Here's a casserole you can make the night before the big holiday-morning spread, leaving you free to tie up other details. It's kind of like a fat Western omelet supercharged with crispy potato tots: hearty enough to be the main dish, fun for the kids and even gluten-free.

3 tablespoons vegetable oil, plus more for greasing the baking dish
6 cups frozen potato tots, from a 32-ounce bag (about 28 ounces)
1 small yellow onion, finely chopped
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
Kosher salt and freshly ground black pepper
1/2 pound sliced deli corned beef, cut into 1/2-inch pieces
8 large eggs
1 1/2 cups whole milk
3/4 teaspoon dry mustard
4 dashes hot sauce, or to taste
1 1/2 cups shredded Cheddar

Steps:

  • Preheat the oven to 450 degrees F. Grease a 9-by-13-inch baking dish with oil. Fill the bottom of the dish with one layer of the potatoes (about 4 cups). Drizzle the potatoes with 1 tablespoon of the oil. Bake until hot and crisp, about 20 minutes. Let cool for 15 minutes.
  • Meanwhile, heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Add the onions and red and green peppers. Season with 1/2 teaspoon salt and a few grinds of black pepper. Cook, stirring occasionally, until the vegetables have softened and started to brown, about 6 minutes. Add the corned beef, and cook for 2 minutes more. Let cool.
  • Whisk together the eggs, milk, mustard, hot sauce, 1/2 teaspoon salt and 1/4 teaspoon ground black pepper in a large bowl.
  • Sprinkle 1/2 cup of the Cheddar over the potatoes in the casserole dish. Layer the vegetable-beef mixture over the Cheddar. Pour the egg mixture into the dish and top with the remaining cup of Cheddar. (The casserole can be assembled up to this point and refrigerated overnight. Remove from the refrigerator 30 minutes before baking.)
  • Preheat the oven to 350 degrees F. Top the casserole with the remaining potatoes (about 2 cups). Bake until the egg mixture is set and the top is lightly golden brown, 50 to 60 minutes. Let cool for 15 minutes before serving warm or at room temperature.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat the vegetable oil in a skillet over medium heat. Add the onion, and cook until the onion has softened and turned translucent, about 5 minutes. Meanwhile, spread the baked beans in a casserole dish. Toss the corned beef with the tomato puree and Worcestershire sauce in a bowl and sprinkle over the beans. Spread the onions overtop, followed by the mashed potatoes. Finally, sprinkle with the shredded Cheddar cheese.

1 (14.5 ounce) can corn, drained
1 (10.75 ounce) can cream of celery soup
1 cup shredded Cheddar cheese
½ cup sour cream
½ cup diced celery
½ cup onion, chopped
1 sleeve buttery round crackers (such as Ritz®), finely crushed
¼ cup butter, melted
7 tablespoons slivered almonds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine green beans, corn, soup, Cheddar cheese, sour cream, celery, and onion in a bowl. Mix thoroughly. Pour vegetable mixture into a 8-inch square baking dish and spread evenly.
  • Combine crackers and melted butter in a small bowl. Mix well, coating crackers with the butter. Pour over the vegetable mixture in the baking dish and spread evenly without stirring. Sprinkle almonds on top.

2 cups cooked corned beef (or canned)
1 medium onion, finely chopped
2 teaspoons celery seeds
salt, to taste
fresh ground black pepper, to taste
1 1/2 cups shredded American cheese (or combination American/Cheddar cheese)
1 (10 3/4 ounce) can cream of celery soup
1/2 cup evaporated milk

Steps:

  • Lightly butter a 3 1/2- or 4-quart crockpot.
  • Sprinkle about one-fourth of the potatoes in, followed by one-third of the onion and one-third of the corned beef.
  • Sprinkle with celery seed, salt and pepper.
  • Repeat two more times, ending with the remaining potato, 1/2 cup cheese, and another sprinkling of salt, pepper, and celery seed.
  • Mix together the cream of celery soup and evaporated milk; pour over the potato mixture.
  • Cover and cook on LOW for 7 to 9 hours.

Our family is trying to cut calories and fat wherever we can, so I came up with this mixture of a hash brown casserole and a green bean casserole. All of the hash brown recipes used a lot of butter, but I only used a couple of tablespoons of Smart Balance stick butter. Make sure the green beans are drained very well and although I only used one can in my recipe feel free to use more. I was going to chop up some leftover Corned Beef, and throw it in too but I didn't have it but it was great just as is.

1 (20 ounce) bag shredded hash browns, thawed
1 large onion, Chopped
1 (10 ounce) can 98% fat-free cream of mushroom soup
1 -2 French style green bean, drained well
1/2 cup fat free sour cream
4 tablespoons melted margarine (Smart Balance sticks)
1/2 cup reduced-fat sharp cheddar cheese, divided or
1 (10 ounce) can 98% fat-free cheddar cheese soup

1 white onion, finely chopped
1 bell pepper, finely chopped
2 medium baking potatoes, peeled and shredded (about 2 cups)
4 tablespoons unsalted butter
4 large eggs
Kosher salt and freshly ground pepper
4 slices cheddar cheese (about 2 ounces)

Steps:

  • Heat the oil in a medium skillet over high heat. Add the corned beef and cook, stirring with a wooden spoon, until it releases some fat and browns slightly, about 3 minutes. Stir in the onion, bell pepper and potatoes and cook, undisturbed, until brown and crisp on the bottom, about 6 minutes. Continue cooking, turning the hash as it browns evenly, about 15 more minutes.
  • Meanwhile, heat the butter in a nonstick skillet over medium-high heat. Fry the eggs sunny-side up or over easy; season with salt and pepper.

1 can (15-1/4 ounces) whole kernel corn, drained
1 can (12 ounces) corned beef
1 tube (12 ounces) refrigerated buttermilk biscuits

Steps:

  • In a large saucepan, cook onion in butter over medium heat until tender; remove from the heat. Stir in the flour, salt, Worcestershire sauce and pepper until blended. Gradually add the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the potatoes, corn and corned beef., Transfer to a greased 13-in. x 9-in. baking dish. 12 ounces leftover cooked corned beef, cut into 1/2 inch cubes
1 lb baking potato, peeled, cut into 1/2 inch cubes
1/2 teaspoon salt
1 tablespoon butter
1 medium onion, chopped
1 green bell pepper, chopped
1/4 cup whole milk or 1/4 cup half-and-half
3 tablespoons chopped parsley
3 tablespoons dry white wine
1/2 teaspoon dry mustard
1 tablespoon butter
salt and pepper

Steps:

  • In large saucepan, bring water to a boil.
  • Add potatoes and salt. Return to a boil and cook 5 minutes then drain well.
  • Melt 1 tablespoon butter in large nonstick skillet over medium-high heat; add onion and bell pepper. Cook 2 minutes or until crisp-tender, stirring occasionally.
  • Place in large bowl. Add beef, potatoes, milk and parsley to onion mixture and mix lightly.
  • Combine wine and mustard then stir into beef mixture and mix well.
  • Wipe out skillet with paper towel; heat over medium heat until hot. Add remaining butter. Add beef mixture, pressing down firmly.
  • Cook 15 minutes or until browned, turning several times.

A traditional storecupboard supper of fried potatoes with thrifty corned beef. Serve with baked beans for a simple lunch or supper.

500g potato, peeled and chopped
2 tbsp vegetable oil
1 onion, roughly chopped
340g can corned beef, cut into cubes
2 tbsp Worcestershire sauce
baked beans and a little curly parsley, roughly chopped, to serve (optional)

Steps:

  • Put the potatoes in a pan, cover with cold water and bring to the boil. Cook for about 6-7 mins, then drain.
  • Heat the oil in a non-stick frying pan and cook the onion for 3-4 mins over a medium heat. Add the potatoes and corned beef, and push down with a spatula to crisp up, cooking for about 5 mins. Turn the mixture over, trying not to break up the meat and potatoes too much, then add the Worcestershire sauce. Cook for another 5 mins, pushing down to crisp the base again. Season a little, then serve with baked beans and a sprinkling of parsley, if you like.

1 tablespoon sofrito sauce
1/2 cup tomato sauce

  • Heat butter in a skillet or frying pan; add sofrito & tomato sauce, sauting for about 3 minutes.
  • Add frozen green beans. Cover and cook over moderate heat for about 10 minutes, stirring occasionally.
