2 shallots, chopped
1 tablespoon clarified butter
1 cup whole kernel corn, drained
1/2 cup dry white wine
1/4 cup poblano chile, chopped fine
1 cup heavy cream
salt
white pepper

Steps:

  • Saute the shallots in the clarified butter in a 10 inch frying pan.
  • When tender, add corn and chilies.
  • Cook a minute or two then add the wine.
  • Boil to reduce by one-third.
  • Stir in the Cream and bring to a boil again.
  • Season to taste with salt and pepper.
  • Puree 2/3 of the corn sauce then stir back into remainder.
  • Serve warm with seafood cakes.

Cumin-Seared Halibut with Sweet Corn Sauce image

Northern Pacific halibut is my fish of choice to have in the warmer months. It is a flat fish and deserves special care when handling. Since it can be a little more expensive, I save it for special occasions. The sauce relies on corn, which is very important to Native American culture and recipes. Use blue corn if you can get ahold of it. Otherwise, sweet corn is a great go-to.

2 tablespoons canola oil
1/2 small onion, chopped
1 clove garlic, minced
2 fresh thyme sprigs
1 bay leaf
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 cup white wine, optional
5 ears corn, kernels cut off, 2 cobs reserved
4 cups vegetable stock
8 teaspoons canola oil
1/2 teaspoon ground cumin
Zest of 1 lemon plus 1 teaspoon fresh lemon juice
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Four 6- to 8-ounce halibut fillets
2 teaspoons unsalted butter

Steps:

  • For the sweet corn sauce: In a medium heavy-bottomed saucepan, add the canola oil, onions, garlic, thyme, bay leaf, salt and pepper. Sweat on medium heat, stirring occasionally, until the onions are softened, 7 to 10 minutes. Add the wine, if using, and cook until it evaporates, about 5 minutes.
  • Add the corn kernels, reserved cobs and stock. Bring to a boil over medium-high heat, then reduce the heat to medium and cook for about 10 minutes.
  • For the halibut: Meanwhile, in a large plastic bag, combine 5 teaspoons of the canola oil, the cumin, lemon zest and juice, salt and pepper with the halibut fillets and allow to marinate in the refrigerator for 30 minutes.
  • Discard the corn cobs, thyme and bay leaf from the sauce. Carefully pour the mixture into a blender and puree on high speed for 4 to 5 minutes. The natural starches will activate and thicken the sauce. Pour the sauce through a fine-mesh sieve into a clean saucepan. Simmer over low heat until it reduces by half, about 15 minutes.
  • To finish the halibut, in a medium sauté pan, heat the butter and remaining 3 teaspoons canola oil over high heat until the butter melts and the oil is hot (a little smoke indicates it's ready). Place the halibut fillets in the pan skin-side up and cook until a nice crust forms on the bottoms, about 4 minutes. Carefully flip the fillets and cook 3 minutes more. Lower the heat and continue to cook until the internal temperature registers 140 degrees F, about 4 minutes. Let rest, covered with foil, for a few minutes. Serve topped with the sweet corn sauce.

4 green onions, thinly sliced
1 container (8 oz.) BREAKSTONE'S or KNUDSEN Sour Cream
2 Tbsp. flour
2/3 cup milk
1 cup frozen corn, thawed

Steps:

  • Cook bacon in large skillet until crisp. Remove bacon from skillet, reserve 2 Tbsp. dripping in skillet. Drain bacon on paper towels. Combine basil and pepper; rub on chicken.
  • Add chicken to reserved drippings; cook on medium heat 5 min. on each side or until browned. Add onions; cover. Cook on low heat 30 min. or until chicken is done (165°F).
  • Combine sour cream and flour in small bowl; gradually stir in milk. Remove chicken from skillet; drain. Add sour cream mixture to skillet. Cook 1 to 2 min. or until thickened and bubbly, stirring constantly. Stir in corn. Return chicken to skillet; cook 1 to 2 min. or until heated through. Crumble bacon; sprinkle over chicken.

1/2 cup fresh or frozen corn kernels
1 tsp minced garlic
1/4 cup diced onion
1 1/4 tsp olive oil
1 tsp minced jalapeño pepper
2 tbsp minced red bell pepper
1 1/2 cups low-sodium chicken stock
1 tbsp honey
1/2 tsp salt
Pinch of black pepper
2 tsp fresh lemon juice
Chicken
4 boneless, skinless chicken breasts
1/4 cup buttermilk
1 pinch black pepper
3/4 cup all-purpose flour
1 1/4 tsp paprika
3/4 tsp salt
1/2 tsp granulated garlic
1/2 tsp onion powder
1/2 tsp dry mustard
1/4 tsp celery seed
1 tsp olive oil

Steps:

  • In a medium pan, sauté corn, garlic, and onion in oil over medium heat 1 minute. Add jalapeño and bell pepper. Cook 30 seconds. Add stock. Reduce liquid by half. Season with honey, salt, pepper and lemon juice. Transfer to blender and puree.
  • With a meat mallet, pound chicken breasts to about 1/2 inch thick. In a shallow glass baking dish, combine chicken with buttermilk and black pepper. Marinate at least 2 hours. In a medium bowl, combine flour, paprika, salt, granulated garlic, onion powder, dry mustard and celery seed. Dredge chicken in seasoned flour until well coated. Heat oil in a large pan and add chicken. Over medium heat, cook chicken 3 to 5 minutes on each side until golden. Serve each breast with 1/2 cup Sweet Corn Sauce.

The way they cooked their corn before they canned it was to boil it in chicken broth and add sugar. My family loves having this at every holiday meal as well as with regular meals.

1 teaspoon chicken bouillon

  • Pour corn and the liquid in a pan.
  • Add remaining ingredients.
  • Bring to a slow boil.
  • Continue to boil until liquid is reduced to almost nothing.
  • Reduce heat to low and cover until served.

1 tbsp butter
2 large shallots , finely chopped
3 tsp green peppercorns , in brine, drained
3 tbsp brandy
100ml red wine
200ml good-quality beef stock
4 tbsp double cream

Steps:

  • Put the butter in a large, high-sided frying pan, then fry the shallots and peppercorns over a medium heat for 5 mins, until the shallots have softened but not browned. Add the brandy and cook until it has reduced away to almost nothing.
  • Pour the wine into the pan, turn up the heat and boil rapidly until reduced by half. Add the stock and reduce again, this time by two-thirds, this will take around 5 mins. Stir the cream into the sauce and allow it to thicken slightly. Check the sauce is seasoned to your liking before serving with steak.
