1 spaghetti squash, halved and seeded
1 pound ground beef
½ cup diced green bell pepper
½ cup diced red bell pepper
¼ cup diced red onion
1 clove garlic, chopped
1 (14.5 ounce) can Italian-style diced tomatoes, drained
½ teaspoon dried oregano
½ teaspoon dried basil
¼ teaspoon salt
¼ teaspoon ground black pepper
2 ¼ cups shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place squash on a baking sheet, and bake 40 minutes, or until tender. Remove from heat, cool, and shred pulp with a fork.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Lightly grease a casserole dish.
  • In a skillet over medium heat, cook the ground beef until evenly brown. Drain, and mix in the green pepper, red pepper, red onion, and garlic. Continue to cook and stir until vegetables are tender.
  • Mix the shredded squash and tomatoes into the skillet, and season with oregano, basil, salt, and pepper. Cook and stir until heated through. Remove skillet from heat, and mix in 2 cups cheese until melted. Transfer to the prepared casserole dish.
  • Bake 25 minutes in the preheated oven. Sprinkle with remaining cheese, and continue baking 5 minutes, until cheese is melted.

3 ears corn, husks removed, cut in half
1 medium summer squash, halved lengthwise and quartered
1 medium zucchini, halved lengthwise and quartered
3 tablespoons olive oil
1 tablespoon honey
1 tablespoon ground cumin
2 teaspoons kosher salt, plus more for seasoning
1 teaspoon chili powder
1 teaspoon ground black pepper, plus more for seasoning
2 limes, zested and juiced
1 clove garlic, pressed
1 heirloom tomato, sliced 1/4-inch thick
1/3 cup crumbled queso fresco
1/4 cup cilantro leaves

Steps:

  • Preheat a grill or grill pan over medium-high heat.
  • Place the corn, squash and zucchini in a large bowl.
  • To make the dressing, add the olive oil, honey, cumin, salt, chili powder, black pepper, lime zest and juice and garlic to a mixing bowl or small mason jar. Stir or secure the lid and shake to combine. Pour two-thirds of the dressing over the vegetables and toss to coat completely.
  • Grill the vegetables, turning as needed, until really nice grill marks begin to form, about 5 minutes for the squash and 7 minutes for the corn in total. Remove to a baking sheet and cover with foil to keep warm.
  • Arrange the slices of tomatoes around the edge of a large cutting board or platter and season with a pinch or two of salt and pepper. Place the grilled vegetables around the platter thoughtfully, making sure to leave some of the tomato peeking through. Drizzle over the remaining dressing and shower with the queso fresco and cilantro.

1 1/2 lbs zucchini, sliced 1/4 in thick
1/4 cup butter
2 cups sweet onions, diced
2 garlic cloves, minced
3 cups fresh corn kernels
1 1/2 cups white cheddar cheese, shredded
1/2 cup sour cream
1/2 cup mayonnaise
2 large eggs, lightly beaten
2 teaspoons black pepper
1 teaspoon salt
1 1/2 cups fresh breadcrumbs
1 cup asiago cheese, grated

Steps:

  • Preheat oven to 350 degrees. Boil yellow squash and zucchini 5 minutes or until crisp-tender. Drain. Dry with paper towels.
  • Saute onion in 2 tbs butter over medium high heat 10 minutes or until tender. Add garlic and saute 2 minutes more.
  • Mix squash, onion, corn and the rest of the ingredients except the breadcrumbs and Asiago. Add 1/2 cup each of the breadcrumbs and Asiago to the mixture. Pour into a greased 13x9 inch baking dish.
  • Melt 2 tbs butter and mix in remaining breadcrumbs and Asiago. Sprinkle over casserole.
  • Bake 45 to 50 minutes. Let stand 15 minutes before serving.

4 to 6 medium yellow summer squash, chopped (about 1-1/2 pounds)
1 medium onion, chopped
3/4 cup dry bread crumbs
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme
SAUCE:
1/4 cup butter, divided
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups whole milk
1-1/4 cups shredded cheddar cheese
3/4 cup dry bread crumbs

Steps:

  • Preheat oven to 350°. In a skillet, cook beef, squash and onion over medium heat until the meat is no longer pink; drain. Add bread crumbs, salt, pepper and thyme; mix well and set aside. In a saucepan, melt 1/4 cup butter. Stir in the flour and salt until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. ¾ teaspoon salt, divided

1 pound zucchini, cut into 1/4-inch slices
4 tablespoons butter, divided
2 cups diced sweet onion

1 (15 ounce) can cream-style corn
1 ½ cups shredded sharp white Cheddar cheese
1 cup grated Asiago cheese, divided
1 ½ cups bread crumbs, divided
½ cup mayonnaise
2 large eggs, beaten
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Combine zucchini and squash in a large pan, add water to cover, and boil for 5 minutes over medium-high heat. Drain and gently press zucchini and squash between paper towels to remove excess water.
  • Meanwhile, melt 2 tablespoons butter in a skillet. Add onion and saute for 2 minutes. Add garlic and cook until onion has softened and garlic is fragrant, 2 more minutes. Mix in zucchini and squash. Add whole kernel corn, cream-style corn, Cheddar cheese, 1/2 cup Asiago cheese, 1/2 cup breadcrumbs, mayonnaise, eggs, salt, and pepper. This was my mom's favorite casserole when she was younger. However, she didn't get it very often because her brothers didn't like it as much. I like it, though, so I posted it! To make the dish less salty, rinse the beef in water before cooking. Also, cut down on the addition of salt in the recipe. (I find I need to do these things, to suit my tastes)

1 tablespoon butter
1/4 cup chopped onion
1 (5 ounce) package dried beef (cut up or sliced as desired)
1 cup sliced mushrooms
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup low-fat milk
2 egg yolks
1 teaspoon prepared mustard
salt
pepper
2 cups corn, drained
1/2 cup shredded cheddar cheese
1/4 teaspoon paprika

Steps:

  • Saute 1 tablespoon butter and onion, add beef and mushrooms.
  • For the white sauce: Melt 2 tablespoons butter with a wooden spoon.
  • Blend in flour, salt and pepper, and stir until bubbly and then remove from heat.
  • Stir in milk.
  • Put it back on the burner, and stir constantly.
  • Bring to a boil, and boil for 1 minute- Keep stirring so it doesn't burn.
  • In a small bowl, beat egg yolks and add the prepared mustard, and salt and pepper to taste.
  • Combine the egg yolk mixture with the white sauce mixture and dried beef mixture.
  • Add the 2 cups corn.
  • Pour into a 2 1/2 quart baking dish.
  • Grate 1/2 cup cheese on top.
  • Sprinkle paprika on top.
  • Bake covered at 350 degrees for 30 minutes.
