Steps:

  • In a medium bowl, stir together the strawberries, mangoes, orange juice, lime zest and agave nectar (or honey).
  • Serve immediately or refrigerate (covered) for up to 1 day. It is best served within a few hours.

Steps:

  • Place the sugar, oil, salt, and vinegar in a jar with a lid. Seal jar, and shake vigorously to mix.
  • In a large bowl, mix salad greens, sweetened dried cranberries, strawberries, mango, and onion. To serve, toss with dressing and sprinkle with almonds.

2 cups spring mix salad greens
1/2 cup chopped peeled mango
1/2 cup sliced fresh strawberries
2 tablespoons dried cranberries
3 tablespoons olive oil
4 teaspoons sugar
1 tablespoon balsamic vinegar
Dash salt
2 tablespoons slivered almonds, toasted

Steps:

  • In a serving bowl, combine the salad greens, mango, strawberries and cranberries. In a small bowl, whisk the oil, sugar, vinegar and salt. Pour over salad; toss to coat. Sprinkle with almonds.

12 ounces chicken breast
4 cups salad greens (spinach or spring mix, arugula, romaine, etc.)
1 medium mango,
1 cup sliced strawberries
1/2 small red onion, thinly sliced
2oz goat cheese, crumbled
1 small ripe avocado; pitted, fleshed and sliced or chopped
1/4 cup sliced almonds (or use sunflower seeds or pepitas)
1/4 cup light olive oil
3 TBSP lime juice (about 1 lime; add zest for extra flavor)
3 TBSP honey
1 TBSP non-dairy milk
1/2 tsp dijon or stone ground mustard
1/4 tsp onion powder
1/4 tsp salt, or to taste
1 TBSP poppy seed dressing

Steps:

  • Heat cast iron skillet or grill pan over medium heat. Once pan is hot, add about 1/2 tablespoon of oil. Trim any extra fat off chicken breast and pound as needed to create even thickness. Season chicken with salt & pepper; cook on one side for 3-4 minutes before flipping to other side and cooking through. Cook until middle is no longer pink or internal temperature is 165ºF. Place on cutting board and slice chicken. (Or use outdoor grill.)
  • In large bowl add greens, diced mango, sliced strawberries and sliced onions. Toss with tongs to mix salad together well.
  • add all ingredients *except poppy seeds* into small blender or food processor. Process until smooth, then stir in poppy seeds.
  • Portion out salad for desired servings; adding grilled chicken and top with avocado, goat cheese, sliced almonds. Drizzle with lime poppy seed dressing and enjoy!

  • Pound chicken breast to an even 1-inch thickness using a meat mallet or a rolling pin; place in a resealable plastic bag.

  • Combine strawberries, vinegar, oil, honey, Dijon mustard, poppy seeds, and salt in a blender. Blend on high speed until smooth, 15 to 20 seconds. Refrigerate until ready to use.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove chicken from marinade. Place chicken on the hot grill; discard leftover marinade.
  • Close the grill lid and lower the heat to medium. Grill until chicken is no longer pink in the center and juices run clear, 10 to 12 minutes, turning halfway through. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer to a plate to rest and cool for 10 minutes. Slice chicken on the diagonal.
  • Place arugula on a large platter. Top with sliced chicken, mango, strawberries, avocado, red onion, pine nuts, and feta cheese. Drizzle with dressing and serve.
