Pan-fried Red Snapper Fillet with Corn Cream Creole Sauce image

2 tablespoons achiote oil
2 tablespoons onions, finely chopped
3 tablespoons red and green peppers, finely chopped
1 small tomato, peeled, seeded, and chopped
2 sweet chile peppers (Serrano or Anaheim), finely chopped
2 cloves garlic, finely chopped
2 sprigs fresh cilantro, plus extra sprigs, for garnish
1 bay leaf
Salt and pepper
4 cups fresh corn, cut from cobs
1 cup fish stock
1/2 cup evaporated milk
2 teaspoons cornstarch
1 tablespoon water
1 tablespoon butter, softened
2 pounds fresh red snapper fillet, cut into 4 pieces
4 tablespoons olive oil
Lightly toasted and crushed coriander seeds, for garnish

Steps:

  • In a large saucepan, heat the achiote oil over medium heat. Add the onions, bell peppers, tomato, chile peppers, garlic, cilantro, bay leaf, salt, and pepper, and stir-fry for about 4 minutes. Add the corn and fish stock and cook over medium heat for about 6 minutes. Remove from the heat and let cool slightly. Transfer to a blender process until smooth on high speed.* Pour the sauce through a fine strainer into a saucepan, add the evaporated milk, and warm over low heat.
  • Dilute the cornstarch with 1 tablespoon water. Add to the saucepan, mix well, and incorporate the butter with a whisk. Taste for seasoning and and cook for about 5 minutes. Keep warm.
  • Generously season both sides of the fish with salt and pepper. In a large nonstick skillet, heat the oil over high heat. When oil is hot, place the fillets in the skillet, skin side down, and cook for 3 minutes, without turning. Flip onto other side and cook for about 2 minutes. Remove from heat to a platter.
  • Spoon the warm sauce in the center of each dinner plate. Top with a fish portion. Garnish with cilantro sprigs and the toasted and crushed coriander seeds.

1 ½ teaspoons Cajun seasoning
salt to taste
2 eggs
1 cup buttermilk
1 ½ pounds red snapper fillets, bones removed
1 cup flour
vegetable oil as needed

Steps:

  • Toss together bread crumbs, Cajun seasoning, and salt in a bowl. In a separate bowl, beat the eggs with the buttermilk. Toss the fish with the flour, shake off the excess, and dip into the egg. Shake off excess egg, and press into breadcrumb mixture. Set aside.
  • Heat about 1/8 inch of oil in a heavy bottomed skillet over medium-high heat. Cook for 3 to 5 minutes per side until the fish flakes easily and has browned nicely.

1 1/2 pounds snapper or cod fillets
Salt
freshly ground pepper
1/4 cup fine cornmeal (if you have only polenta or coarse cornmeal, you can grind it to a fine powder in a spice mill)
1/4 cup flaxseeds, untoasted or toasted, coarsely ground
1/4 cup all-purpose flour or rice flour
2 eggs, beaten
1/2 teaspoon freshly ground pepper
2 to 4 tablespoons canola oil
Lemon wedges for serving

Steps:

  • Heat a large, heavy cast-iron skillet over medium-high heat (unless you're planning to cook the fish later).
  • Pat the fish fillets dry, and season with salt and pepper. In a wide bowl, mix together the cornmeal, flaxseeds, and salt and pepper to taste.
  • Place the flour on a plate or in a baking dish. Beat the eggs in a wide bowl. Dredge the fillets first in the flour -- tap them to remove excess flour -- then in the egg, then in the cornmeal-flax mixture. If not cooking right away, place the fish on a baking sheet, uncovered, in the refrigerator.
  • Add 2 tablespoons canola oil to the hot pan. When it is rippling, carefully add as many fillets as will fit your pan. Cook four to five minutes on each side (depending on the thickness of the fillets) or until nicely browned. Remove from the pan, and keep warm in a low oven while you repeat with the remaining fish and oil, as necessary. Serve hot, with lemon wedges.

  • 1.Season the fillets with the salt, black pepper and Cajun seasoning. Set aside to marinate for a few minutes while you heat the oil. 2.Heat oil in a frying pan wide enough to hold the fillets. 3.Mix the corn meal and bread crumbs together in a separate dish. Take each fillet and dredge it into the breadcrumb's until both sides are fully coated. Once the oil is hot...it has to be hot or the fish will be soggy and not crispy. Place each fillet in to fry. This is very easy to make, if not a bit messy, but the crust comes out so crunchy. It's really nice served with any kind of rice, or a baked potato and a green thing ( asparagus, zucchini, spinach, broccoli, or green beans... actually broccolini is my new favourite with this.) It's just something my mother always did with fish & she used to play with the seasonings from time to time. This is my latest mix. Discard unused crumb, egg & flour mix. You won't need all of it.

4 red snapper fillets
1/2 cup all-purpose flour
1/2 teaspoon Hungarian paprika
1/2 teaspoon lemon pepper
2 eggs
1/2 cup breadcrumbs
1/2 cup cornmeal
2 tablespoons parmesan cheese
1 pinch dried oregano
1 pinch dried basil
pepper
2 -3 tablespoons oil

Steps:

  • Rinse fillets under cold cold water. Lay on plate & pat dry with paper towels.
  • Remove 3 shallow bowls from cupboard (here's where the messy bit starts).
  • In one of the bowls, mix together flour, paprika and lemon pepper. Fluff together with fork.
  • In another bowl stir together the 2 eggs until frothy.
  • In the 3rd bowl mix the breadcrumbs, cornmeal, parmesan cheese, oregano, basil and pepper.
  • Heat oil in pan.
  • Dip each fillet first into the flour mixture. Coat evenly on both sides, then dip into the egg mixture, then the breadcrumb/cornmeal mixture.
  • When oil is hot lay the filets gently in the pan. Do not crowd.
  • Cook fillets until golden brown on both sides. I do mine in a Texas skillet. (large frypan), but if you have to do it in two batches, you can keep them warm for awhile in a 230°F oven on a plate lined with paper towel.
  • Serve with a little tartar sauce, seafood sauce or brown butter.
  • Enjoy!

1 cup mayonnaise
1 teaspoon finely chopped garlic
1 poblano pepper, roasted, peeled, seeded and diced
2 tablespoons fresh lime juice
Salt and freshly ground pepper
4 large eggs, lightly beaten
Salt and freshly ground pepper
2 cups seasoned all-purpose flour
2 cups seasoned blue cornmeal
4 red snapper fillets (about 6 ounces each)
1/2 cup vegetable oil
2 pounds kale, center stalks removed
4 tablespoons unsalted butter
1 cup heavy cream
1/8 teaspoon ground nutmeg
Salt and freshly ground pepper

Steps:

  • Green Chile Aioli: Combine all ingredients in a blender and blend until smooth.
  • Red Snapper: Season the eggs lightly with salt and pepper. Place the eggs, flour, and cornmeal in 3 separate bowls. Season the snapper fillets lightly on both sides with salt and pepper. In a large saute pan over medium-high heat, heat the oil. Dredge each fillet in the flour and shake off any excess. Dip into the beaten egg and let the excess drip off. Dredge both sides lightly in the cornmeal and shake off any excess. Saute for 3 minutes on each side and drizzle with the red pepper sauce. Serve immediately, garnished with green chile aioli.
  • Creamed Kale: Blanch the kale in lightly salted water until tender, rinse in ice water, drain and cut into 1/2-inch ribbons. In a large saute pan over medium heat, melt the butter and add the kale, cream and nutmeg. Reduce the heat to low and cook for 5 minutes, or until the cream has reduced and thickened. Season with salt and pepper to taste.

2 pounds blue potatoes

2 ounces vegetable oil

Steps:

  • Preheat oven to 350 degrees F.
  • To make the filling, wash, clean, and cut all vegetables into 1-inch long julienne. In a large bowl, combine the leeks, mango, grated ginger, zest, bell pepper, and red onion.
  • For the crust, slice the potatoes into thin slices like chips, and set aside.
  • Place the vegetables, and lime juice at the end of each fillet, roll up, and secure with toothpicks.
  • Dust each fillet in flour and lay on a baking sheet. Cover each fillet with the potato chips, layering the potatoes as close together as possible. Sprinkle the oil on top of each fillet and bake for 15 to 20 minutes.

Steps:

  • For the roasted garlic: Preheat the oven to 350 degrees F.
  • Place cloves in a small oven-safe dish. Cover with oil and then foil. Roast 45 minutes.
  • For the chow chow: Meanwhile, preheat a grill to medium heat.
  • Grill the corn in the husks, then shuck and cut the kernels from the cobs. In a medium bowl combine corn, Tomatoes and bell peppers. In a separate bowl, combine vinegar, granulated sugar, salt, granulated garlic, granulated onion, pepper, lemon juice and zest and 2 1/2 ounces water. Add to vegetable mixture. Refrigerate until ready to use.
  • For the habanero hot sauce: Combine habaneros, granulated sugar, vinegar, garlic, salt and pepper and just enough water to cover in a small pot. Cover and cook on medium heat until peppers are tender and liquid is almost gone. Remove and let cool. Blend until smooth.
  • For the smoky habanero aioli: Combine eggs, lemon juice, mustard, vinegar and 2 tablespoons roasted garlic together in a tall container or wide mouth jar. Using a stick blender, slowly add oil until combined. Add 1 to 2 tablespoons habanero hot sauce.
  • For the cornmeal snapper: Combine cornmeal, cornstarch, paprika, granulated garlic and onion, oregano, salt, pepper and 2 cups flour in a medium bowl and mix well.
  • Set up standard breading station: A dish with the remaining 2 cups flour, a dish with egg wash, and the cornmeal mixture.
  • Heat oil in a deep-fryer or in a Dutch oven fitted with a deep-fry thermometer to 350 degrees F.
  • Coat snapper in flour, then egg, then cornmeal. Fry snapper until golden in color and cooked through, 3 to 4 minutes.
  • To serve, spoon aioli on the plate and place snapper directly on top. Serve chow chow on the side.
  • Combine green tomatoes, cider vinegar, brown sugar, granulated sugar, white vinegar, salt, mustard seeds, pepper and 2 1/4 cups water.

1 snapper or sea bass, about 1.5 pounds/675 g, cleaned, but not scaled
1 pound/2 kg coarse salt
2 to 3 egg whites
Leaves from 2 bunches fresh mint or tarragon

Steps:

  • Heat the oven to 425 degrees F/220 degrees C. Tuck the lemon slices into the belly of the fish. Stir the salt and egg whites together in a bowl. Chop all but 6 mint leaves. Stir the chopped mint through the salt and put the others inside the fish. Put the fish in a baking dish and cover completely with the salt to seal. Bake 25 minutes. Crack the crust off with a knife, moving all the salt away from the surface. Peel back the skin from the fish, and carefully remove the fillets.

From April 2007 edition of Australian Super Food Ideas. Suggested you serve with oven-baked fries, lemon wedges and baby spinach. I used red snapper fillets (skin off) and served with mashed potatoe and steamed vegetables. The original recipe said 4 serves but the 700 grams of red snapper fillets I had could have served 5 to 6 with sides.

750 g fish fillets (blue-eye cod skin on was recommended)
1/3 cup pine nuts
1/4 cup rolled oats
1/2 cup basil leaves
1/2 cup flat leaf parsley
2 tablespoons thyme leaves
2 cups fresh breadcrumbs (I used wholemeal bread crusts cut off)
1/3 cup plain flour
2 eggs (lightly beaten)
vegetable oil (for cooking)

Steps:

  • Place pine nuts, oats and herbs in a food processor, process until finely chopped, add breadcrumbs and process to combine.
  • Transfer some of the breadcrumb mixture to a shallow plate.
  • Place flour and eggs in separate shallow bowls.
  • Preheat oven to 180 degree celsius.
  • Coat fish in flour, dip in egg, then coat in breadcrumb mixture, pressing crumbs on with fingertips to secure (top up breadcrumbs as required).
  • Pour enough oil to cover the base of a large non-stick frying pan, heat over medium heat until hot.
  • Cook fish for about 3 minutes each side (in batches if necessary - don't over crowd frypan) or until golden.
  • Transfer to a wire rack over a baking tray.
  • Place in oven and cook for 10 minutes or until fish is cooked through.
  • Keep checking the fish, cooking time will vary depending on the thickness of the fillets.

  • Rinse snapper inside and out with cold water; pat dry with paper towels.
  • Season fish inside and out with pepper.
  • In a bowl, stir together egg whites, water and salt to make a paste.
  • Spread half of salt paste over the bottom of an oval roasting pan.
  • Place fish on top; pack remaining salt paste over entire surface of fish.
  • Roast until an instant-read thermometer inserted into thickest part of fish registers 135 degrees F., about 50-60 minutes.
  • The salt paste will have formed a hard crust; gently crack it with a spoon, lift off crust and discard.
  • Serve fish immediately.
