1 1/2 cups all-purpose flour, plus more for rolling out dough
1/4 cup plus 2 tablespoons yellow cornmeal
2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
1 1/2 tablespoons sugar
6 tablespoons unsalted butter, chilled and cut into 1/2-inch pieces, plus more for topping, if desired
3/4 cup plus 1 tablespoon nonfat buttermilk
Honey (optional)

Steps:

  • Heat oven to 400 degrees. In a medium bowl, whisk together flour, cornmeal, baking powder, baking soda, salt, and sugar. Using your fingers or a pastry cutter, cut butter into flour mixture. Using a wooden spoon, stir in 3/4 cup buttermilk until the mixture holds together.
  • Line a baking sheet with parchment paper. On a lightly floured work surface, roll out dough to a 1-inch thickness. Using a 2-inch-round cookie cutter or a drinking glass, cut out eight rounds, and place on prepared parchment; discard scraps of dough. Brush tops of biscuits with remaining tablespoon buttermilk. Bake until golden and puffy, about 12 minutes. If desired, spread with butter or honey. Serve warm.

1/2 cup cornmeal
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup shortening
3/4 cup sour cream
1 egg
4 teaspoons butter, melted

Steps:

  • In a large bowl, combine the first six ingredients. Cut in shortening until mixture resembles coarse crumbs. In a small bowl, combine sour cream and egg; add to dry ingredients just until moistened. Turn onto a lightly floured surface; knead 8-10 times., Pat or roll out to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on a greased baking sheet. Brush with butter. Bake at 425° for 8-12 minutes or until golden brown. Serve warm.

2 large eggs
6 tablespoons buttermilk
1 teaspoon ground cumin
Fresh cracked black peppercorns

Steps:

  • Preheat oven to 375 degrees F. Cook bacon until crisp. Transfer bacon to paper towels and drain. Crumble bacon; reserve 2 tablespoons bacon drippings.
  • Sift flour, cornmeal, sugar, baking powder and salt into bowl. Add butter and rub in using fingertips until mixture resembles coarse meal. Whisk eggs, buttermilk, cumin and reserved bacon drippings in small bowl. Add to flour mixture and stir until moist dough forms. Mix in bacon.
  • Turn out dough onto lightly floured surface. Knead gently until smooth. Roll out to 3/4 inch thickness. Cut out biscuits with round cookie cutter. Place on greased baking sheet. Sprinkle with peppercorns.
  • Bake until golden brown and puffed, about 25 minutes. Serve warm or at room temperature.

2 green onions (white parts only, chopped)

Steps:

  • Preheat the oven to 425. Line two baking sheets with parchment paper.
  • Using a stand mixer fitted with a paddle attachment, combine the flour, baking powder, salt and baking soda and mix briefly on low speed just to combine. Add the chilled butter and continue mixing on low speed until the butter is cut into pea-sized pieces. Drizzle in the buttermilk and mix just until the dough forms a ball. Divide the dough into thirds.
  • In a small bowl, combine the cheddar, bacon and green onions. On a lightly floured surface and with a lightly floured rolling pin, roll out one piece of dough to an 11-by-8 1/2 -in/28-by-21.5 cm rectangle and layer on top of the dough with the cheddar mixture. Sprinkle the second layer of dough with the remaining half of the cheddar mixture. Roll out the remaining piece of dough and layer it on top. Gently roll out the dough layers to make a 12-by-10-in/30.5-by-25-cm rectangle.
  • Using a 2-in/3-cm biscuit cutter, stamp out 18 biscuits and put them on the prepared baking sheets. Brush the tops with cream. Bake until just starting to turn golden but before the bottoms begin to brown, about 15 minutes. Let cool slightly and serve warm.

Steps:

  • Gather the ingredients. Pre-heat oven to 425 F.
  • Put a metal mixing bowl in the freezer. Line a baking sheet with parchment paper or leave it ungreased.
  • Take the bowl out of the freezer. Sift the flour, baking powder, salt, and cornmeal into the mixing bowl. Sifting the dry ingredients helps ensure there are no lumps clogging up the dough.
  • With a pastry blender or fork, cut in shortening until mixture resembles coarse meal.
  • Add milk to the first mixture and stir with a metal spoon just until dry ingredients are moistened.

1 1/4 c self-rising flour
1 c self-rising cornmeal
1 Tbsp brown sugar, firmly packed
1/8 tsp ground red pepper (optional)
3 Tbsp margarine, butter, or other replacement (like a soy brand)
3 slice turkey bacon, cooked and crumbled
1/2 c plus 2 1/2 tbs. nonfat or lowfat buttermilk
2 tsp self-rising flour

Steps:

  • 1. Preheat oven to 400°F. Spray baking sheet with vegetable cooking spray.
  • 2. Combine flour, cornmeal brown sugar, and red pepper, if using, in a medium bowl; cut in margarine, butter, or other replacement, with a pastry blender, until mixture resembles coarse meal. Cook, drain, and chop turkey bacon. Add in bacon. Then, add buttermilk, stirring with a fork, just until dry ingredients are moistened.
  • 3. Sprinkle the 2 tsps. flour evenly over work surface. Turn dough out onto floured surface, and knead 8 to 10 times. Roll dough to 1/2 inch thickness; cut into rounds with a 2 inch biscuit cutter.
  • 4. Place biscuit rounds on prepared baking sheet. Bake 14 minutes, or until biscuits are golden. Serve warm. Makes 15 biscuits. Nutrition: One biscuit 98 cal, 3.1 g fat (0.6 g sat), 2 mg chol, 316 mg sod, 14.8 g carb, 0.4 g fiber, 2.5 g protein using the margarine and nonfat buttermilk. Transfer bacon to paper towels. Crumble bacon into small pieces. Reserve 2 tablespoons bacon dripping; discard remainder.
  • Mix flour, cornmeal, sugar, baking powder and salt in large bowl to blend. Add butter and rub in with fingertips until mixture resembles coarse meal. Whisk 2 eggs, buttermilk, sage and reserved 2 tablespoons bacon drippings in medium bowl to blend. Add to flour mixture and stir until moist dough forms. Mix in corn and bacon.
  • Turn dough out onto floured surface and knead gently until smooth, about 8 turns. Roll out dough on work surface to 10x8-inch rectangle (about 3/4 inch thick). Cut rectangle into 12 squares. Place squares on prepared baking sheet, spacing evenly. Brush biscuits with egg glaze. Sprinkle lightly with ground pepper, if desired.
  • Bake biscuits until golden and tester inserted into center comes out clean, about 25 minutes. Transfer to rack. Serve warm or at room temperature. (Can be prepared 1 day ahead. Wrap in foil and let stand at room temperature. Rewarm foil-wrapped biscuits in 375°F oven 5 minutes.)
