- In a large bowl, combine the flour, sugar and salt; cut in butter until mixture resembles coarse crumbs. Add water and egg yolks; stir until dough forms a ball. , Divide into eight portions; press onto the bottom and up the sides of eight 4-in. tart pans. Bake at 400° for 15-20 minutes or until golden brown. Cool on wire racks., For filling, in a large saucepan, combine the sugar, cornstarch and salt. Stir in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in peaches and lemon juice., Spoon into tart shells. Chill until serving. Garnish with whipped cream if desired.

CORNMEAL-CRUSTED ROASTED RATATOUILLE TART
Steps:
- For the crust: Preheat the oven to 350 degrees F.
- Combine cornmeal, pastry flour, and salt in the bowl of a food processor. Pulse to incorporate. Add butter and oil and pulse about 20 times, until mixture resembles small pebbles. Add water and pulse until mixture forms a loose dough. Remove dough from processor and press into bottom and about 1/8-inch up the sides of a 9-inch tart pan with a detachable rim. Press aluminum foil into the bottom and sides of the pan on top of the dough and weigh down with uncooked rice or pie weights. Place tart pan on a baking sheet and bake for 10 minutes. Remove from oven and remove rice and foil. Return to oven and bake for an additional 5 minutes, or until no longer shiny and wet. Remove from oven and let cool.
- For the filling: Increase the oven to 400 degrees F. Heat 1 teaspoon of olive oil in a nonstick pan over medium heat; saute shallots until soft, about 5 to 6 minutes. Spray 2 baking trays with cooking spray. Arrange the eggplant, zucchini and tomato slices on the trays in a single layer and brush with the remaining olive oil. Season with salt and pepper, and roast the vegetables until soft but not browned, about 15 minutes. Remove the vegetables from oven and cool.
- Lower the oven temperature to 350 degrees F. Lay the eggplant slices in 2 layers on the bottom of tart; cover with 1/3 of the mozzarella cheese and some of the shredded basil. Add the zucchini and shallots, top with another 1/3 of the mozzarella and basil, then the tomatoes. Top with rest of the mozzarella cheese and the Parmesan. Bake for 25 to 30 minutes, or until cheese is melted and vegetables have further wilted. Remove from oven, let cool for 5 minutes, and cut into 8 slices. Serve warm.

My sister-in-law got me Pampered Chef's "Cooking for Two or More" for Christmas. This one definitely stuck out at me delicate, springy, and great tasty potential! I can't wait to make it.

- Preheat oven to 400. For crust, combine flour, sugar, cornmeal and salt. Mix well. Add butter and blend thoroughly. Sprinkle 1 tablespoon water over mixture and toss gently with a fork. Add additional water, 1 teaspoon at a time until mixture is moist enough to form into a ball when pressed with hands.
- Gather pastry into a ball and knead dough 5 times. Divine dough in half, flatten into 2 1/2 inch thick disks. Flatten until you get a 6 inch circle. Repeat.
- For filling, combine preserves and flour until well blended. Cover and microwave on high for 30 seconds. Add peaches, toss lightly. Spoon half of fruit mixture into each dough circle to within 1 inch of edge. Fold edges of dough in toward center. Brush crust with milk and sprinkle with sugar. Transfer tarts to small pan. Bake 32 to 34 minutes, or until crust is deep golden brown. Serve at room temperature.

RUSTIC PEACH BLUEBERRY TART
A Vegetarian Times recipe. This recipe is wonderful when peaches and blueberries are in season. When they aren't in season you can either substitute 6 1/2 cups of whatever fruits and berries are in season or use frozen fruit. COOKING TIME INCLUDES CHILLING AND STANDING TIME

- To make Cornmeal Crust:.
- Add flour, cornmeal, sugar and salt to a food processor and pulse 2 or 3 times to combine.
- Add cheese and butter, and blend until dough resembles coarse meal.
- Add 3 Tbs. cold water, and pulse several times, or until dough comes together.
- Pat into a flat disk, wrap in plastic wrap and chill 1 hour, or overnight.
- Preheat oven to 425°F.
- To make Peach-Blueberry Filling:.
- Using a large bowl, toss together the peaches, blueberries, sugar, lemon juice, cornstarch and cinnamon.
- Let stand 15 minutes, or until sugar is dissolved.
- Place sheet of parchment paper on work surface, and sprinkle with flour. Roll dough into 12-inch round.
- Fold in edge 1/2 inch to create sides.
- Slide parchment and dough onto ungreased baking sheet or pizza pan.
- Using a slotted spoon, place fruit in center of crust .
- Discard the juice.
- Bake 15 minutes at 425°F.
- Reduce heat to 350°F, and bake 20 minutes more, or until crust is crisp and brown.
- Allow tart to cool 10 minutes.
- Slide tart from parchment onto serving plate.
- Serve warm or at room temperature, and top with ice cream or whipped cream, if desired.

- Combine flour, cornmeal, sugar, baking powder, and salt in a food processor; pulse several times. Add butter; process until mixture is the consistency of coarse meal, about 7 seconds. With motor running, add yolks and enough ice water so dough comes together. Do not overmix.
- Divide dough in half; press to flatten into disks. Wrap each in plastic; chill at least 30 minutes or overnight.
APRICOT TART WITH CORNMEAL CRUST

- For crust:
- Whisk flour, cornmeal and salt in small bowl to blend. Using electric mixer, beat butter and sugar in large bowl to blend. Beat in egg yolks. Add dry ingredients and beat just until blended. Divide dough in half; flatten into disks. Wrap each dough disk in plastic and refrigerate 20 minutes. (Can be prepared 1 day ahead. Keep refrigerated. Let dough soften slightly at room temperature before using.)
- Meanwhile, prepare apricot filling:
- Bring 5 cups water to simmer in heavy medium pot over medium heat. Add apricots and poach until tender, about 25 minutes. Drain well.
- Preheat oven to 375°F. Lightly oil 9-inch-diameter tart pan with removable bottom. Unwrap 1 dough disk; press onto bottom and up sides of tart pan. Spread apricot preserves over bottom of crust. Place poached apricots over preserves, covering crust completely and overlapping slightly. Using pastry brush, brush beaten egg over edges of crust. Roll out second dough disk between 2 sheets of parchment paper to 12-inch round. Remove top piece of parchment; using 1-inch-diameter cookie cutter, cut hole in center of top crust. Turn crust over onto filling. Remove second piece of parchment paper. Press around crust edges to seal. Cut off excess dough to make top crust flush with tart pan sides. Brush crust with beaten egg and sprinkle with 3 tablespoons sugar.
- Bake tart until cornmeal crust is golden brown, about 45 minutes. Transfer apricot tart to rack. Cool 30 minutes. Remove tart from pan and cool completely. (Apricot tart can be prepared up to 1 day ahead. Store airtight at room temperature.) Serve tart with Apricot Sauce and whipped cream, if desired.

- Spray a 10-inch fluted tart pan with a removable bottom with cooking spray. In a food processor, pulse the flour, sugar and salt until blended. Add the butter and cream cheese and pulse until moist crumbs form. Scrape the crumbs into the tart pan and press them over the bottom and up the side in an even layer. Refrigerate until firm, 20 minutes.
- Preheat the oven to 325°. Line the pastry with foil and fill with pie weights or dried beans. Bake for 25 minutes, until just set. Carefully remove the foil and weights and bake for 15 minutes longer, until the crust is completely set and lightly golden.
- Bring a large saucepan of water to a boil and fill a large bowl with ice water. Score the peach bottoms with an X. Add a few peaches at a time to the boiling water and blanch for 10 seconds; transfer to the ice water. Drain and peel the peaches. Cut 6 peaches into quarters and slice the remaining 4 peaches.
- In a bowl, using an electric mixer, beat the butter with the 3/4 cup of sugar until creamy. Add the eggs and vanilla and beat until smooth, then beat in the flour, cornmeal, cinnamon and nutmeg. Spread the filling in the crust and arrange the peach quarters on top in 2 concentric circles. Sprinkle the peaches with sugar and bake for 1 hour and 40 minutes, until the filling is firm and lightly browned. Transfer to a rack to cool.

- In a medium bowl, combine the flour with the cornmeal, 2 tablespoons of the sugar and the salt. Add the butter and, using a pastry blender, 2 knives or your fingers, work it into the flour until the mixture resembles coarse meal. Add the water and stir just until a dough forms. Gather the dough together and knead 2 or 3 times.
- Roll the dough into a fat log and cut it into 8 equal pieces. On a lightly floured surface, flatten each piece of dough into a 2-inch disk. Wrap each disk in plastic and refrigerate for at least 30 minutes or overnight.
- Preheat the oven to 350°. Line a large baking sheet with parchment paper. On a lightly floured surface, roll each disk of dough out to a 6-inch round. In a medium bowl, toss the peaches with the blueberries and the remaining 1/4 cup of sugar. Spoon the fruit onto the dough and fold up the sides, overlapping and crimping as you go. Transfer the tartlets to the baking sheet and bake for 50 minutes, or until the crust is golden and crisp and the fruit is bubbling. Let cool.
