Another simple fish recipe with what I had in my kitchen. This turned out so yummy. Next time, I have to put the cornflakes in the food processor to chop up finer.

Ingredients

4 slice cod
1 c corn flakes, crushed
1 - 2 Tbsp onion, minced
1/4 c butter, approx
1 c buttermilk
1 1/2 tsp lemon pepper
salt

Steps:

1. Crush your cornflakes (better than I did), add minced onion and melted butter. Set aside.
2. seasonings
3. Season fish with salt and pepper and then with the lemon citrus peel
4. Pat your cornflake mixture to the top of fish.
5. Fish out of oven and ready to plate.
6. Cornflake Crusted Cod over a bed of grain rice with side of steamed broccoli & cheese.

1 ½ cups cornflakes cereal crumbs
⅓ cup white sugar
⅓ cup butter, melted

Steps:

Mix cornflakes, sugar, and butter or margarine together thoroughly. Press into an 8 or 9 inch pie plate. Chill.

I have been making this recipe since 1982! Super easy to make - it can almost be made as visitors drive in if you have pre-chopped dates in the pantry.

Number Of Ingredients 5

Ingredients

1 cup brown sugar
8 ounces chopped dates
4 ounces butter
4 cups corn flakes
4 tablespoons desiccated coconut

Steps:

Lightly grease a swiss roll pan and place a thin layer of coconut on the bottom.
In a large saucepan, mix, melt and mash together the sugar, dates and butter.
Add the cornflakes and mix well.
Place the above filling into the tin and press lightly, with a fork, onto the layer of coconut.
Sprinkle a further layer of coconut onto the filling and lightly press down.
This is best cut into pieces when it is still luke warm.
Keep in the 'fridge or in the freezer.

60 large marshmallows
2/3 cup margarine or 2/3 cup butter
5 cups corn flakes
2/3 cup chopped pecans
2/3 cup chopped almonds
2/3 cup shredded coconut
1 teaspoon vanilla

Steps:

Melt marshmallows and margarine.
Add vanilla.
Add the rest & stir.
Put into a greased 9x13-inch pan.
Chill.
