This is a great side dish that is easy to put together while the rest of the meal is cooking. This is originally from an old Farm Journal cookbook.

- Cut cream cheese into small cubes and combine with milk, butter, salt and pepper in a saucepan.
- Cook over low heat, stirring constantly until cheese melts.

- In medium saucepan, warm corn slightly covered in water to about room temperature.
- DO NOT OVER COOK.
- Drain corn, place back in pan.
- Add butter and cream cheese.
- Cook, stirring over medium heat only until melted, add salt and pepper.
- Pour into serving bowl and sprinkle slight amount of parsley for color.

- In medium saucepan cook corn according to package directions and drain liquid. If using canned corn, just heat it up.
- Put the butter and cream cheese in a microwave safe bowl and nuke it for about 1 minute.
- Add the butter and cream cheese to the corn. Cook, stirring occasionally, over moderately low heat until mixture is combined and heated through. Serve hot.

- Combine the corn, butter or margarine and the cream cheese in a medium sized saucepan. Cook over medium heat for about 20 minutes. Serve hot.

SCALLION CREAM CHEESE CORN ON THE COB
Steps:
- Heat a grill or grill pan to medium-high heat. Reserve 2 or 3 of the scallions for serving.
- Drizzle the corn and remaining scallions with the olive oil, season with a big pinch of salt and 5 to 6 turns of pepper and toss around so everything is coated. Place the scallions directly on the grill grates and cook, turning a few times, until charred, 4 to 5 minutes. Set aside.
- Grill the corn, turning every couple of minutes, until nice and charred, 10 to 12 minutes depending on the grill (just keep cooking until they are the level of charred you prefer; be careful, they will pop). Remove from the grill and keep warm.
- Thinly slice the reserved scallions and set aside.
- Combine the cream cheese, sour cream and lemon juice in a mixing bowl and whisk until smooth.
- When the grilled scallions are cool enough to handle, chop them finely and add them to the cream cheese mixture with the everything bagel seasoning. Stir to combine, taste and adjust the seasoning if necessary. (You will probably need to add salt if your everything seasoning does not have salt.)
- Schmear the cream cheese mixture on the corn and serve topped with the sliced fresh scallions and additional everything seasoning.
- Alternatively, this can be made into a dip: cut the corn off the cob, mix with the cream cheese mixture and fresh scallions, pour into a baking dish, top with any good melting cheese and bake until bubbly. Serve with pretzels or chips.
CREAMED CORN
Steps:
- Cut the kernels off the corn and place in a bowl. Use the back of a knife or a butter knife to "milk" the cobs. (This means applying pressure to remove any of the juice left from the kernels being cut off.)
- Melt the butter in a large nonstick skillet over medium heat. Add the shallot and cook until softened and translucent, 2 to 3 minutes. Pour in the corn and any liquid scraped from the cobs. Cook until the kernels are bright yellow, shiny and softened, 2 to 3 minutes. Sprinkle with the salt and pepper. Stir in the cream cheese until it is melted and combined into the corn, another 2 to 3 minutes. Taste for seasoning. Transfer the corn to a serving dish and sprinkle with the chives. Serve immediately.
SWEET CREAM CHEESE CORN
Our group of friends have dinner together monthly, and this was passed along at some point. It has become a BIG hit with everyone, and is made for all gatherings now.

- Heat oven to 350.
- Open three cans of corn, and put on the bottom of a 2 quart pan.
- Cube up the cream cheese and place on top of the corn.
- Sprinkle the sugar over the top.
- Open the last three cans of corn and cover the cream cheese.
- Cover pan with foil, and bake for 25 minutes.
- Stir after 25 minutes, and add milk.
- Recover with foil, and bake for 10-15 more minutes, stirring every 5 minutes.
- Done once all cream cheese is melted.
RICH MEXICAN CORN
This recipe came from my step-mom in Dallas, Texas. They like it hot so they put in a few extra jalapenos.
