2 teaspoons salt
2 Cornish hens, thawed
1/2 cup butter, melted
1 cup white wine
1/2 teaspoon tarragon

Steps:

  • Sprinkle Salt on each Hen.
  • Place Hen on a shallow baking pan.
  • Mix butter, wine and the tarragon in a bowl.
  • Pour 1/4 of the mixture over each hen.
  • Bake at 350 for 30 minutes.
  • Pour 1/2 of the remaining butter mixture over each hen and bake 25 more minutes.

1 tablespoon salt
2 tablespoons lemon-pepper
1 tablespoon dried basil
1 tablespoon poultry seasoning
2 tablespoons olive oil
6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.

Crispy and juicy with a delectable sauce of wine and thyme. Very quick and easy to make if you've prepared the garlic oil ahead You'll be licking your fingers in short order. This dish is a bit oily but for a special treat, it's wonderful. Substitute any favorite herb for the thyme, if desired. From Rozanne Gold, a favorite cookbook author. Prep and cook times for the garlic oil are not included below. It will take about 20 minutes to prepare the garlic oil if it's used while still warm.

16 garlic cloves, peeled
2 cups olive oil
2 bay leaves
1/2 teaspoon black peppercorns
1 1/2 lbs Cornish hens
salt & freshly ground black pepper
3 tablespoons garlic oil, plus more for drizzling, if desired
1/2 cup dry white wine
1 tablespoon fresh thyme leave

Steps:

  • Garlic Oil: Gently heat garlic and oil in a small saucepan for 5 minutes, until bubbles form on top; turn heat off and add bay leaves and peppercorns.
  • Steep and cool; can be kept, refrigerated, for 2 weeks.
  • Cornish Hen: Cut the hen along its backbone with kitchen shears; butterfly with hands; sprinkle with salt and pepper.
  • In a nonstick skillet large enough to hold the flattened hen, heat the oil over medium heat; add the hen, skin side down and weight down evenly with an aluminum foil-wrapped brick.
  • Cook, turning every 2-3 minutes until golden brown and cooked through; remove hen to serving plate (s).
  • Pour the wine into the skillet, add the thyme and reduce over high heat, scraping up browned bits, until thickened; pour over hen and serve immediately, drizzling with Garlic Oil if desired.

2 Cornish game hens, halved
1 cup chopped parsley
3 tablespoons olive oil
5 cloves garlic, chopped
salt and pepper to taste
2 tablespoons chopped fresh rosemary
1 cup white wine

Steps:

  • In a small bowl, combine the garlic, parsley, and 2 tablespoons olive oil.
  • Rinse hens and pat dry. Rub remaining 1 tablespoon olive oil on the inside and outside of the hens. Stuff the garlic and parsley mixture under skin and around each bird. Season with salt and pepper. Place seasoned hens in an airtight, plastic container. Sprinkle with rosemary, and pour wine over birds. Cover, and refrigerate at least overnight to marinate.
  • Preheat grill for low heat.
  • Remove hens from marinade, and place on heated grill. Cook for 40 minutes, turning once, or until done.

1 large onion, minced
2 tablespoons butter or 2 tablespoons margarine, melted
2 cups fresh mushrooms, sliced
1/2 cup diced cooked ham
1 1/2 cups cooked wild rice
2 -4 tablespoons brandy
1/4 teaspoon dried marjoram
1/4 teaspoon dried whole thyme
6 (1 lb) Cornish hens
fresh coarse ground black pepper
2 -4 tablespoons dry sherry
1/4 cup chicken broth
1/4 cup brandy

Steps:

  • Sauté onion in butter until tender; add the mushroom and ham and cook 3 to 5 more minutes or until the mushrooms are tender. Combine the mushroom mixture, rice, 2 to 4 tablespoons brandy, marjoram, and thyme.
  • Remove the giblets from hens (reserve for another use). Rinse hens with cold water and pat dry. Sprinkle with salt and pepper. Stuff hens lightly with rice stuffing. Close cavity and secure with toothpicks. Truss and place the hens breast side up in baking pan large enough to fit them.
  • Bake hens at 350°F for 1 1/4 to 1 1/2 hours, depending on the hens' size.
  • Place hens on serving platter.
  • Combine the sherry and chicken broth; brush over hens. Heat 1/4 cup brandy in a small saucepan over medium heat (do NOT boil). Ignite with a long match and pour over hens after the flame dies down. Serve immediately.

Game hens are one of our favorite meals and look really impressive for company. I've tried many different recipes and have finally found what we consider the best way to prepare them. Goes great with fresh steamed green beans and red onions or rice side such as rice pilaf or wild rice.

2 cornished rock cornish game hens, thawed
1 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon seasoning salt
4 -5 fresh garlic cloves, peeled
1/4 cup chicken and rib rub seasoning
1 cup white wine
1/2 cup butter, melted

Steps:

  • Wash hens in cold water and pat dry.
  • Add 1/2 teaspoon of each dry spices to cavity of hens.
  • Cut garlic cloves in half lengthwise and stuff cavities (amount needed may vary, but stuff them well).
  • Very generously sprinkle the entire outside of hens with chicken and rib rub. Make sure you get in between the wing ans legs by the body.
  • Place in 7X11 nonstick baking pan and pour white wine and melted butter around hens.
  • Bake uncovered at 350 degrees until done (approx 1 hr 15 mins) basting a few times the last 20 minutes or so.

6 Cornish hens, 1-1/2 lbs each
salt & pepper (to season)
6 slices pancetta
2 large vidalia onions, thickly chopped
1/4 cup balsamic vinegar
1/4 cup honey
1/4 cup hoisin sauce

Steps:

  • allow cornish hens to come to room temperature.
  • remove backbone from hens, and butterfly them so they are lying flat.
  • salt and pepper hens on both sides to your liking.
  • have 2 bricks wrapped well in aluminum foil ready.
  • preheat oven to 450 degrees.
  • fry pancetta in heavy lg. frypan or cast iron skillet until crisp. remove bacon.
  • add 2 game hens at a time to skillet, skin side down, on medium heat, and top each hen with a brick. add a few chopped onions in pan for flavor, and cook for 5-6 minutes do this for every 2 hens you put in the skillet.
  • mix vinegar, honey & hoisin sauce on low heat in small saucepan.
  • when all game hens are removed from skillet, place in large aluminum pan(for easy cleanup) skin side up.
  • baste with glaze from small saucepan.
  • place hens in 450 degree oven for 15 mins., basting once with glaze.
  • take out of oven, let hens rest for 10 minutes.
  • SERVE AND ENJOY.
