CRISPY OVEN-FRIED PORK CHOPS

Although it has been slightly modified, this recipe comes from the Quick & Easy Meals 2010 Cooking with Paula Dean cookbook.

2 egg whites
2 teaspoons cornstarch
1 1/2 cups panko breadcrumbs
2/3 cup pecans, finely chopped
1 teaspoon salt
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon rubbed sage
4 pork loin chops, boneless, 1-inch thick
1/4 cup olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • In a shallow dish, whisk together the egg whites & cornstarch until smooth.
  • In a shallow dish, whisk together the bread crumbs (panko), pecans, salt, rosemary & sage.
  • Dip chops in egg white mixture to coat & then dredge each in the bread crumb mixture, pressing bread crumbs gently to adhere.
  • In an oven proof skillet, heat oil over medium heat, then add chops & cook for 3 or 4 minutes per side.
  • Place skillet in oven & bake for 10 to 12 minutes or until pork is cooked through.

Seriously folks, I thought moist pork chops were a myth... until I found this recipe! Cornstarch added to the flour coating is the trick to keeping these puppies moist and tender. This is a recipe from Emeril Lagasse.

6 pork chops (boneless or bone-in, whatever floats your boat)
3 tablespoons creole seasoning
3/4 cup all-purpose flour
1/4 cup cornstarch

Steps:

  • Season the chops on both sides with 2 tablespoons of the creole seasoning.
  • Combine the flour, cornstarch and remaining tablespoon of creole seasoning in a shallow bowl. Dredge the pork chops in the flour mixture.
  • In a large cast-iron skillet or saute pan, heat the oil over high heat. Add the pork chops in batches and cook until golden brown and medium, 5 to 6 minutes per side.
  • Remove and drain on paper towels. Season lightly with salt and pepper.

2/3 cup cornstarch
1 cup buttermilk
2 tablespoons Dijon mustard
1 medium garlic clove, minced
3 cups corn flakes
table salt
fresh ground black pepper
8 center-cut boneless pork chops, 1/2 to 3/4-inch thick (3-4 oz. each)
2/3 cup vegetable oil

Steps:

  • Place 1/3 cup cornstarch in shallow dish or pie plate. In second shallow dish, whisk buttermilk,mustard, and garlic until combined.
  • Process cornflakes, 1/2 teaspoons salt, 1/2 teaspoons black pepper,and remaining 1/3 cup of cornstarch in food processor until conrflakes are finely ground, about 10 seconds. Transfer cornflake mixture to third shallow dish.
  • Adjust oven rack to middle position and heat oven to 200 degrees.
  • With sharp knife, cut 1/16" deep slits on both sides of chops, spaced 1/2" apart, in crosshatch pattern. Season chops liberally with salt and pepper. Dredge 1 chop in cornstarch; shake off excess. Using tongs, coat with buttermilk mixture; let excess drip off. Coat with cornflake mixture; gently pat off excess. Transfer coated chop to wire rack set in rimmed baking sheet and repeat with remaining chops. Let coated chops stand for 10 minutes.
  • Heat 1/3 cup oil in 12" nonstick skillet over medium-high heat until shimmering. Place 4 chops in skillet and cook until golden brown and crispy, 2-5 minutes. Carefully flip chops and continue to cook until second side is golden brown, crispy, and center of chop registers 140 degrees on instant read thermometer. Transfer chops to paper-towel lined plate and let drain for 30 seconds.Transfer to clean wire rack set over rimmed baking sheet, then transfer to oven to keep warm. Discard oil from skillet and wipe clean with paper towels. Repeat process with remaining oil and pork chops.

I have been searching for years for a foolproof method of cooking pork chops and finally found it. These are wonderfully moist and very tasty. This is a Bon Appetit recipe and I found it on the Epicurious web site.

1/2 cup all-purpose flour
1/4 cup cornstarch
1/2 teaspoon garlic salt
4 center-cut pork chops, apprx 3/4 inch thick
vegetable oil (for frying)

Steps:

  • Mix flour, cornstarch and garlic salt.
  • Sprinkle pork chops with salt and pepper.
  • Dredge chops in flour mixture and shake off excess.
  • Pour enough oil into large skillet to reach depth of 1/2" to 1".
  • Heat oil to 350 degrees.
  • Fry chops in oil until golden about 5 minutes per side.
  • Note: I found they cooked much quicker.
  • Avoid overcooking or they will be dry.
