County Fairs are great and the classic country fare sold at them couldn't be fresher, but here's a couple of recipes that'll shake up the country ladies and gents a bit! It's got flavor the folks will be talking about from 2 counties over!

Steps:
- Bring water to a boil, salt it and add pasta.
- While pasta water is coming up to a boil and cooking, combine corn, pepper, onion and celery in a bowl with pepper Jack cheese. Season the veggies with salt and pepper.
- Run pasta under cold water to cool it and drain it well. Add pasta to vegetables and cheese.
- Place vinegar in a small bowl and whisk in extra-virgin olive oil, then fold in salsa. Pour sauce over salad and toss to coat evenly. Garnish salad with cilantro or parsley and serve.

- Combine the water and broth in a medium saucepan bringing to a simmer (not full boil). Keep warm over low heat.
- Heat oil in a large saucepan over medium high heat. Add rice, cumin and coriander and garlic, sauté one minute. Stri in 1/2 cup broth and cook until liquid is nearly absorbed, stirring constantly. Do this until done (about 20 minutes). Stir in onions, cheese, hot sauce, corn, and bell peppers; cook 3 minutes until thoroughly heated.

- Preheat the oven to 375 degrees F. Lightly butter a baking dish just large enough to hold the peppers.
- If the red peppers won't stand upright, slice them lengthwise in half, leaving the stem end intact. Steam them for 5 minutes and set aside.
- Melt the butter in a large skillet. Add the scallions, corn, and tomatoes and cook for 3 minutes over medium heat. Turn off the heat and stir in the cheese, basil, and half the bread crumbs. Season with salt and pepper. Fill the peppers and top with the remaining bread crumbs. Set them in a prepared dish, add a few tablespoons water to the dish, cover, and bake until the corn is hot and the peppers are cooked, about 25 minutes. Uncover and brown the tops under the broiler. Dust with paprika and serve.
HOT CRAB AND CORN DIP

- Preheat the oven to 375 degrees F. Melt 1 tablespoon butter in a skillet over medium-high heat. Add the shallot and cook until softened, about 1 minute. Add the corn and jalapeno; cook, stirring, until softened, about 3 minutes. Add the sherry and cook, stirring, until evaporated, about 2 minutes. Season with salt and pepper.
- Transfer the corn mixture to a large bowl and add the crabmeat. Stir in the monterey jack, sour cream and 1/2 cup crushed crackers. Transfer to a 1-quart baking dish.
- Combine the remaining 1/2 cup crushed crackers with the cheddar, chives and Old Bay in a medium bowl. Work the remaining 1 tablespoon butter into the crumb mixture with your fingers until combined. Sprinkle the crumb topping over the crab mixture. Bake until golden brown and heated through, about 20 minutes.
- Serve with butter crackers or sliced baguette.
CORN, ROASTED RED PEPPER AND CILANTRO SALAD
This festive summer salad, filled with vibrant flavors, gets bonus points for using up leftover corn on the cob. We suggest using grilled or roasted corn but steamed or boiled works, too.

- For the dressing: Add the oil, vinegar, honey and lime juice to a deep bowl. Whisk to combine.
- For the salad: Add the corn, peppers, shallot and cilantro to the bowl. Stir with a spoon until well mixed. Season with salt and pepper. Let sit at room temperature for 10 minutes before serving so the flavors can marinate. May be made up to 1 day in advance and stored in a covered container in the fridge until ready to serve.

CORN CHOWDER WITH CHILIES AND MONTEREY JACK
This chowder is best made with fresh corn on the cob, but if fresh corn is out of season and you are desperate for corn chowder, you may substitute frozen corn that has been thawed. To aleviate the problem altogether, make an extra batch or two at the height of corn season, and freeze to enjoy in the dead of winter when fresh corn is but a distant memory.

- Cut the corn kernels from the cobs with a sharp knife, capturing as much of the juice as you can.
- Reserve 3/4 cup of the corn kernels and puree the rest with the heavy cream in a food processor or blender.
- Reserve until needed.
- Cook the bacon in a soup pot over medium heat until crisp, about 8 minutes.
- Add the onion, pepper, celery and garlic.
- Cover and reduce heat to low.
- cook, stirring occasionally, until the vegetables are tender, about 8 to 10 minutes.
- Add the broth, potato and tomatoes, including their juices.
- Bring the soup to a simmer and cook, covered, until the potatoes are tender, about 15 minutes.
- Skim any fat from the surface of the soup and discard.
- Add the pureed corn and cream, the reserved corn kernels, the chiles and the cheese.
- Warm the soup and season with salt, pepper and tabasco to taste.

- To make Sherry Vinaigrette:.
- In a medium mixing bowl combine sherry wine vinegar, mustard, and salt; whisk until smooth.
- Gradually add the olive oil, whisking constantly until dressing thickens slightly.
- Season generously with pepper.
- Prepare the vinaigrette up to 3 days before serving; store in refrigerator.
- Makes about 3/4 cup.
- Salad:.
- Remove husks from ears of corn.
- Scrub ears with a stiff brush to remove silks; rinse.
- Cut kernels from cobs, scrape cobs with knife to release juices.
- In a large bowl combine corn and juices, sweet pepper, and cheese.
- Add Sherry Vinaigrette, stir to coat.
- Stir in parsley and salt and pepper to taste.
- Serve immediately.

- Remove all the husks and fibres from the cobs and slice the kernels off the cobs.
- Put the kernels in a pan with some water and bring to the boil. Cook for about 8 minutes or until tender. Drain well and reserve.
- Remove the caps, pith and seeds from the peppers and finely chop the flesh.
- Combine the corn, peppers, celery, garlic, tomatoes, rocket and parsley in a large bowl and mix thoroughly.
- In a small bowl, whisk the olive oil, vinegar, salt and pepper together. Pour over salad.

- Preheat oven to 400.
- Butter 9x9x2-inch baking pan.
- Melt 1 tablespoon butter in medium nonstick skillet over medium-low heat.
- Add onion and saute until tender, about 10 minutes.
- Cool.

- Add 7 tablespoons butter and rub in with fingertips until mixture resembles coarse meal.

- Light a grill. Roast the peppers over a hot fire, turning, until charred all over, about 20 minutes. Transfer to a medium bowl, cover with plastic wrap and let steam for 10 minutes. Peel the peppers and cut them into 1/4-inch strips.
