Orange-Cranberry Glazed Cornish Hens image

Provided by Food Network Kitchen

Categories     main-dish

Time 1h25m

Yield 6 to 8 servings

Number Of Ingredients 12

4 Cornish game hens (1 1/4 to 1 1/2 pounds each)
1 large onion, sliced into rounds, rings separated
2 oranges, sliced into rounds, plus 1 cup fresh orange juice (from about 4 oranges)
8 sprigs fresh rosemary, plus 2 teaspoons finely chopped
Kosher salt and freshly ground pepper
1/2 cup cranberries (fresh or frozen)
1/2 cup pure maple syrup
1 tablespoon coriander seeds, crushed or coarsely ground
1/2 teaspoon ancho chile powder
2 teaspoons white wine vinegar
1 stick unsalted butter
3 cloves garlic, chopped

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 475 degrees F. Cut the hens in half with kitchen shears, removing the backbone and cutting through the middle of the breastbone. Divide the onion, oranges and rosemary sprigs between 2 rimmed baking sheets. Arrange the hens skin-side up on the baking sheets and season all over with salt and pepper. Set aside at room temperature, 30 minutes.
  • Meanwhile, combine the orange juice, cranberries, maple syrup, 1 teaspoon coriander, the chile powder and 1/4 teaspoon salt in a medium saucepan. Bring to a boil, then reduce the heat to a simmer. Cook, mashing the cranberries as they start to burst, until the mixture is thickened and reduced to about 3/4 cup, 20 to 25 minutes. Stir in the vinegar and season with salt. Set aside.
  • Melt the butter in a small saucepan over medium heat. Reduce the heat to low and add the chopped rosemary, garlic and the remaining 2 teaspoons coriander. Cook 30 seconds, then remove from the heat.
  • Pat the hens dry with paper towels, then brush with the flavored butter. Roast the hens until the skin is browned and a thermometer inserted into the thigh registers 165 degrees F, 25 to 30 minutes. Remove from the oven and switch to the broiler setting. Brush the hens with the orange-cranberry sauce, then broil, one baking sheet at a time, until glazed and dark brown in spots, 2 to 3 minutes.

Categories     Dinner

Time 1h30m

Number Of Ingredients 14

2 celery sticks, (cleaned and chopped in large pieces)
1 large sweet onion, (roughly chopped)
1 lime or lemon, (juice of)
4 Cornish hens, (roughly 1 pound to 1.5 pounds each)
2 cup chicken broth
15-20 garlic cloves
Salt
2 1/2 teaspoon hot or sweet paprika
1 1/2 teaspoon ground allspice
1 1/2 teaspoon dried thyme
1 teaspoon ground black pepper
1/2 teaspoon nutmeg
1 lemon or lime, (juice of)
2 tablespoon Private Reserve Greek extra virgin olive oil

Steps:

  • Preheat the oven to 425 degrees F.
  • Make the Mediterranean garlic and spice marinade. Combine the garlic spice rub ingredients in food processor. Run the processor until you achieve a pasty spice mixture or rub.
  • Now to each of the hens, apply the marinade generously on the outside and in the cavities. Lift the skins and apply some of the marinade underneath (this is the key to flavor).
  • Heat a lightly-oiled cast iron grill or skillet. Turn the the heat to medium-high and brown each of the hens on all sides. Set the hens aside momentarily to cool.
  • Once the hens are cool enough to handle, stuff each hen's cavity with the chopped onions and celery. Now squeeze juice of one lime or lemon on the hens. Add all the used lime or lemon halves in with the onion and celery stuffing. Sprinkle each hen lightly with a dash of seasoned salt, if you like.
  • Place the hens in a large cast iron skillet or a roasting pan. Add two cups of good chicken broth from the side of the skillet.
  • Bake in the 425 degrees F heated-oven for 1 hour to 1 hour and 15 minutes or until the hen juices run clean, basting every 15 minutes with the broth. Remove from the oven and cover loosely with foil for 15 minutes before serving.

Cornish Hens With Ancho-Cider Glaze image

Adapted from The Splendid Table's newsletter. Wonderful flavors! The only preparation is toasting the optional pine nuts and slicing an onion, the whole dish is complete in under two hours.

Provided by zeldaz51

Categories     Poultry

Time 2h5m

Yield 4-6 serving(s)

Number Of Ingredients 11

1 large onion, cut into 1/8-inch thick rounds
4 -6 Cornish hens (1 to 1 1/4 pounds each)
salt, pepper
1 quart apple cider, boiled down to about 2/3 cup
1/3 cup cider vinegar
1 tablespoon soy sauce
1 tablespoon dried ancho chile powder or 1 tablespoon other medium-hot chile, to taste
2 tablespoons packed light brown sugar
4 large garlic cloves, minced
salt and pepper
1/3 cup toasted pine nuts (optional)

Steps:

  • Make the hens: About 2 hours before serving, preheat the oven to 400 degrees. Cover the bottom of a large shallow baking pan with the onion rounds. Tie together the legs of each hen with cotton string. Arrange the hens, breast side up, on top of the onion rounds, leaving some space around each bird so the skin will crisp. Season with salt and pepper.
  • Make the glaze: Mix all the glaze ingredients (except salt and pepper) together in a small bowl.Spoon about 2 teaspoons of the mixture over each hen.
  • Place the pan of hens in the preheated oven and reduce the heat to 325 degrees. Roast the hens for 30 minutes, basting with their pan juices once or twice. Then raise the heat back to 400 degrees, baste each hen with about 2 tablespoons of sauce, and continue roasting and basting with pan juices for 20 more minutes, or unril the thickest part of the breast reads 160 degrees on an instant-read thermometer. At this point spoon a bit more sauce over the hens and run them under the broiler briefly, so they turn a deep, rich brown. Watch them carefully so they don't burn.
  • Remove the hens from the pan to a platter and let them rest in a warm placefor 10 to 15 minutes. Set the hens' roasting pan on two burners and remove the onions from the pan. Add any remaining basting sauce/glaze to the pan and raise the heat to medium-high. Using a wooden spatula, scrape any brown bits sticking to the pan and stir as you boil the pan sauce for 3 minutes, or until it's rich tasting and almost syrupy. Taste and adjust for seasoning.
  • To serve the hens, place them on a warm platter, scrape the reduced pan juices over them, and scatter with the optional pine nuts. Serve hot.

ROASTED CORNISH HEN WITH BALSAMIC GLAZE

Roasted Cornish Hen with Balsamic Glaze image

Categories     Sauce     Chicken     Side     Roast     Simmer

Yield makes 4 servings

Number Of Ingredients 14

2 Cornish hens (about 1 1/4 pounds each)
Salt
Freshly ground black pepper
5 fresh rosemary sprigs
10 sage leaves
2 fresh or dried bay leaves
1/4 cup extra-virgin olive oil
2 bunches scallions, trimmed and cut into 2-inch lengths (about 2 cups)
1 cup peeled, trimmed, and thinly sliced carrots
1/2 cup thinly sliced celery
6 slices dried porcini mushrooms
2 cups Chicken Stock (page 74) or canned reduced-sodium chicken broth
3 tablespoons balsamic vinegar
1 tablespoon honey

Steps:

  • Preheat the oven to 425° F. Remove all visible fat and the neck and giblets from the Cornish hens. Rinse the hens under cold water and pat them dry inside and out with paper towels. Season the birds generously with salt and pepper, inside and out. Place one rosemary sprig, 2 sage leaves, and 1 bay leaf in the body cavity of each bird.
  • Heat the oil in a heavy, flameproof roasting pan or very large ovenproof skillet over medium heat. Add the scallions, carrots, celery, porcini, and the remaining rosemary and sage leaves and cook, stirring, until the scallions are wilted, about 4 minutes. Smooth the vegetables into an even layer and nestle the prepared birds, breast side up, over them. Roast, basting frequently with enough of the chicken stock to keep the vegetables well moistened, until the vegetables and hens are golden brown-about 45 minutes.
  • Carefully tilt the pan and spoon off enough of the roasting juices to measure 1 cup, not including fat. Stir the balsamic vinegar and honey into the measured juices until the honey is dissolved. Return the birds to oven and roast, basting occasionally with the honey mixture, until the birds are a rich mahogany color and the leg joint moves easily when you wiggle it, about 15 minutes.
  • Remove the birds from the oven, transfer them to a platter or plates, and cover with a tent of aluminum foil to keep them warm. Strain the pan juices through a sieve into a small saucepan, pressing as much of the liquid from the vegetables as possible. Skim the fat from the surface of the sauce, and bring the sauce to a simmer while carving the birds. With a pair of kitchen shears, cut along both sides of the backbones to remove them. Cut the birds in half through the center breastbone. Cut each half into leg and breast portions. Arrange the pieces on a platter or plates, and spoon some of the roasting juices over them. Pass the remaining sauce separately.
