1/2 cup soy sauce
1/4 cup water
2 tablespoons sweet rice wine
1 1/2 tablespoons brown sugar
1 tablespoon honey
1/4 cup sugar
1 1/2 teaspoons garlic, minced
1 1/2 teaspoons gingerroot, grated
1 teaspoon toasted sesame oil
1/2 tablespoon cornstarch
1 tablespoon water

Steps:

  • Combine ingredients in a saucepan on medium heat until the sugar is dissolved.
  • To make glaze: Mix 1/2 tablespoon cornstarch with 1 tablespoon water. Heat sauce on medium high heat and add cornstarch water mixture. Simmer until thickened about 1 minute.

Another take on citrus teriyaki glaze. I like both of my recipes and use them each for the same items....chicken and salmon...but they are each slightly different so it just depends on my mood!

1 cup orange juice
2 tablespoons minced ginger (more if you prefer)
1/4 cup green onion, chopped fine
1/2 cup teriyaki sauce
3 tablespoons lime juice
2 garlic cloves, minced

Steps:

  • Mix ingredients together in a saucepan.
  • Heat to a mild boil. Stirring frequently cook 5-10 minutes to reduce to a glaze.
  • Serve over salmon, chicken or pork.
  • You can mix ingredients together and use as a marinade for salmon, chicken or pork. Marinate for three hours. Make sure you reserve some to cook for a glaze later.

1/4 cup teriyaki baste and glaze (from 12-oz bottle)
1/4 cup frozen (thawed) orange juice concentrate
2 teaspoons grated orange peel
1/2 lb uncooked chicken breast tenders (not breaded)
1 cup sugar snap pea pods
1 cup sliced fresh mushrooms (3 oz)
1 medium zucchini, cut into 1/2-inch slices (2 cups)
1/2 medium red bell pepper, cut into 1-inch pieces (3/4 cup)

Steps:

  • In small bowl, mix teriyaki glaze, orange juice concentrate and orange peel. Reserve 2 tablespoons mixture. Add chicken to remaining mixture; toss to coat. Cover and refrigerate 30 minutes.
  • Meanwhile, heat gas or charcoal grill. Place grill basket (grill "wok") over medium heat. Remove chicken from marinade; discard marinade. Place chicken in grill basket.
  • Cover and grill over medium heat 6 to 8 minutes, shaking basket or stirring chicken occasionally, until chicken is brown.
  • Add remaining ingredients to grill basket. Cover and grill 6 to 8 minutes, shaking basket or stirring occasionally, until vegetables are crisp-tender and chicken is no longer pink in center. Add 2 tablespoons reserved marinade; stir to coat vegetables and chicken. Cover and grill 2 to 3 minutes or until heated through.

1 tablespoon sesame oil
2 teaspoons minced garlic
1 teaspoon minced ginger
3/4 cup orange juice
1 cup teriyaki sauce
1/4 cup brown sugar
1/2 teaspoon Chinese five spice powder
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Begin to heat sesame oil in a saute pan. Add garlic and ginger and lightly saute.
  • Add orange juice and bring to a simmer. Add teriyaki sauce and brown sugar. Bring to a simmer and hold for 5 minutes at the simmer.
  • In a small bowl, mix cornstarch and water thoroughly. Mix into teriyaki mixture slowly, stirring with a wire whisk.
  • Continue to cook until just thinner than gravy. Serve over meat of your choice. Top with sesame seeds.
  • For the chicken fritters, toss lightly.

This is not your typical chicken fajita recipe. The chicken is very flavorful and the glaze adds just the right amount of sweetness.

1/2 cup teriyaki sauce
1/2 bunch fresh cilantro, chopped
2 garlic cloves, crushed
1/2 lime, juice
1/2 teaspoon cumin
16 boneless skinless chicken tenderloins
1/2 cup low sodium soy sauce
1/2 cup grapefruit juice
1/8 cup hoisin sauce
1/8 cup ketchup
1/8 cup brown sugar
2 garlic cloves, crushed
1 inch piece gingerroot, chopped fine
1 1/2 teaspoons rice vinegar
1 teaspoon sriracha sauce
1 onion, sliced
1 red bell pepper, sliced
2 tablespoons olive oil
2 tablespoons butter
10 tortillas (preferably whole wheat)
2 cups colby cheese, shredded

Steps:

  • In zip top plastic bag, mix together marinade ingredients. Add chicken and refrigerate.
  • Prepare teriyaki glaze by combining all of the ingredients in saucepan over medium heat. Bring to a slow simmer and cook, stirring occasionally, until glaze thickens.
  • Caramelize onions and peppers in oil and butter in skillet over medium heat.
  • Set aside some of the teriyaki glaze for serving. Brush remaining teriyaki glaze on chicken and broil about 6 inches from heat. Continue basting with teriyaki glaze until chicken is cooked through and no longer pink inside (about 10 to 15 minutes).
  • To serve, pile shredded lettuce on plate. Divide chicken and caramelized vegetables among 10 tortillas. Drizzle teriyaki glaze on top and cover with shredded cheese.

Steps:

  • Combine the 1 cup water, brown sugar, soy sauce, honey, garlic and ginger in a medium saucepan and set over medium heat.
