- Preheat the oven to 300 degrees F.
- Place the corned beef in a colander in the sink and rinse well under cold running water.
- Place the corned beef in a large Dutch oven with a tight-fitting lid, add the water, bay leaves, peppercorns, allspice and cloves. Bring to a boil, uncovered, and skim off any scum that rises to the surface. Cover and transfer pan to the oven, and braise until very tender, about 3 hours and 45 minutes.
- Transfer the corned beef to a cutting board and cover tightly with foil to keep warm. Add the cabbage and potatoes to the cooking liquid and bring to a boil. Lower the heat and simmer until the vegetables are tender, about 20 minutes.
- Using a slotted spoon, transfer the cabbage to a large platter. Slice the corned beef across the grain of the meat into thin slices. Lay the slices over the cabbage and surround it with the potatoes. Ladle some of the hot cooking liquid over the corned beef and season with pepper. Serve immediately with the mustard or horseradish sauce.
- In a small bowl, mix together the mayonnaise, sour cream, horseradish, zest, and 2 teaspoons salt. Season generously with pepper to taste. Refrigerate the horseradish sauce for at least 30 minutes before serving.

- Pour the stock into a large 4-gallon stockpot over medium-high heat and bring to a simmer. Add the pickling spice, garlic, bay leaves and cloves. Reduce the heat to medium, then add the beef and cabbage simmer until tender, 3 hours. Season with salt and pepper.
- Heat a few inches of oil to 325 degrees F in a deep pot.
- Fry the potatoes wedges until tender, 6 to 7 minutes. Remove and season with salt and pepper.
- To build the plate, place wedges of cabbage on a plate with corned beef next to it, then add potatoes and finish with 2 to 3 ounces of the cooking broth on top.
BEER BRAISED CORNED BEEF WITH RED POTATOES AND CARROTS

- Preheat the oven to 250 degrees F.
- Put the corned beef into a large roasting pan (preferably with a lid). Add the garlic, shallots, pickling spice, caraway seeds, beer and whiskey. Cover and place in the oven. Braise 3 hours, turning the meat once. At the end of the 3 hours, add the carrots, potatoes and dill. Cover again and place back in the oven for an additional 2 hours. Remove from the oven. Line a platter with kale leaves, place the corned beef in the center and mound the carrots and potatoes around it. Serve immediately.
BRAISED CORNED BEEF BRISKET
You have never had corned beef like this and if you try it, I truly believe you will never go back to the traditionally 'boiled' beef. This recipe was given to my mother-in-law during WWII by her Jewish boarding house owner and it has become a treasured family recipe. Unlike the commonly boiled corned beef, this is a slow braise that is tender, flavorful, and has a caramelized surface when it's done. I serve it with colcannon, steamed cabbage wedges, braised carrots, and parsnips. It is our favorite St. Patrick's/Jewish dinner, but we love it so much that I cook it year around.

- Preheat oven to 275 degrees F (135 degrees C).
- Discard any flavoring packet from corned beef. Brush brisket with browning sauce on both sides. Heat vegetable oil in a large skillet over medium-high heat and brown brisket on both sides in the hot oil, 5 to 8 minutes per side.
- Place brisket on a rack set in a roasting pan. Scatter onion and garlic slices over brisket and add water to roasting pan. Cover pan tightly with aluminum foil.
- Roast in the preheated oven until meat is tender, about 6 hours.

- Place onions in a 3 1/2-, 4-, 5-,or 6-quart crockery cooker.
- Trim fat from brisket.

- To make brine, place 2 quarts of water plus the next 12 ingredients in a large 6-8 quart stock pot; bring to a boil. Reduce heat and simmer, stirring occasionally, until sugar and salts have dissolved, 4-5 minutes. Remove from heat; add ice and and stir until ice has melted. Place brine in the refrigerator and allow to cool completely. Place a 3-4 gallon resealable plastic bag inside a large baking dish or roasting pan; add brisket and pour brine over beef. Seal bag, removing as much air as possible, ensuring brisket is completely submerged. Transfer to refrigerator; allow to rest for 10 days, agitating bag occasionally to redistribute spices and liquid. , After 10 days, remove brisket from brine; rinse brisket thoroughly and discard brine. To braise brisket, preheat oven to 300°. Place carrots, celery and onion in large roasting pan; pour remaining 2 cups of water into pan until water level is 1/2-inch high. Place brisket over vegetables and cover with aluminum foil; transfer to oven. Cook, covered, until very tender about 5-6 hours. , Remove brisket from roasting pan, discarding vegetables and cooking juices; tent beef with foil and allow to rest for 10 minutes before serving. Or, to slice for Reuben sandwiches, wrap corned beef well with plastic wrap after cooling for 10 minutes; place in refrigerator and allow to cool completely overnight. Slice thinly against grain.

- Cut red cabbage into 8 wedges leaviong core attached so it remains intact during cooking.
- Melt butter in large frypan over medium-high heat and add garlic, then cabbage and cook, turning, for 2 minutes.
- Add the stock and reduce heat to low and simmer covered, for 3 minutes and then add peas and simmer covered, for a further 3 minutes or until cabbage and peas are tender.
- Top with parsley and serve.

- Thinly shred the cabbage and let it soak in a bowl of water.
- While the cabbage is soaking, chop the bacon and onion.
- Peel and core the apple, then slice it.
- Add the bacon (or vegetable oil) to a large pot and sauté until browned (or oil is heated).
- Add the onion and sauté until golden.
- Add the apple vinegar to deglaze the pan.
- Add the honey, spices, apple, and salt.
- Drain the cabbage and add to the pot, a handful at a time, stirring as you ad it until it wilts a little.
- Braise the cabbage for up to an hour and a half until the cabbage is soft. If there is liquid left, you can let the cabbage absorb the liquid.

- Toss cabbage with vinegar, sugar and salt.
- Allow to marinate for one hour.
- In a large, covered saucepan, saute onion in butter until softened.
- Stir in cabbage and cook for a few minutes.
- Add 2 cups water, corned beef and season with pepper.
- Bring to a boil.
- Layer apple slices on top of cabbage.

- Place the beef in a large saucepan. Add 2 tablespoons of the vinegar and enough water to just cover the beef. Bring to the boil, then reduce the heat to a gentle simmer. Cover and cook over low heat for 1½ hours. Remove the beef from the cooking liquid, draining well, then transfer to a warmed plate and cover with foil to keep warm.
- Meanwhile, heat the olive oil in a large frying pan over medium heat. Add the onion and sauté for 12–15 minutes, or until the onion is softened and browned. Add the remaining vinegar. Bring to a simmer, then cook for 5 minutes, or until the onion has caramelised. Add the mustard, honey, stock and cabbage and stir well. Cover and cook, stirring occasionally, for 5 minutes, or until the cabbage is tender. Season to taste with sea salt and freshly ground black pepper. Keep warm.
- Meanwhile, cook the potato in a large saucepan of salted boiling water for 15 minutes, or until tender. Drain well, then return to the pan with the butter and milk and mash until smooth. Keep warm.
- For the next day, reserve 300 g (10½ oz) of the corned beef, 200 g (7 oz/1 cup) of the cabbage mixture and 230 g (8 oz/1 cup) of the mashed potato for the bubble and squeak fritters. (The ingredients can be refrigerated in airtight containers for up to 2 days, but are not suitable for freezing.)
