Costa Vida Rice Recipe 35 Food

I think this chain is mostly out west but I went to the one in Portland, ME with my sister and am now a huge fan. This is very similar to the rice that they use in the burritos and salads. Yummy!

Steps:
- Chop veggies/herbs coarsely and then fry in 1 T butter or oil.
- Add rice and stir to coat and then add broth, salt and lime juice. Bring to rapid boil, turn down as low as possible, cover and simmer about 20 minutes - do not stir! Fluff with fork.

COSTA VIDA SWEET PORK WITH COSTA VIDA RICE
Costa Vida is a Mexican Restaurant style of food. This is my copy cat recipe. With the sweetness of this pork it pairs well with extra spicy salsa or top it off with extra sliced jalapeno's.

Steps:
- 1. For the pork Place all the ingredients except for the last 1 cup of coke and 1/2 cup sugar in crock pot. cook on high 6 hours. Remove pork and shred with two forks. Add pork back to pot and add the last cup of coke and 1/2 cup sugar to pot. Cook on low 3 more hours
- 2. For the rice Place the broth and bouillon in a large pan. Bring to a boil. Add the rice and simmer covered for 20 minutes. Remove from heat and add the cilantro, green onions, and lime juice. Let sit covered for 10 more minutes. Season with salt.
- 3. Serve the rice with the pork in flour or corn tortillas. Garnish with desired condiments.
