1 Cornish game hens, halved lengthwise
¼ cup orange juice
2 tablespoons honey
2 tablespoons soy sauce
1 tablespoon white vinegar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place game hen halves with skin sides up into a 9x13-inch roasting pan.
  • Roast hens in the preheated oven for 35 minutes.
  • Stir orange juice, honey, soy sauce, and vinegar together in a small bowl; brush mixture over hens.
  • Roast hens for 5 more minutes and baste again with orange juice mixture. Roast until skin is browned and meat is no longer pink inside, about 10 more minutes.

1/4 cup butter, melted
1 teaspoon salt
1/2 teaspoon pepper
3/4 cup orange juice
1/2 cup packed brown sugar
1/2 cup Madeira wine, sherry or chicken broth
2 tablespoons lemon juice
1 teaspoon ground mustard
1/4 teaspoon ground allspice

Steps:

  • Preheat oven to at 350°. Tie legs of each hen together; turn wing tips under backs. Place on a greased rack in a roasting pan. Brush with butter; sprinkle with salt and pepper. Bake, uncovered, for 1 hour., Meanwhile, in a saucepan, combine the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 15 minutes. Spoon over hens. Bake until a thermometer reads 170°, about 15 minutes longer.

1 lemon, zested and juiced

½ cup honey
¼ cup Dijon mustard

Steps:

  • Mix olive oil, 1 tablespoon Dijon mustard, lemon zest and juice, orange zest and juice, garlic, salt, and black pepper together in a large resealable bag. Add hens, seal bag, and coat hens with marinade. Refrigerate for at least 1 hour, flipping the bag 1 or 2 times to redistribute marinade.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Mix orange juice, soy sauce, honey, 1/4 cup Dijon mustard, onion, ginger, and black pepper together in a bowl.
  • Remove hens from marinade and transfer to a roasting pan, discarding leftover marinade.
  • Roast hens in the preheated oven for 50 minutes. Brush hens with orange glaze and roast for 5 more minutes. Flip hens, brush with more glaze, and roast until meat is no longer pink in the center, about 5 more minutes. 2 (1 1/4 lb) Cornish hens
salt, for cavity
2 tablespoons melted butter
1/4 cup orange marmalade
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon grated ginger
1 cup milk
1/2 cup orange marmalade

Steps:

  • Preheat oven to 350*.
  • Rinse hens and salt the cavity and outside of birds.
  • Place in a shallow, oiled baking pan.
  • Brush hens with 2 TBS melted butter.
  • Bake in 350* oven for an hour, until golden brown.
  • Brush hens with 1/4 cup of the orange marmalade and bake an additional 10 minutes.
  • To make the sauce, melt 2 TBS butter in a small saucepan, over medium heat.
  • Stir in flour and ginger, then gradually add the milk.
  • Cook over medium heat, stiring constantly, until mixture just comes to a boil and thickens.
  • Remove from the heat.
  • Stir in the remaining 1/2 cup marmalade, then pour the sauce over the game hens.

4 Cornish hens
1 3/4 cups cooked long grain and wild rice blend
1/2 cup chopped onion
1 tablespoon butter
1/2 cup grated raw apple
1/2 cup raisins or 1/2 cup craisins
1/4 teaspoon poultry seasoning

melted butter
1 (6 ounce) can frozen orange juice concentrate
1 cup light brown sugar
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F.
  • Saute the chopped onions in the tablespoon of butter until soft.
  • Mix rice, onions, apple, raisins and poultry seasoning together in a small bowl.
  • Season the cornish hens well inside and out with salt and pepper.
  • Place 1/2 cup stuffing into each hen cavity.
  • Brush hens liberally with melted butter.
  • Place hens, breast side up in a shallow baking pan.

4 Cornish hens, thawed, rinsed and patted dry
4 oranges
salt
pepper
parsley
cornstarch

Steps:

  • Preheat oven to 500°F.
  • Prepare hens by rubbing mixture of salt and pepper into skin liberally.
  • Place on cookie sheet, breast side up.
  • Roast for 15 minutes at 500°F.
  • Remove from oven and turn breast down; pour 1 1/2 cups water over hens.
  • Turn oven down to 425°F and continue to cook for 1/2 hour.
  • Meanwhile, use a zester to obtain orange peel without cutting into pith of fruit.
  • Slice oranges in half and squeeze juice.
  • Place juice in saucepan with zest and heat thoroughly (do not boil).
  • Remove hens from oven and turn breast-side up and continue cooking for additional 1/2 hour (total cooking time is 1 hour 15 minutes).
  • Blend cornstarch with orange juice/zest mixture and heat to thicken, stirring constantly.
  • To serve: Place hen on plate and pour sauce over. Sprinkle with additional orange zest and parsley.

1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter, melted, can use margarine
1/4 cup orange juice
1/4 cup honey
1/2 cup orange juice
2 tablespoons honey
1/2 teaspoon cider vinegar
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • To make the hens, place them on a rack in a shallow baking pan.
  • Tie legs together with kitchen cord if desired.
  • Sprinkle with salt and pepper(and garlic powder if using).
  • Combine the butter, orange juice and honey and spoon over the hens.
  • Bake, uncovered, at 350 degrees F. for 1 hour or until a meat thermometer reads 165 degrees F. and juices run clear, basting every 15 minutes.
  • Meanwhile for the sauce, combine the orange juice, honey and vinegar in a small saucepan.
  • Combine the cornstarch and water in a cup until smooth; stir into the orange juice mixture.
  • Bring to a boil; cook for 1 minute or until thickened. Serve with the hens.

This is a very tasty way to prepare cornish hens. It's another family favorite we've served for years. Tarragon goes so well with poultry.

1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon dried tarragon
1 garlic clove
garlic salt
olive oil (or other oil)
3/4 cup butter
3/4 cup dry white wine (or chicken stock)
1 tablespoon dried tarragon

Steps:

  • Preheat oven to 450 degrees.
  • Make basting sauce by melting butter in small sauce pan and stirring in wine (or broth) and tarrgon.
  • Sprinkle inside of each hen with salt, pepper, tarragon, and garlic.
  • Lightly coat outside of hen with olive (or other) oil.
  • Liberally sprinkle outside of hen with garlic salt.
  • Tie hen legs together if possible (I've also made these without doing this step).
  • Place hens in oven.
  • Let hens cook about 15 minutes before starting to use the basting sauce. After each basting, I will occasionally sprinkle more garlic salt over the hens.
  • Continue to baste hens every 15 minutes or so until done. If hen wings or top start to darken too much, cover those areas with foil.
  • When hens have finished cooking, remove to serving platter.
  • optional - I place the strained drippings in a bowl (skimming off some of the butter) and use this as a 'gravy' for the hens and any suitable rice/potato dish that may accompany them.
  • Use your meat thermometer to determine doneness as it varies according to hen weight.

3 Cornish hens

3 1/2 tablespoons butter, softened
3 tablespoons olive oil (or peanut oil)
2/3 cup madeira wine
1/2 cup heavy cream
1 teaspoon cornstarch (optional)

Steps:

  • Remove broiler pan and put chicken stock in it.
  • Preheat the broiler.
  • Cut hens into halves and season with salt and pepper. Brush with butter and sprinkle with oil and place in broiler about 6 inches from heat for 35-30 minutes; turning and basting every 10 minutes.
  • The hens will be done when juices run clear or yellow.
  • Remove to a warm serving dish, cover with foil and keep in the turned off oven while finishing the sauce.
  • Deglaze the broiler pan with the madeira wine, scraping bottom of pan with a fork to gather all sediment.
  • Set pan over heat and warm and stir in cream by spoonfuls. Simmer 3 minutes and taste. Add salt and pepper.
  • Use cornstarch, if you with to thicken, by diluting with 1-2 tablespoons cold water.
  • Take hens out of oven and serve with the sauce drizzled over it.

1 lemon, quartered
4 sprigs fresh rosemary
3 tablespoons olive oil
24 cloves garlic
⅓ cup white wine
⅓ cup low-sodium chicken broth
4 sprigs fresh rosemary, for garnish

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Rub hens with 1 tablespoon of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen. Arrange in a large, heavy roasting pan, and arrange garlic cloves around hens. Roast in preheated oven for 25 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). In a mixing bowl, whisk together wine, chicken broth, and remaining 2 tablespoons of oil; pour over hens. Spoon sauce and garlic around hens. Garnish with rosemary sprigs, and serve.

Cornish Game Hens With Kumquats and Orange Liqueur Sauce image

My family calls games hens "Bak-baks." Any family crazy enough to nickname poultry is crazy enough to cook with kumquats. We have our own kumquat tree, so the hunting and gathering is kept to a minimum. I've served this for Thanksgiving instead of roast turkey - a very nice change!

2 large rock cornish game hens
chicken giblets, from rock cornish game hen (optional)
50 kumquats (about)
1 bunch fresh tarragon
6 large garlic cloves
1/4 cup frozen orange juice concentrate
2 tablespoons granulated sugar
2 tablespoons sifted flour
2 tablespoons orange liqueur
1 (10 ounce) can chicken broth
1/2 cup water

Steps:

  • Preheat oven to 375 degree Fahrenheit.
  • Remove tarragon leaves from the stems; place aside. Wash and dry kumquats; slice in half and remove all seeds; place aside. Crush, dice, or press the garlic cloves; place aside. Rinse game hens with cold water and pat dry.
  • Separate the skin from the game hen's breast. Push in the tarragon leaves and crushed garlic under the skin; the skin protects the leaves and garlic from burning. Place tarragon stems inside the hen's cavity, along with about 35-40 seeded kumquats.
  • Place game hens on a raised rack in a roasting pan. Add 1/2 cup of water to the bottom of the pan to prevent the juices from burning. Cook for about one and ½ hours at 375 degrees Fahrenheit. Baste frequently and replenish the water in the pan as needed.
  • Optional: Place giblets in a saucepan and cover with water. Cook over medium heat until done, about 1 hour. Remove and allow to cool. Chop and set aside.
  • Coarsely chop the remaining 10 to 15 kumquats. In a sauce pan, combine the orange juice, sugar, and kumquats. Bring to a slow boil and reduce heat to a low simmer. Stir frequently and cook until done, about 30 to 45 minutes. Set aside.
  • Remove the game hens from the oven after 90 minutes or when golden brown and done. Transfer the game hens to a serving platter. Remove and discard the tarragon stems. Reserve the cooked kumquats and decoratively place around the hens.
  • Deglaze the roasting pan and transfer the drippings to a saucepan. Carefully add the flour to make a roué. Add chicken broth and cook over medium heat until the gravy is thickened, about 5 to 10 minutes. Add giblets (optional).
  • Combine the orange liqueur with orange juice/kumquat sauce and add to gravy. Simmer another 5 minutes. Transfer to gravy boat.
  • Carve game hens and serve each portion with gravy and kumquats.
