3/4 full.
  • Bake 30 to 35 minutes or until top springs back when pressed with a finger tip ans sides start pull away from pan.
  • Muffins have shorter baking time, when top start to turn brown and the tops springs back when pressed with a finger tip. Do not overbake muffin, they will be chewy.
  • Note: I prefer to use Special K Cereal, your choice. I have never used the Special K Cereal with the Strawberries in it but I think you could use it along with the apricots.

1 1/2 cups Miller wheat bran or wheat germ (available at natural foods stores and some supermarkets)
2 1/2 cups whole-wheat flour
1 teaspoon salt
1 1/2 teaspoons baking soda
1/4 cup firmly packed dark brown sugar
2 cups buttermilk
1/2 cup unsulfured molasses
1/2 cup raisins if desired

Steps:

  • In a bowl combine the bran, the flour, the salt, the baking soda, and the brown sugar. In another bowl stir together the buttermilk and the molasses, stir the mixture into the flour mixture until the batter is combined well, and stir in the raisins. Spoon the batter into a lightly greased loaf pan, 8 by 4 by 3 inches, and bake it in the middle of a preheated 350°F. oven for 1 hour to 1 hour and 10 minutes, or until the bread sounds hollow when tapped. Let the bread cool in the pan on a rack for 15 minutes, invert it onto the rack, and let it cool completely.

just a little something different. prep time doesn't include rising time. In the directions I didn't specify kneading. there are 2 schools of thought on this subject. I leave that up to your personal preference. I knead this type of bread but i've know people who don't. As long as the bread gets a good double in size rise you should have good results. You can either use dried herbs or fresh. I prefer fresh but have had good results with the dried. Just remember dried herbs tend to have a more concentrated flavor so you may what to cut back on the amount a bit if using dried herbs.

1/4 ounce dry active yeast
1/4 cup warm water
2 teaspoons chives, minced
1 tablespoon butter, softened
1 teaspoon salt
1 teaspoon oregano
1 cup cottage cheese, small curd
2 tablespoons sugar
1 egg
2 -3 cups flour, sifted

Steps:

  • soften yeast in warm water.
  • bring butter, cheese and egg to room temperature mix all ingredients except flour. add yeast to this mixture and mix well.
  • gradually add enough flour to make a firm dough.
  • cover and let rise 1 hr or until doubled.
  • punch down and put in a well buttered 1 1/2 qt casserole. cover and let rise 30 minutes.
  • bake at 350 degrees F for about 40 minutes.
  • turn out and brush with butter and sprinkle with coarse salt. serve warm or cold.
