5 cloves garlic, smashed
Kosher salt
4 Yukon gold potatoes, cut into a medium dice
Olive oil
1/2 Spanish onion, cut into a small dice
1 pinch crushed red pepper
Splash of chicken stock, as needed
1 bunch fresh chives, finely sliced

Steps:

  • Add 3 cloves of smashed garlic, a few large pinches of salt and potatoes to a large pot and cover with cold water. Bring to a boil over high heat and cook until potatoes are just tender, about 10 minutes. Drain potatoes and discard the garlic. Transfer the potatoes to a sheet tray lined with a clean dish towel to dry slightly.
  • Add enough oil to coat the bottom of a large skillet and heat over medium heat. Add the onion and cook, stirring, until just translucent, about 5 minutes. Add the crushed red pepper and the remaining 2 cloves garlic and cook, stirring, until soft and tender, about 3 minutes. Increase the heat to medium-high and add the cooked potatoes. Cook, stirring frequently, until the potatoes start to get crispy and golden brown on all sides, about 5 minutes. (If the potatoes get too dry, add the chicken stock.) Remove from the heat and stir in the chives.

2 garnet yams, peeled and cut into 1/2-inch dice
Extra-virgin olive oil
Kosher salt
4 to 6 slices thick cut bacon, cut into lardons
1 large onion, cut in 1/2-inch dice
2 Granny Smith apples, cored and cut into 1/2-inch dice
4 scallions, white and green parts separated and thinly sliced
1/2 cup green pumpkin seeds (pepitas), toasted

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, add the sweet potatoes, drizzle with olive oil and sprinkle with salt, to taste. Toss to coat and arrange them on a baking sheet. Roast the sweet potatoes until they are soft but not mushy, about 10 to 15 minutes. Remove from the oven and reserve.
  • Coat a large saute pan with olive oil. Add the bacon and put the pan over medium heat. When the bacon has started to get crispy and brown, add the onions, season with salt and saute until the onions are very soft and aromatic. Add the apples and the scallion whites and saute for 3 to 4 minutes. Stir in the sweet potatoes, and saute until the sweet potatoes are cooked through and starting to become crispy, about 7 to 8 minutes.
  • Transfer to a serving platter and garnish with the scallion greens and pumpkin seeds.

1 sweet potato, peeled and diced
2 tablespoons olive oil
1 apple, cored and diced
1/2 sweet onion, diced (about 1/2 cup is good)
salt

Steps:

  • Pre-heat oven to 425 degrees.
  • In a bowl toss sweet potato with olive oil (enough to thoroughly coat). Arrange in a single layer on a baking sheet and roast for 10 minutes or until they're just tender but not over-cooked.
  • Coat a skillet with olive oil (just enough to cover the bottom), add onion and apples and sprinkle with salt. Cook over medium heat until the apples start to become tender, stirring occasionally (about 4-5min but this will depend on the type of apple you use).
  • Add sweet potato and cook a few minutes longer to let everything get cooked through and let all those fall flavors come together! Remove from heat and serve.
  • This is good just as it is but you could also garnish with nuts or add a protein to make it a complete meal.

1 medium onion, sliced into half moons

2 cups waxy potatoes, with skin,diced into 1/2 inch pieces (10-oz.)
1/4 teaspoon cayenne pepper
1 large egg

Steps:

  • Place a large nonstick skillet over medium heat and add oil.
  • When oil is hot, add onion and a sprinkling of salt; stir until onion begins to soften, about 1 minute.
  • Add potato and cayenne to pan; reduce heat to low and cook, stirring frequently, until potatoes and onions are tender, caramelized and lightly browned, about 30 minutes.
  • Push potato and onion hash to one side of the pan and increase the heat.
  • Crack egg into pan and cook to taste.
  • Spoon potatoes and onions onto a plate and top with the egg.

One of my favorite things to order when I go out to breakfast is hash - corned beef, roast beef or any other variation - which got me to thinking about trying to make it at home. After all, the ingredients are simple: As long as you've got some kind of protein, potatoes and onions, you're in business. And it makes a fast brunch or even light supper dish, with or without poached eggs.

2 tablespoons vegetable or olive oil
1 large onion, cut into 1/2-inch dice
1 pound Mild or hot Italian sausage, removed from its casing, crumbled
1 pound starchy potatoes (such as Idaho), cut into 1/2-inch dice
½ pound firm apples (e.g., Granny Smith), cut into 1/2-inch dice
2 tablespoons vegetable or olive oil
2 tablespoons ketchup
1 tablespoon Dijon mustard
½ teaspoon rubbed sage or thyme leaves
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper

Steps:

  • Heat 2 Tbs. oil over low heat in a 12-inch non-stick skillet (so potatoes don't stick). While skillet heats, prepare onion and Italian sausage as directed above. A few minutes before cooking, increase heat to medium-high. When oil starts to send up wisps of smoke, add onion and sausage; cook, stirring often, until golden brown. Meanwhile, dice potatoes and apples and toss with remaining oil. Transfer sausage mixture to a bowl and reserve.
  • Add potato mixture to empty skillet; cook, stirring only occasionally so they form a golden-brown crust, about 10 minutes. As potatoes cook, mix ketchup, mustard, dried sage and fresh parsley and 2 Tbs. of water. (Recipe can be prepared to this point up to 2 hours ahead. Spread hot potatoes on a large lipped cookie sheet; cover when cool. Return skillet to medium-high; add potatoes and re-crisp.)
  • Return reserved sausage mixture to skillet; stir in ketchup mixture, then season with salt and pepper. Cook, stirring frequently, until hash has nicely browned, about 5 minutes longer.

this recipe comes from bon appetit. i took it to a dinner party to be served with pork and it was a hit. not as sweet as you might think, but really good and different potato dish. i skipped the parchment paper, because i didn't have any and it was no problem.

12 tablespoons butter, divided
2 lbs onions, sliced
2 tablespoons packed chopped fresh thyme
4 teaspoons fine sea salt, divided
2/3 cup water
2/3 cup dry white wine
4 teaspoons sugar
2 1/2 lbs yukon gold potatoes or 2 1/2 lbs similar potatoes, peeled, cut into 1/4 inch thick rounds
2 lbs tart apples (such as granny smith)

Steps:

  • preheat oven to 400 degrees. butter a 13x9 pyrex.
  • melt 6 T butter in a large nonstick skillet over medium heat. add onion, thyme and 2 t salt; saute until onion are translucent, about 10 minutes.
  • increase heat to medium-high; saute until onion are tender and begin to color, about 8 minutes longer. remove from heat. add remaining 6 T butter, 2/3 c water, wine, and sugar to skillet; stir and swirl skillet to combine. bring to a boil, then cool onion mixture to lukewarm.
  • combine potatoes, apples, remaining 2 t salt and onion mixture in large bowl; toss gently to blend.
  • transfer to prepared baking dish, spreading evenly. cover dish with parchment paper, then cover with foil, shiny side down.
  • bake gratin until potatoes are tender, about 55 minutes. uncover and bake until top browns and juices bubble thickly, about 20 minutes longer.
  • (can be made 6 hours ahead. let stand uncovered at room temperature. rewarm, loosely covered with foil, in 300 degree oven for 20 minutes.) let gratin stand 15 minutes before serving.

700g floury potatoes , cut into chunks
8 Cumberland sausages
25g butter
1 onion , thinly sliced
2 tsp plain flour
250ml beef stock
2 apples (about 280g/10oz), peeled and chopped into small chunks
3 tbsp milk

Steps:

  • Cook the potatoes in boiling, salted water for 15 mins until tender. Meanwhile, heat a non-stick frying pan and add the sausages. Cook over a medium heat for 15-20 mins, turning occasionally, until cooked through. Remove from the pan and keep warm.
  • Add a knob of the butter and the onion to the pan, then cook for 15-20 mins until soft. Stir in the flour, then gradually add the stock, stirring to make a sauce. Simmer for 2 mins, then pour into a jug and keep warm.
  • Cook the apples in half the remaining butter for 5-10 mins until softened. Drain the potatoes and mash well with the rest of the butter and the milk. Fold in the apple, then serve with the sausages and onion gravy.
