WALNUT PESTO BROILED CORNISH HENS



Walnut Pesto Broiled Cornish Hens image

1 cup packed flat-leaf parsley leaves
1/2 cup walnuts
1/2 cup grated Pecorino cheese
1/4 cup extra-virgin olive oil, plus more for pan
1 tablespoon finely grated lemon zest
1 small clove garlic
Kosher salt and freshly ground pepper
2 Cornish hens, halved (or 4 whole chicken legs)
Lemons, for serving
Potatoes, for serving

Steps:

  • 1. Set the oven rack on the lowest level and preheat the broiler to high. Line the bottom of a broiler pan with foil and brush with oil.
  • 2. Combine the parsley, walnuts, pecorino, 1/4 cup olive oil, lemon zest, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper in a food processor. Add 1 tablespoon water and process until smooth and creamy, about 30 seconds. (Makes about 1 cup.)
  • 3. Pat the chicken dry and carefully loosen the skin to form a pocket under the skin. Lift the skin, and use a spoon or fingers to stuff about 1/4 cup pesto deep into the pockets of each of the halves, cover as much of the meat as possible without breaking the skin. Season each side of the chicken with salt and pepper. Place the chicken skin-side down on the pan and broil until lightly browned, about 15 minutes. Carefully turn to keep the skin intact and cook the other side until crispy and dark brown, about 10 minutes. Garnish with lemon and serve with potatoes.

12 pearl onions, peeled

1/2 cup fresh peas

Steps:

  • Preheat oven to 400 degrees. Season inside and out of cornish hens. In a bowl combine mushrooms, onions, carrots, peas, 1 tablespoon olive oil, and salt and pepper to taste. Stuff vegetables into cavity of each bird to full capacity. Drizzle hens with remaining oil. Criss-cross 2 bacon slices across each hen, tucking ends under birds to keep in place. Place hens on a roasting rack in a roasting pan and pour chicken stock in bottom of pan. Roast hens 45 minutes to 1 hour or until an instant reading thermometer inserted in thickest part registers 170 degrees. Allow hens to rest, loosely covered with foil, for at least 10 minutes while you finish sauce. Bring sauce to a boil in roasting pan, scraping bottom of pan to incorporate any drippings; season to taste with salt and pepper. To serve, drizzle hens with sauce.

This is a quick chicken soup for weeknights, but it's good enough to eat anytime. If you prefer chicken noodle soup, add pasta.

1 Rock Cornish hens
2 tablespoons vegetable oil
5 stalks celery, chopped
3 large carrots, diced
1 onion, chopped
6 cloves garlic, minced
3 potatoes, peeled and cubed
1 (48 fluid ounce) can chicken broth

Steps:

  • Remove the gizzards, and wash the hen thoroughly. Cut hen into several pieces.
  • Heat oil in a large pot. Add hen pieces, and brown on all sides. Add carrots, celery, onions, garlic, and potatoes; cook until onion is tender.
  • Pour in chicken broth. Use more or less broth to your taste, but make sure to cover all the ingredients in the pot. Bring to a boil, and then reduce heat. Simmer until vegetables are tender and hen is cooked through.
  • Remove hen from pot, and remove meat from the bones. Discard bones. and return meat to soup. Serve.

Chickens Stewed With Chestnuts image

This is a real Cantonese comfort food. The chestnut gives it a very nice sweet flavour to the dish. It is worth the little bit of prep effort.

1 whole chicken, chopped to bite size
1 lb raw chestnuts, shelled but leaving the skin on
10 garlic cloves, peeled and smashed
10 slices young ginger, thin
1/4 cup dark soya sauce
2 tablespoons oyster sauce
1 tablespoon white sugar
1 1/2 cups water (HOT)
1/4 cup canola oil

Steps:

  • Rub 2 teaspoon of the dark soya sauce all over the chicken, and leave it to marinate for 30 minutes.
  • Boil 11 cups of water in a pot, and add the chestnuts and boil for 10 minutes to loosen the skin.
  • Drain and rinse in tap water.
  • This makes the skin easier to remove.
  • Ease off chestnut skins with the tip of a knife.
  • Heat oil in a wok till smoking, stif fry the garlic and ginger, till aromatic.
  • About 1/2 minute.
  • Add chicken and stir fry for 7 minutes or till the chicken changes to white in colour.
  • Add remaining soya sauce, oyster sauce and sugar.
  • Stir fry for a while before adding the HOT water.
  • Stir well (to ensure it is well mixed) and bring to boil.
  • Add the peeled chestnuts, and stew covered on MEDIUM HEAT for about 45 minutes.
  • Till the gravy is thick and the chicken is tender.
  • NOTE 1: Do stir this dish several times, to ensure it doesn't burn.
  • Chicken is ready to be served.
  • NOTE 2: If you have difficulty finding raw chestnut, you can substitute it with 10 Chinese mushroom, soaked in water to soften first.
  • NOTE 3: After the chestnuts have been added, and you have stired for 10 minutes to ensure the chicken is well coated, you can put this dish into your crock pot, and leave it on LOW for 6-8 hours.
  • The meal is ready for you to eat with rice when you return home from work.
