- Mix first 9 ingredients; toss with shrimp. Let stand 15 minutes., Thread shrimp and lime slices onto 4 metal or soaked wooden skewers. Grill, covered, over medium heat until shrimp turn pink, 2-4 minutes per side.

CILANTRO LIME MARINADE
This marinade is great for grilled chicken but you could try it with pork or fish also.

- 1. Place marinade ingredients in a blender and puree until smooth. Add marinade and chicken to a large Ziploc bag. Refrigerate for 6-8 hours, turning occasionally. Remove chicken and discard marinade. Grill over medium heat for 5-7 minutes on each side.
- 2. These are the wraps I made with the grilled chicken. I sliced the breasts, topped them with a black bean and corn salsa, and spooned a cumin sour cream sauce on top. Wrapped it all up in a flour tortilla. Yum!
CHICKEN STREET TACOS - COSTCO COPYCAT

- Place marinade ingredients into a resealable gallon sized bag, and squish around to mix. Add chicken. Marinate for at least 30 minutes but up to 24 hours.
- Brush grill pan with oil, then turn heat to high. Once grill is hot, place chicken onto grill pan and cook on each side until color and grill marks develop. Meanwhile heat oven to 375 degrees F and line a baking sheet with aluminum foil.
- Transfer chicken to foil-lined baking sheet and bake for 15-20 minutes until cooked through and chicken has reached an internal temperature of at least 165 degrees F.
- When chicken is done, remove from oven and transfer to a cutting board/mat to rest for 5 to 10 minutes.
- Chop chicken into bite-sized pieces.
- Heat a skillet over medium heat.
- Spray each side of the tortillas with Canola or olive oil spray.
- Add tortillas to the skillet in a single layer, as many will fit at once (typically 3 depending on the size of the skillet).
- Heat until warm on one side, flip, and heat until warm on the other side, then transfer to a plate until ready to serve.
- Set out chicken, tortillas, cheese, slaw mix, salsa, any other toppings you prefer, and crema in individual dishes for a build-your-own taco experience.

- In a food processor or blender, add cilantro (whole and with stems), lime juice, garlic, olive oil, cumin, salt, cayenne and black pepper. Process until marinade forms, pausing and scraping the walls.
- Add chicken in a medium bowl and poke with a fork randomly. This will allow marinade to penetrate the meat. Pour marinade on top and toss with a fork to coat well. Cover and refrigerate for 30 mins - 48 hours. The longer you marinate, deeper the flavor, but even after 30 mins cilantro chicken tastes awesome.
- To pan fry (pictured): Preheat large ceramic non-stick skillet on medium heat and swirl a bit of avocado oil to coat. Add as many chicken breasts as fit, cover and cook for 5-6 minutes. Flip and cook for another 5-6 minutes or until the thickest part juices run clear when poked with a knife or fork. Discard marinade.
- To grill: Preheat grill on medium-high (450-500 degrees F) and rub with oiled paper towel. Place chicken on the grill, close the lid and grill for 8-10 minutes turning once. Do not overcook. Discard marinade.
- To bake: Preheat oven to 450 degrees F. Rub bottom of large baking dish with oil and lay chicken breasts in a single layer. Bake uncovered for 25 minutes (thinner) to 35 minutes (2″+) or until 150 degrees F internal temperature. Discard marinade.
- For all methods: Make sure you let chicken rest. Remove from heat and cover dish with tin foil, silicone lid or paper towel. Let rest for 5 minutes. This step helps juices to settle back into the meat.

QUICK AND EASY CILANTRO LIME MARINADE

- Combine all the ingredients in a food processor for less than one minute or until the texture is nice and chunky. Be sure the garlic is fully processed. If you don't have a food processor you can make the marinade by dicing the cilantro, jalapenos and garlic very lightly and then mix the ingredients in a bowl with a fork.
- For a less spicy version, remove the inside of the jalapeno and wash it under cold water and be sure not to get any of it in your eyes. Store the marinade in the fridge for up to one week.
COSTCO CILANTRO LIME SHRIMP (COPYCAT RECIPE)
The cilantro and lime are combined with butter to produce a gorgeous, silky dressing, and together with the shrimps, it makes an excellent snack or starter when paired with pasta, rice, tacos, or tortillas.

- Using a paper kitchen towel, dab the shrimp dry, add ¼ teaspoon of salt, and a few fresh ground black pepper twists.
- Take your Microplane and peel off some lime zest, and are set to one side. Using a paring knife, cut the strips of zest in half lengthwise.
- Preheat your skillet on the stovetop and add a tablespoon of butter. Set two more tablespoons of butter aside for use later.
- With the butter bubbling gently over medium heat, add the chopped garlic and cilantro. Cook for less than a minute, gently stirring all the time.
- Add the shrimp, taking care not to stack them too much. Cook them for about one minute, stirring gently every few seconds to ensure that each shrimp cooks until all have turned pink. Note: You can try to cook in batches if needed to avoid over-crowding.
- The chopped scallions are optional, but if you wish to use them, now is the time to put them into the skillet together with the lime zest.
- Season with dried basil leaves (or your favorite seasonings). Give a quick stir to ensure that everything is coated in the sauce and cooked evenly.
- When done, slide the skillet gently off the stovetop.
- Keeping the skillet off the heat all the time, quickly add in the fresh chopped cilantro, the lime juice, and the two tablespoons of the butter you set aside earlier. Don't forget to add the lime zest.
- Your skillet will retain the heat long enough to melt the butter as you stir the contents of the pan to amalgamate everything, creating a delicious, silky, buttery sauce.
- Season to taste and serve with some wedges of lime and a sprinkling of fresh cilantro.
